When I fully recover, next summer, I shall post about the mileage odyssey that was my recent family vacation road trip. Did you know that with three stops (1 to eat, 2 to see the redwoods and a third for a catnap at one of our state?s lovely rest areas) that you can drive from northern Oregon to southern California in only one day? Literally one full day. As in leave Oregon at 9 in the morning and walk in your front door at 9 the next morning. I now have a whole new appreciation for truckers, several of whom I may have inadvertently cut off during those last few harrowing hours of my zombie driving. I went to visit my parents yesterday and got an amazing home-cooked meal and tons of help with my taxes (thank you, Dad!!). I also got a whole lot of leftovers to bring back to my apartment and I'm not at all disappointed to eat the same meal for a few days straight.My mom made Barefoot Contessa's Lemon Fusilli with Arugula and I'm afraid the pictures don't really do the meal justice. But this pasta dish is most definitely the closest I've come to tasting spring. The lemon flavors burst in your mouth and, though there is some cream involved in the dish, the pasta is extremely light and delicious. Mom says she added 4 times as much garlic as the recipe called for. What? We're a garlic loving family. You could most definitely add chicken or shrimp to this pasta dish and make a meal of it. My family love the beach so much that we would always go like ones a month just to smell the fresh breeze of the sea and have fun swimming even though none of us is a swimmer. We would bring a lot of foods to cook on the grill specially seafoods cause my dad love it and its good anyway if you are having a picnic in the beach. Sometimes we would buy it fresh from the fisherman nearby that he just caught, so its really super fresh. My dad would buy shells like clams and oysters, his favorite is oysters. Sometimes he would eat it raw, dip it in a vinegar sauce or fish sauce first and eat it. Gulf oysters are the best but I heard that they are not good if you eat it raw, this would cause serious illness because a certain bacteria present on this mollusk, specially if you have a weak immune system then you should avoid eating it raw.
