It's a double dessert day at the South Arm Cooking Club for Seniors. Michelle also prepared a Cream Cheese and Lemon Muffins in her mission to use up the cream cheese in stock. I really enjoyed these Cream Cheese and Lemon Muffins. It is moist, lemony and there are chunks of cream cheese in it.

Lately I've been whipping up batches of these muffins to have for breakfast, and freezing what I can't eat within a few days. I'm calling them breakfast muffins because they are loaded with healthy ingredients and go great with a cup of coffee or tea first thing in the morning. I have modified this recipe a couple of times, substituting hazelnuts for almonds, soy milk for cow's milk, etc., and the end result is always great. Just use whatever you have on hand to add crunch or sweetness. The bran and the carrots constitute the healthy part ... I have this "thing" with blueberry muffins. I am always on the look out for the perfect recipe that will yield me muffins with high domes.To be honest, I have baked a lot of blueberry muffin failures. I would say almost all of them tasted just fine. They just lacked the "dome" or the "height" I so desperately craved. This is one of the main reasons I hardly ever post muffins here.I don't know, I just think the dome (or muffin top) makes the muffin taste better. Sounds crazy huh? I baked the muffins before we left. In Germany we don't have cans of unsweetened pumpkin puree. I bought a tiny Hokkaido pumpkin about 500 grams, cooked it for about 15 minutes and pureed it with a blender. It brings a nice golden-orange colour to the muffins. They were delicious and easy to prepare. I used lightly toasted pumpkin seeds for topping. So we made blueberry muffins. We used a recipe on the Daisy sour cream website and the reason is because we had sour cream and we wanted to use it. We didn't have time to go through all our cookbooks to find muffin recipes. 2 1/2 cups flour 2/3 cup sugar 1 tablespoon baking powder 1 teaspoon salt 1/2 teaspoon nutmeg 1/2 cup Daisy Brand Sour Cream 1/4 cup milk 1/2 cup melted butter 2 beaten eggs 1 1/2 cups frozen blueberries not thawed 1/4 cup cold butter 1/2 cup quick oatmeal 1/4 cup brown sugar 2 tablespoons cinnamon Preheat oven to 400 degrees. Muffins leggeri ... una deliziosa joint-venture tra Canada (sciroppo d'acero) e l'Italia (pistacchi di Bronte)!Ingredienti:1 TAZZA E 1 CUCCHIAIO DI FARINA "0"1/4 DI TAZZA DI CACAO AMARO1 CUCCHIAINO DI CREMOR TARTARO1/2 TAZZA DI SCIROPPO D'ACERO3/4 DI TAZZA DI LATTE DI SOIA2 CUCCHIAI DI OLIO DI MAIS1 PIZZICO DI SALE1/2 TAZZA DI PISTACCHI DI BRONTEMescolare in una ciotola OLIO, LATTE DI SOIA, SCIROPPO D'ACERO ed in un'altra ciotola FARINA, CACAO, CREMOR TARTARO, SALE E PISTACCHI TRITATI.Versare gli ingredienti liquidi su quelli solidi e mescolare quel poco che basta per amalgamare il composto. Guten Morgen, wie wäre es am Sonntag mal mit Müsli ? Allerdings in Form von Muffins und nicht aus der Schale? Die Zutaten (ca. 22 Stück) : 70 Gramm Honig 100 Gramm Butter 2 Eier 120 Gramm Mehl 1 großer Löffel Backpulver 150 Gramm Müsli (ohne Zucker!) 200 Gramm Äpfel 60ml Früchtetee Zitronensaft Die Zubereitung : Wir rühren die Butter mit dem Honig schön cremig, rühren die Eier unter die Creme. Jetzt das Mehl,Backupulver und Müsli in einer weiteren Schüssel mischen, und anschließend unter die Creme damit. Jetzt die Äpfel raspeln, und mit Zitronensaft und dem Tee auch zum Teig geben. Die Masse jetzt in eine entsprechende Form für Muffins und bei 180 Grad knapp 30 Minuten backen. Wer es etwas süßer mag, mischt noch Süßstoff unter die Creme (das muss man ausprobieren!)
