Peanut Butter Cupcakes ? two ways!
2009-06-21 14:27:00 When I bake, I have to be on constant lookout and ever vigilant from roaming fingers. You see, my family suffer from Finger Dippyitis – otherwise known as the compulsion to stick their unwashed fingers into my cake and cupcake batters. This sometimes involves being armed with extra teaspoons and spatulas, as a wandering finger can ...

Ciambella Riso&Cioccolato (e muffins)
Banana Espresso Chocolate Chip Muffins
2009-03-06 22:01:00 I just wanted to say "thank you" to everyone who left a comment for the Pineapple Jerky giveaway. And now for the moment everyone has been waiting for. The winner is ...Jenn from a "A Day in the Life..." !I used Random (dot) Org to generate the winning number. Jenn when you have time, shoot me an e-mail so you can collect your Pineapple Jerky.I can see you looking at the muffins. I know you're thinking "...banana muffins? Been there done that." Yes, that maybe true; but have you had banana muffins with espresso? At first, I was unsure at how well the banana and espresso would pair together. I finally gave in to my curiosity and made the muffins. The espresso adds a nice element to the muffins. Personally, I think the espresso made the brown sugar and chocolate more pronounced in the muffins. [Which made the muffins special for me.]I really enjoyed my squat little muffins. In case you're wondering go ahead and divide the batter evenly without fear of "overflow". These little ...

Red velvet cupcakes
2009-02-22 13:27:00 Sorry folks, haven’t had time to put together the bee tutorial yet - but here’s my adaptation of Magnolia Bakery’s red velvet cupcake recipe! It is very fiddly, as far as cupcake recipes go, but the end results give a cupcake that is unbelievably light, fluffy and moist - so it’s a winner for me! Red ...

Tall Blueberry Muffins
2009-02-04 09:00:00 I have this "thing" with blueberry muffins. I am always on the look out for the perfect recipe that will yield me muffins with high domes. To be honest, I have baked a lot of blueberry muffin failures. I would say almost all of them tasted just fine. They just lacked the "dome" or the "height" I so desperately craved. This is one of the main reasons I hardly ever post muffins here.I don't know, I just think the dome (or muffin top) makes the muffin taste better. Sounds crazy huh? This quirk (okay, obsession) of mine sometimes takes over my baking. For example, I refuse to hand out a misshapen cookie, a lopsided cupcake, or a brownie that is not 2x2. Yes, I bust out the ruler for all bar cookies ...but I digress.I have finally figured out a way to have "tall" gorgeous muffins without having to pray and beg the baking gods for a "dome". What is my secret?Sky-high muffin wrappers from Europe! I love these wrappers! I am so glad that my friend K. keeps me knee-deep in these beautiful lin...

Cinnamon Chocolate Chip Muffins
2009-02-04 02:38:00 Walking through the grocery today with my daughter, Megan she picked up a mammoth muffin and pointed to the top, "Look, see that sparkly sugar on top? Why don't you make muffins like this, woman?" Yes, she calls me 'woman' and points to the fact that Jesus also called his mother 'woman' as her reasoning for doing this and not being disrespectful. Right.Anyway, I can make muffins like that, I just don't because I like to limit sugar consumption here to what is in food without making it worse by putting sugar on the food as well. I caved and made them for her. This combines two of my favorites - chocolate and cinnamon.Cinnamon Chocolate Chip MuffinsMakes 12 large muffins3 cups flour1/2 cup white sugar1/2 cup packed brown sugar1 tablespoon baking powder1/2 teaspoon salt1 teaspoon ground cinnamon1 1/2 cups milk1 teaspoon vanilla extract2 eggs - beaten1/2 cup oil or melted butter (I like olive oil for baking)1 12 ounce package mini chocolate chipslarge grained sugar - I use Wilto...
Eggless Butter-Less Chocolate Muffins (Vegan)
2009-01-21 06:42:00 One day the baking bug bit me. It bit me so bad that by the weekend, I was itching like a mad woman to bake something! I usually have all the ingredients but sadly, no eggs. Since there are tons of eggless cakes out there, I decided to do a quick search. Allrecipes had my answer. There were tons of eggless cakes and eggless chocolate cakes in there. Some had warnings that eggless cakes will not be as moist and spongy as the ones with eggs. I beg to differ as the person who tried and tested the following recipe and dare them to look into the poor, innocent faces of these muffins and say the same thing again! I adjusted the measurements slightly to suit my need and what's more, this one is also butter-less.Eggless butter-less chocolate muffins with frostingSo here is my eggless and butter-less chocolate muffin recipe. You can also bake it into a cake if you want. I used some frosting to add some buttery goodness to it but avoid that for a vegan version. If you had told me last month t...

Constant Comment Muffins
2008-12-14 05:15:00 Everyone has heard of the popular Bigelow tea, Constant Comment. To be perfectly honest, bad pun intended, it's not my cup of tea. In fact, if it were the only tea on earth, I simply wouldn't drink tea. My family, however, are all quite enamored with the amber brew and drink it like there's no tomorrow. There's no accounting for palates being passed on, is there? At any rate, when I was devising muffins for my most recent Family.com post (Morning Muffins) I decided to see if I could come up with a muffin that would taste like the tea my family so adores. These are those muffins. Tuesdays with Dorie: Pumpkin Muffins
2008-10-22 12:03:00 This week's recipe on page 13 from Baking: From my home to yours: Pumpkin Muffins has been chosen by Kelly of Sounding My Barbaric Gulp We are out of town, looking for the real Eierschecke recipe in the Elbe Sandstone Mountains. I baked the muffins before we left. In Germany we don't have cans of unsweetened pumpkin puree. I bought a tiny Hokkaido pumpkin about 500 grams, cooked it for about 15 minutes and pureed it with a blender. It brings a nice golden-orange colour to the muffins. They were delicious and easy to prepare. I used lightly toasted pumpkin seeds for topping. For the recipe visit Kelly of Sounding My Barbaric Gulp and enjoy more Pumpkin Muffins visiting the blogroll at the Tuesday's With Dorie website. Pages: 1 2 COMMENTS - ADD COMMENT

2008-05-15 21:39:00 We woke to the sound of water. It is raining in the desert this morning. The overflow is spilling over the edges of the canales, splashing onto the wedges of flagstone scattered in the sand around our casita. It feels like we are living inside a Zen fountain- waterfalls on all sides. The mesa is hidden in mist. The air is heavy with the scent of juniper and wet bark. I am deeply comforted by all

Goji Berry & Walnut Muffins
2008-05-14 09:00:00 Sorry guys, I am a tad busy this week and slightly caked-out (gasp!). All I can offer this week are muffins. It?s not to say that these muffins aren?t good. For goodness sake, their packed full goji berries and walnuts. I have been so busy lately, that I literally don?t have time to eat anything. I keep telling myself to pack a lunch, and then I stare into the fridge and nothing seems appealing.I finally decided that I would bake muffins that I could just pop into my purse along with a couple of tea bags. I know what you?re thinking. A muffin Gigi? Muffins are bad for you. These muffins do have some redeeming value. What could it be? The goji berries of course! Goji berries are dried red berries that look similar to cranberries. They have been used for thousands of years for their ?healing? properties. They are packed full of antioxidants, help eyesight, protect the liver, and boost immune function. How could you not like this muffin? Right?Go ahead and bake yourself some super muf...

But Mom, these are muffins!!!
2008-05-07 19:38:00 I just don't get it. How can my kids not like muffins? I have tried every way possible to get them to eat muffins. I know it sounds crazy but I think that if they ate muffins it would be a nice quick, low impact (on the parents), and healthy thing to start their day. I have seriously tried about 20 recipes and nothing really does it for them. I have a freezer full of ones that they tried and didn't like. I guess I really need to figure out something to do with them!Anyway yesterday instead of making muffins for my freezer I decided to take a muffin recipe and make it into a cake. Sounds like a great idea huh? Outsmart them once and for all. To no avail. Although they did eat it yesterday when they came home from school this morning for breakfast they wanted nothing to do with it!!! T. and I thought it came out great and have made a nice dent in it so it guess it wasn't all for nothing! This was really a nice light snack cake and I am still baffled by the fact that my ...

Chocolate chunk muffins
2008-04-23 12:16:00 Note: French version is on La cuisine de BabethRare cancer awareness: don't forget to check: Help beat sarcomaGod! it was difficult to come up with the ultimate, perfect chocolate chips or chunk muffins recipe. I did a lot of experiments in my tiny kitchen. We have in our apartment what is called in France: une cuisine américaine (American kitchen). It's a comic association once you know the size of American kitchen from each side of the ocean. In France an American kitchen is tiny place where only one slim person can cook, separated from the living room with a bar. And as you know in the US kitchens are huge some times as big as a bowling. So I tried many recipes with poor results: either the dough was too liquid to form nice rounded and cracked muffins, or too sweet, or even all the chips/chunks/fruits used sank to the bottom.I turned towards Nigella, the domestic goddess for help. She has a chocolate chips recipe, she knows what she's talking about, but (still one complaint)...

Or you can do the recipe and assume that whatever you thought of it will be exactly my reaction. I didn't attempt the recipe because of a salmon allergy (how wrong is that?).So this month's Milk Calendar Monday recipe let me dive into one of the extra eight recipes. I really wonder why they separate these out from the others. I mean, yes, it's always good to give your customers more than they asked for (well, more in a good way... higher prices, unending telephone trees, days of headaches to get a simple thing done are NOT examples of this), but these...um...hidden...recipes always look more interesting and tasty than the monthly spotlights. I'd have been happier if the Easy Jambalaya recipe (yes, I do drone on about that one) was hidden on one the back pages and the recipe I chose instead was on a calendar page.I ...
Think Spring: Key Lime & Rose Muffins
2008-04-16 14:51:00 I had some leftover key lime juice from the key lime and strawberry pie that I made and I wanted to use it up. It is not cheap stuff, and besides that, it is too good to let it go bad. Sounds like a country song title, doesn’t it? Anyway…made these for breakfast the ...

Whole Grain Banana Nut Muffins (Gluten Free)
2008-04-15 14:32:00 We traveled over the weekend to visit my Great-Grandmother. She fell last week and broke her hip along with several vertebrae in her neck. Despite that hard fall, she is doing wonderful and is ever spunky and surprising! I have no doubt she will make it through rehab with flying colors, even at 97! We truly appreciate all the well wishes and kind thoughts we received through email and comments!!There is something therapeutic about making muffins. I made these muffins last weekend for our trip to see Grandma, and then again when we returned home for our "grab and go" breakfasts this week. Packed with nutritious whole grains, healthy proteins and fats, and just a touch of sweetness, these muffins are satisfying and delicious!I need a "photographic lighting" fairy to visit my kitchen! That hole in the muffin is where a walnut resided. It was yummy! This recipe is an updated version of my "Easy Banana Nut Muffins." This version is made with more whole grains for a heartier muffin. I al...

Meatloaf Muffins
2008-04-15 01:22:00 I accidently thawed a pound of ground beef instead of ground turkey. And since I have never had any luck with an actual meatloaf of ground beef I decided to make meatloaf muffins. The things are so addicting.Which is why I very rarely make them.I could eat them all myself. And I really don't need that temptation.:) The boys love these for dinner. You can even eat them cold.Just top with ketchup and serve. You could also add chopped broccoli, shredded carrot,cheese....the possibilities are endless.~Depending on what kind of ground beef you use,you may need to drain the muffins on a paper towel.Meatloaf Muffins1 lb extra lean ground beef1 box Stove Top stuffing mix1 cup water2 eggs ~Mix together and divide into 12 muffin cups that have been sprayed with non-stick cooking spray. Bake at 350 degrees for 35-40 minutes.Serve with ketchup on top. My camera needs a battery charge,so I used this picture from myrecipes.com And I served green beans and roasted herb potatoes with dinner tonight.I w...

English Tea, Bakewell tarts and chocolate muffins
2008-04-14 18:06:00 I have just read an article from the BBC that a new guide states that in England afternoon tea is "enacted daily" apparently at 4:00 we all stop, get out the tea pot, delicate sandwiches and fruit cake!I'm sure anyone who is English will find this amusing, as obviously the author of this guide has never been to England, or at least not in the last century. As an Englishman I would like to make it clear that this is nonsense, I and no one I have ever met does this. However last Saturday for the first time ever we had tea...A traditional English tea refers to a meal rather than the drink, although a proper tea pot is essential. It traditionally involves delicate finger food such as cucumber, salmon or ham sandwiches, small cakes often feature as do larger cakes such as Victoria sponge or a fruit cake. Scones are also very popular and are usually served with jam and clotted cream. Although very unusual in homes now, afternoon tea is still a feature in grand hotels such as The Ritz.For...
Quinoa mixed berry muffins
2008-04-10 20:33:00 Note: French version is on La cuisine de BabethCharity: about cancer don't forget to check: Help beat sarcomaMuffins and cookies are typical American snacks for me. When I was living in the US, I went crazy for cookies (fresh ones of course) and muffins. My favorite muffins were -and still are-: poppy seeds, chocolate chunks or chips and blueberries. As much as cookies are super easy to make, muffins are tricky to bake. Yes, those good-hearted muffins can be fiddly to prepare. For perfect muffins: rounded, golden, tender with a pebby top, there's 2 rules to respect:1- use oil instead of butter. Butter is composed only of 80% of butterfat the rest is solid milk and water. Fat helps to have moist muffins. If you're really not keen on oil use clarified butter.2- don't over mix. Leave your Kitchenaid or any other stand mixer in your cupboard. A lumpy batter will make the best muffins.Ingredients:-1 cup all purpose-flour-1 cup of quinoa flour-3/4 cup sugar-1 rounded teaspoon of baking...

Mega Morning Glory Muffins
2008-03-27 15:12:00 A few months ago, I found a recipe for “morning glory muffins” in Cooking Light (July 2007).
