Although it was designed and advertised as a family restaurant, most of it's patrons were young and middle-aged men who were used to drinking Old Monk by the quarter. Even though the food at Green Park was extremely delicious, it was always secondary as most of their customers weren't sober enough to appreciate the food or for that matter remember it the next day. Having been a non-drinker all my life, I had the pleasure of sampling almost everything on the Green Park menu and remembering it long enough to write about it. Coriander seed1 t Red pepper (optional)1/2 t Garam MasalaMethodClean, wash and dry mutton.Blend coriander seeds, 1 onion, almonds and garlic.Marinade the mutton in above mixture for 2 hrs.Heat oil and fry the remaining thinly sliced onion. Keep aside.Add the mutton and fry until the liquid dries up.Add 3/4 c hot water and simmer until the meat is almost done ( 3/4 cooked) OR pressure cook at 15 psi for 20 minutes. Reduce pressure. Add salt and pepper.Uncover and dry the liquid.Add beaten yogurt and fry until it leaves oil.Add fried ground onion.Beat the cream. In other words, we are being ripped off by paying too much for what should be cheaper cuts of meat. As a class of meat, hoggett sits uncomfortably between true lamb and older mutton. I say ‘uncomfortably’ because its classification is not helped by the fact that there are different interpretations of the term, depending on where you live. In Australia, ‘lamb’ is only lamb until the animal cuts its first two incisor teeth at the age of about 8 to 12 months. After that it becomes hoggett, and as the meat darkens and becomes tougher it is reclassified as mutton - or not, as the case may be. It is... |
