2008-06-06 08:39:00
Muffins leggeri ... una deliziosa joint-venture tra Canada (sciroppo d'acero) e l'Italia (pistacchi di Bronte)!Ingredienti:1 TAZZA E 1 CUCCHIAIO DI FARINA "0"1/4 DI TAZZA DI CACAO AMARO1 CUCCHIAINO DI CREMOR TARTARO1/2 TAZZA DI SCIROPPO D'ACERO3/4 DI TAZZA DI LATTE DI SOIA2 CUCCHIAI DI OLIO DI MAIS1 PIZZICO DI SALE1/2 TAZZA DI PISTACCHI DI BRONTEMescolare in una ciotola OLIO, LATTE DI SOIA, SCIROPPO D'ACERO ed in un'altra ciotola FARINA, CACAO, CREMOR TARTARO, SALE E PISTACCHI TRITATI.Versare gli ingredienti liquidi su quelli solidi e mescolare quel poco che basta per amalgamare il composto. Blueberry Oat Muffins

We woke to the sound of water. It is raining in the desert this morning. The overflow is spilling over the edges of the canales, splashing onto the wedges of flagstone scattered in the sand around our casita. It feels like we are living inside a Zen fountain- waterfalls on all sides. The mesa is hidden in mist. The air is heavy with the scent of juniper and wet bark. I am deeply comforted by all

Goji Berry & Walnut Muffins
2008-05-14 09:00:00
Sorry guys, I am a tad busy this week and slightly caked-out (gasp!). All I can offer this week are muffins. It?s not to say that these muffins aren?t good. For goodness sake, their packed full goji berries and walnuts. I have been so busy lately, that I literally don?t have time to eat anything. I keep telling myself to pack a lunch, and then I stare into the fridge and nothing seems appealing.I finally decided that I would bake muffins that I could just pop into my purse along with a couple of tea bags. I know what you?re thinking. A muffin Gigi? Muffins are bad for you. These muffins do have some redeeming value. What could it be? The goji berries of course! Goji berries are dried red berries that look similar to cranberries. They have been used for thousands of years for their ?healing? properties. They are packed full of antioxidants, help eyesight, protect the liver, and boost immune function. How could you not like this muffin? Right?Go ahead and bake yourself some super muf...

But Mom, these are muffins!!!
2008-05-07 19:38:00
I just don't get it. How can my kids not like muffins? I have tried every way possible to get them to eat muffins. I know it sounds crazy but I think that if they ate muffins it would be a nice quick, low impact (on the parents), and healthy thing to start their day. I have seriously tried about 20 recipes and nothing really does it for them. I have a freezer full of ones that they tried and didn't like. I guess I really need to figure out something to do with them!Anyway yesterday instead of making muffins for my freezer I decided to take a muffin recipe and make it into a cake. Sounds like a great idea huh? Outsmart them once and for all. To no avail. Although they did eat it yesterday when they came home from school this morning for breakfast they wanted nothing to do with it!!! T. and I thought it came out great and have made a nice dent in it so it guess it wasn't all for nothing! This was really a nice light snack cake and I am still baffled by the fact that my ...
MOCHA WALNUT CHOC-CHIP MUFFINS...GREEDY GOODNESS!!

"I believe the world to be a muffin pan, and there certainly are a lot of muffins here."Aaron Funk Mocha Walnut Chocolate-chip Muffins...When I read about theSnackshots #3 event hosted by Michelle @ Greedy Gourmet , I was thrilled. Opportunity to try these mocha muffins I had bookmarked long ago, & soon. Michelle asks "What’s the difference between a muffin and cupcake? ...A muffin contains less sugar and doesn’t have icing on top, in other words it’s healthier. " My choice of muffin is deep, dark, decadent & chocolaty; the flavours enhanced with the addition of coffee. Am still trying to place the source on the net; I know I wanted to try these because they used oil instead of butter & were literally popping out of the screen!! They didn't disappoint at all; lovely chocolaty dark muffins, great taste, moist & soft!! What's more ? No butter!! Got a whole batch of 12 regular ones, & also almost a dozen mini muffins out of the batter...bonanza!!Like other ...

Chocolate chunk muffins
2008-04-23 12:16:00
Note: French version is on La cuisine de BabethRare cancer awareness: don't forget to check: Help beat sarcomaGod! it was difficult to come up with the ultimate, perfect chocolate chips or chunk muffins recipe. I did a lot of experiments in my tiny kitchen. We have in our apartment what is called in France: une cuisine américaine (American kitchen). It's a comic association once you know the size of American kitchen from each side of the ocean. In France an American kitchen is tiny place where only one slim person can cook, separated from the living room with a bar. And as you know in the US kitchens are huge some times as big as a bowling. So I tried many recipes with poor results: either the dough was too liquid to form nice rounded and cracked muffins, or too sweet, or even all the chips/chunks/fruits used sank to the bottom.I turned towards Nigella, the domestic goddess for help. She has a chocolate chips recipe, she knows what she's talking about, but (still one complaint)...
Milk Calendar Mondays: Cinnamon Crunch Raspberry Muffins
2008-04-22 00:54:00
For those of you who flipped your Milk Calendar to April and wondered about my adventure with Salmon and Rice Primavera, well, you'll just have to keep on wondering. Or you can do the recipe and assume that whatever you thought of it will be exactly my reaction. I didn't attempt the recipe because of a salmon allergy (how wrong is that?).So this month's Milk Calendar Monday recipe let me dive into one of the extra eight recipes. I really wonder why they separate these out from the others. I mean, yes, it's always good to give your customers more than they asked for (well, more in a good way... higher prices, unending telephone trees, days of headaches to get a simple thing done are NOT examples of this), but these...um...hidden...recipes always look more interesting and tasty than the monthly spotlights. I'd have been happier if the Easy Jambalaya recipe (yes, I do drone on about that one) was hidden on one the back pages and the recipe I chose instead was on a calendar page.I ...
Think Spring: Key Lime & Rose Muffins

I had some leftover key lime juice from the key lime and strawberry pie that I made and I wanted to use it up. It is not cheap stuff, and besides that, it is too good to let it go bad. Sounds like a country song title, doesn’t it? Anyway…made these for breakfast the ...
Whole Grain Banana Nut Muffins (Gluten Free)
2008-04-15 14:32:00
We traveled over the weekend to visit my Great-Grandmother. She fell last week and broke her hip along with several vertebrae in her neck. Despite that hard fall, she is doing wonderful and is ever spunky and surprising! I have no doubt she will make it through rehab with flying colors, even at 97! We truly appreciate all the well wishes and kind thoughts we received through email and comments!!There is something therapeutic about making muffins. I made these muffins last weekend for our trip to see Grandma, and then again when we returned home for our "grab and go" breakfasts this week. Packed with nutritious whole grains, healthy proteins and fats, and just a touch of sweetness, these muffins are satisfying and delicious!I need a "photographic lighting" fairy to visit my kitchen! That hole in the muffin is where a walnut resided. It was yummy! This recipe is an updated version of my "Easy Banana Nut Muffins." This version is made with more whole grains for a heartier muffin. I al...

Meatloaf Muffins
2008-04-15 01:22:00
I accidently thawed a pound of ground beef instead of ground turkey. And since I have never had any luck with an actual meatloaf of ground beef I decided to make meatloaf muffins. The things are so addicting.Which is why I very rarely make them.I could eat them all myself. And I really don't need that temptation.:) The boys love these for dinner. You can even eat them cold.Just top with ketchup and serve. You could also add chopped broccoli, shredded carrot,cheese....the possibilities are endless.~Depending on what kind of ground beef you use,you may need to drain the muffins on a paper towel.Meatloaf Muffins1 lb extra lean ground beef1 box Stove Top stuffing mix1 cup water2 eggs ~Mix together and divide into 12 muffin cups that have been sprayed with non-stick cooking spray. Bake at 350 degrees for 35-40 minutes.Serve with ketchup on top. English Tea, Bakewell tarts and chocolate muffins
2008-04-14 18:06:00
I have just read an article from the BBC that a new guide states that in England afternoon tea is "enacted daily" apparently at 4:00 we all stop, get out the tea pot, delicate sandwiches and fruit cake!I'm sure anyone who is English will find this amusing, as obviously the author of this guide has never been to England, or at least not in the last century. As an Englishman I would like to make it clear that this is nonsense, I and no one I have ever met does this. However last Saturday for the first time ever we had tea...A traditional English tea refers to a meal rather than the drink, although a proper tea pot is essential. It traditionally involves delicate finger food such as cucumber, salmon or ham sandwiches, small cakes often feature as do larger cakes such as Victoria sponge or a fruit cake. Scones are also very popular and are usually served with jam and clotted cream. Although very unusual in homes now, afternoon tea is still a feature in grand hotels such as The Ritz.For...
Quinoa mixed berry muffins
2008-04-10 20:33:00
Note: French version is on La cuisine de BabethCharity: about cancer don't forget to check: Help beat sarcomaMuffins and cookies are typical American snacks for me. When I was living in the US, I went crazy for cookies (fresh ones of course) and muffins. My favorite muffins were -and still are-: poppy seeds, chocolate chunks or chips and blueberries. As much as cookies are super easy to make, muffins are tricky to bake. Yes, those good-hearted muffins can be fiddly to prepare. For perfect muffins: rounded, golden, tender with a pebby top, there's 2 rules to respect:1- use oil instead of butter. Butter is composed only of 80% of butterfat the rest is solid milk and water. Fat helps to have moist muffins. If you're really not keen on oil use clarified butter.2- don't over mix. Leave your Kitchenaid or any other stand mixer in your cupboard. A lumpy batter will make the best muffins.Ingredients:-1 cup all purpose-flour-1 cup of quinoa flour-3/4 cup sugar-1 rounded teaspoon of baking...

Mega Morning Glory Muffins

A few months ago, I found a recipe for “morning glory muffins” in Cooking Light (July 2007). I started making them weekly but soon grew tired of the same breakfast day after day. Even ...
Lucky Comestible II (2): Almond-Quinoa Muffins
2008-03-27 01:31:00
Well.  So.  It snowed again yesterday.  Actually, it stormed; we got about 5 cm. (2 inches) to add to the–what?  478 cm?  792 cm?  14 kilometers?–pre-existing- snow already piled in mini-glaciers beside every driveway, walkway, sidewalk, and garage.  And there I was, once again stuck in the house, avoiding the pelting flakes and ice pellets.   I imagine this is what it feels like to live in perma-frost, constantly surrounded by the white stuff with no end in sight. I feel exactly like Captain Robert Scott must have felt on one of his forays to the South Pole, holed up with his companions in his ice-shack as refuge against the elements.  Just as he did in his famous diary, I could easily write an entry something like this: Bitter storms accosted the crew today, forcing the team to head indoors.  We huddle by the makeshift fire and attempt to warm our weary, frostbitten hands.  Thrashing winds surround us at every turn.  All but forsaken in this fri...
Butternut Squash Muffins with a Frosty Top
2008-03-25 04:11:00
Lisa made these muffins adapted from a recipe found in Jamie Oliver's cookbook, Jamie At Home. She cut the oil way down from the recipe, and nixed the walnuts (Whole Foods apparently didn't stick them in the bag), but they turned out pretty darn good just the same.Lisa says:"With a Frosty Top"? What a random name... why can't they just be called Butternut Squash Muffins?Chris says:'Cause he's a Brit... I hear they talk funny. Besides, it's not like a traditional frosting... it's a bit... goopier.Lisa says:It's almost as if you should dip each one in the frosting just before you eat it.Chris says:Well with all the extra frosting we ended up with, that's exactly what I'm doing.Lisa says:I love that citrus taste! Okay, if these stay in the house any longer they'll migrate directly from the kitchen into my mouth.Chris says:Looks like the folks at work are getting muffins tomorrow!Butternut Squash Muffins with a Frosty Top-------------------------------------------14 ounces...

Apple Raisin Muffins
2008-03-18 17:48:00
Have you ever wanted to bake something and didn?t have all the ingredients? Did you go ahead with substitutions and hoped it would come out? That?s where I found myself last night.I wanted to have a muffin for breakfast, a raisin muffin, to be exact. I searched through all my cookbooks and I did find recipes. But the ingredients were another story. My next step was the internet, where I found a recipe that was simple, yet I was still missing some the ingredients. I crossed my fingers and hoped that all the substitutions would yield me an edible muffin. What I got was a large humble muffin, whose taste surpasses any of those overpriced dry muffins available at coffee houses. Oh, is this muffin soft and so good. The recipe originally called for 12 muffins, but I wanted big breakfast muffins, so I used a Texas muffin pan. I still cannot believe how well the muffins turned out. I guess if a recipe is well written substitutions will still yield one a good result. If find yourself ...
Sweet Melissa's Blueberry Muffins and Carrot Cake & Books Giveaway
2008-03-15 18:00:00
I have really felt like I have been on a mini vacation this past week, baking my way through The Sweet Melissa Baking Book, written by Melissa Murphy, owner and pastry chef of Sweet Melissa Bakery in New York city. When I received the book for preview I was really excited to finally make some of her creations in my own kitchen. I have been a fan of her work for a long time and promised myself I would straight to her bakery if I ever made it to New York one day. Well, it was even better this past week because I took a trip there four times in four days! I have tried to do a thorough review of the book for you guys but the best part is at the end of this post where I have the chance to give away 5 copies of this new book! The book is a right along the line as a classic baking book filled with hundreds of recipes of every body's favorites. This is the kind of book that references all the basic and classic American standards but often with a little spin to it (like an orange flavored cr...

Morning Glory Muffins
2008-03-15 02:47:00
Lisa's been getting her bake on (mmm... bacon...) in these last few weeks before work starts again, and today she made these muffins, based off a recipe in Cooking Light. We were out of eggs, so applesauce made an appearance, and raisins and dried cranberries subbed for dried pineapple. My contribution was pulling the coconut out of the pantry.Chris says:I love all these treats that have been coming out of the kitchen lately.Lisa says:Pretty good, aren't they?Chris says:I'll say -- if these muffins needed a movie title I'd suggest 3:10 to Yumma.Lisa says:And they're actually good for you!Chris says:I'm totally taking credit for the coconut ones though.Lisa says:You certainly get credit for eating them.Chris says:Hey! Master Baker #1 - Sweet Potato Cinnamon Crumb Muffins
2008-03-02 22:24:00
I'm really loving all the blog events that focus on baking at the moment, as it gives me the opportunity to bake things I normally wouldn't choose to bake, and thus broaden my baking horizons. This month Nikki over at Crazy Delicious, a self-proclaimed foodie blog event junkie, decided to start up her very own foodie blog event and Master Baker was born. Each month the hostess of Master Baker chooses an ingredient to bake with, and then the participants bake can whatever their heart desires. I particularly like this aspect, as it allows for some creativity, and an incentive to dig around in my cookbook collection for recipes and inspiration.
