Choice Ramen Noodles
2008-05-09 04:37:00 Oh boy! If you are anything link me you lived off Ramen Noodles in college. They were cheep, fast and the perfect midnight snack! The problem with them? Well let's see, deep fried noodles. Ummm yeah, enough said. So shortly after college I stopped buying them and honestly, I forgot about them until a couple of weeks ago. Someone mentioned in an email they saw a healthy version at the grocery store and wondered if I tried them. Sure enough, there they were! Right above the regular version in all the flavors I remember, chicken, shrimp and beef. I bought one of each! So how much healthier are they? well the bag (that's right, the whole bag) is 280 calories, 2 g of fat and 4 g of fiber! That's only 5 points for the whole bag! That's a HUGE serving, a real quick lunch and they taste e-x-a-c-t-l-y like I remember them! Check GreenLiteBites tomorrow as I'm planning to make them for my weekly video posts! Have you guys seen them already? Anyone else try them? I'm normally pret...

Braised Noodles
2008-05-02 11:54:00 I usually cook something simple on Saturdays. No rice, soup and a few side dishes. Just one dish to settle dinner because I do major cleaning on Saturday.I don't want to spend time washing and cleaning the pots, pans and dishes. Plus, the stove will be throughly cleaned too so, yeah, I wouldn't want to clean it again. :PThis is one of the family's favourite Saturday dinners. It's similar to this dish except no spice is used here and it's much simpler.Ingredients:10 mid joint wings20 fresh Shitake mushrooms, sliced4 Hard boiled eggs1.5 litre Water or Chicken brothSalt to tasteInstant Noodle or Fresh Wanton NoodleSeasonings:1 tablespoon Oyster Sauce1 teaspoon Dark Soy SauceHow to do it:Blanch the wings.Add the wings & hard-boiled eggs into a pot of boiling water.Add in the seasonings and let in simmer for 1 hour.Add in the mushrooms and continue to simmer for another 1/2 hour.Add salt to taste.Discard the seasonings for the instant noodles.Cook the noodles till just done, don...

2008-04-23 06:10:00 Pad Kee Mao. Three magic words that can make me skip around in circles. Easily my favourite Thai food, I'm pretty much the informal PKM taster of the city. In fact, there are so many joints that dish up a killer PKM that I've hardly felt the need for attempting a recreation at home. Until today. We had this hankering for chef-fin' it out. We wanted to be the masters of our own Pad Kee Mao
Kebab Curry Noodles
2008-04-22 06:24:00 I found these freshly made noodles in the market yesterday. All you need to cook them is a couple of minutes in salted, boiling water. Make Your Own Shirataki Noodles
2008-04-20 07:53:00 If you are a do-it-yourself type or want a certain shape of pasta you can make your own shirataki noodles. This site explains how to use glucomannan powder (glucomannan is the soluble fiber from the konjac plant that is used to make shirataki noodles) and pickling lime to make them. Those are the only two ingredients necessary. Directions on how to do it can be found at the link above. Related Content Shirataki Noodles

Shirataki Noodles
2008-04-20 05:55:00 I grew up in a household that had pasta in some form or other for dinner at least four times per week. I love pasta but I now limit my consumption of it not just because it's high in calories, but because most pasta is made from white, processed flour that is pretty worthless from a nutritional standpoint. But there's nothing like a big, heaping plate of penne or linguine, is there? Enter shirataki noodles. Though I didn't know about them until about four days ago, they've been growing in popularity among the low carb and diet crowd for a couple of years now. They are a Japanese noodle made from the root of the Konjac plant, a kind of yam. They have no net carbs, no calories, no sugar, and no gluten. The flour made from the root of the Konjac plant is called glucomannan. In clinical trials, glucomannan has been shown to help people lose weight by forming a gel in the stomach and helping a person maintain a sense of fullness. This is interesting given that chia seeds als...

Tokyo In Sight!
2008-03-13 00:02:00 Well, the title of this post may be exaggerated, but today I won in the lottery. Usually I play once or twice a year. But then Dorin Popa (a guy from Munich) started a lottery blog. Each week he buys a lottery ticket and if you have saved his address in your blog roll or comment on his blog you join the lottery automatically.Of course people started fantasizing what they would do with the money. Me too. I was sure if I would win a larger sum, I would go on a holiday trip. The past days I have been thinking, reading and even dreaming a lot of Tokyo. Today night I thought to myself that if I ever wanted to fly to Japan, I would need to buy a lotto ticket. That´s what I did online at 3 am in the morning.Today I won and if I do so a few more times I can book my flight to Tokyo. :) What a great year!Actually I do not have any relationship to Japan and I guess I have pretty touristy interests in Tokyo, but the city is just too tempting. I think of Geishas, Sumo Wrestling, Bondage, Sushi, ...

A Simple Stock
2008-03-06 12:41:00 Ningbo is famous for its seafood as it is very near the coast. So it is usual to find lots of seafood produce at the supermarket. One of the most common I find is tiny shrimps which I see used in soups, fried with vegetables and probably used to make stock.Tiny shrimps are also found in Malaysia and used quite a lot in our cooking but they are usually dried shrimps or a paste and can be very strong in flavor. The most flavorful of all is belacan which is fermented ground shrimp. You can smell it a mile away and it packs a punch when chili is added. Pungent, aromatic and delicious! We had cabbage the other day - a boring but easy to cook vegetable. To add some flavor, I fried some tiny shrimps in hot oil and then added some garlic before the cabbage. It turned out very nice.I used a fair bit of shrimps and was very generous with the wolfberries too.Today I used the tiny shrimps to make a stock. To take away the fishy taste, I added ginger slices and to sweeten, wolfberries (also known ...

Bangkok Noodles with Cashews and Pineapple*
2008-02-29 00:33:00 *or, How to Get Your Meat-Loving Guy to Love a Vegan Meal How often does this happen to you? (I promise, this is not an infomercial): You come across a new recipe that sounds wonderful, and, fired up with anticipation, you can’t wait to try it.  You rush home, prepare the dish, and it’s received to unanimous acclaim. This recipe instantly becomes your “go-to” dish, and you repeat the performance over and over many times during the following weeks. You keep returning to this item, in fact, and it instantly pops into your head whenever you think about what to cook. The page for that recipe in your cookbook acquires the rippled, stained appearance of a trusty pair of Keds you’ve worn for a whole summer, through mud and grass and lakes, covered as it is in little splatters of sauce and oil and water.  And then–just like that–you happen upon a new recipe, one that piques your interest just as much as the other one, and y...
Instant Noodles
2008-02-26 16:08:00 Dear instant noodle lovers, Make sure you break for at least 3 days after one session of instant noodles before you eat your next packet! Please read the info shared to me by a doctor. My family stopped eating instant noodles more than 5 years ago after hearing about the wax coating the noodles - the wax is not just in the Styrofoam containers but it coats the noodles. This is why the instant noodles do not stick to each other when cooking. If one were to examine the ordinary Chinese yellow noodles in the market, one will notice that, in their uncooked state the noodles are oily. This layer of oil prevents the noodles from sticking together. Wanton noodles in their uncooked state have been dusted with flour to prevent them sticking together. When the hawker cooks the noodles, notice he cooks them in hot water and then rinses them in cold water before cooking them in hot water again. This process is repeated several times before the noodles are ready to be served. The cooking and rin...

Soba Noodles with Ginger, Chard and Walnuts
2008-02-20 03:34:00 While taking some leisure time to browse through a few food blogs recently (read: two hours at my desk when I should have been working), I happened upon the blog event They Go Really Well Together, hosted by blog.khymos.org (”dedicated to molecular gastronomy”). The gist of the event is that two or more seemingly mis-matched flavors are paired according to their molecular compatibility (a la Fat Duck), said compatibility not always apparent to those deficient in the chef’s olfactory supremacy (such as moi). Then I got to thinking, it’s true; some ostensibly odd couplings do actually work well together: Sonny and Cher, purple and mustard yellow walls (but only for the previous tenant, not us), Elsie and Chaser, paisley and–hmmn. Well, Sonny and Cher, anyway. This pasta dish, a favorite in our house, is one of those weird couplings: rhyme off the ingredients one at a time and they sound not like a recipe but more like a grocery list jotted in ...
