Okra Fry With Peanuts
2008-08-06 12:50:00
Ok, I know what you are thinking. After all that hue and cry I made about being an okra-hater and all that, I go ahead and post 3 okra recipes in a span of 2 months. Well, the reason is, its one of the 'Indian' vegetables that I see always in the wet market and end up buying it thinking I can make something passable with it. After all, we both really liked the Okra with Besan curry that I made, TH more so because it resembles usili. This is a dish I have tried in our office cafe when I was in Hyderabad. I always found it an interesting combination - ladies finger and peanuts. The crunch the peanuts gave to the curry was quite nice and though I wasn't sure what recipe the chef there used, I tried to replicate it the other day and it did come very close in taste. What I Used:Okra/ladies finger/vendakka - 15 (number of okras)Raw shelled peanuts - 3 tbspShallots - 4, choppedGarlic - 1 tsp, minced (optional, but add for more flavour)Red chilli powder - 1/2 tspSalt - to tasteOil - 1 tbsp...

Caribbean Salt Cod and Okra Soup (featuring Mashed Yams!)
2008-03-14 03:01:00
This awesome soup comes from The Ultimate Soup Bible: salt cod, spinach, and okra in a tomato-wine broth surround a mountain of mashed yams. Very different, and very delicious!Lisa says:This is so good! I like the cod, though it's not as salty as I'd expected.Chris says:Soaking for over a day will do that, I guess.Lisa says:Never in a million years would I have thought to put mashed yams in the middle of a soup!Chris says:Mashed Yams? More like Mashed YUMS!Lisa says:I know! We should make the yams on their own, too -- so good.Abbie says:I like our mountain of potatoes... I'd live on it if I were this big... Chris says:You may not realize that the people out there can't see you touching your fingers together to indicate that "this big" means "miniscule".Abbie says:Um, it's kind of implied if I refer to it as a "mountain" of potatoes.Chris says:Good point.Caribbean Salt Cod and Okra Soup---------------------------------1/2 lb salt cod, soaked for 24 hours, with several water c...

Stir-Fried Okra (Bhindi Masala) with Peanuts and Coconut
2008-02-07 10:07:00
One of the most challenging yet interesting part of being a chef is that you often get an opportunity to turn something ordinary into extraordinary, and that's the part I really like! Experimenting with flavors and spices is what makes a cook's life exciting, not always succesful, but definitely exciting. Luckily for all of you, I only share my successful endeavors with you:) And the vegetable that steals the show today is nothing but the simple Okra(Ladyfinger), or "Bhindi", as it's known in India. The trouble we all face while cookng okra is that it can get to be a really "sticky affair", literally. So it helps to fry, or in this case, stir-fry it a little to get rid of that stickiness. But the twist that transforms this simple Bhindi Masala into a delicious and unique okra curry is the addition of peanuts, onions, bread crumbs and some coconut! The key to making tasty okra is to choose the tender variety, with a thinner skin and as less seeds as possible. This will give them a ...

Spicy Bhindi Fry {Stir-fried Okra}
2008-01-27 14:42:00
As much as I love to taste food from different cuisines there are times when I crave the simplicity of roz-ka-khana or simple day to day home cooked food. All through this week I cooked a variety of foods like couscous with veggies and chicken, pasta and garlic bread, pita bread pizza etc etc etc . These are all my favourites and very filling .But the satisfaction that my family and I get when we eat a typical simple Maharshtrian meal is something that cannot really be explained. Today was one such day when I needed my dose of a complete Maharshtrian lunch which included1. Poli, (Chapati)2. Bhendichi bhaji,(the one you see above)3. Aamti,(a spiced up Dal)4. Koshimbir,(Maharshtrian salad)5. Limbacha loncha,(Sweet and sour lemon pickle)6. Taak,(buttermilk)7. Varan Bhaat (Rice and Dal)8. Rawyacha Ladoo (A sweet treat ,recipe here)I wish I had photographed the entire plate served but I guess photography was the last thing on my mind then. So what I have for you today is the bhindi fry w...
Turai (Chinese Okra) with Fenugreek (Methi)
2008-01-15 16:15:00
Turai, Chinese Okra AKA Angled Luffa Gourd is a vegetable that is very low in calories and covers about 20% of RDA of Vitamin C (WOW!). Believe it or not that is true. This simplistic Turai a dish that is truly ‘home-cooking’̷-0;.Try this great version with Methi (my Fav) and see how you like it.
Bhindi Fry (Okra Frites)
2007-10-21 16:22:00
Scanlynn and I recently paid a visit to a local South Indian eatery here on Curry Hill by the name of Tiffinwallah. It's a charming little place with a homey feel and decorated with 3-tier tiffins. It immediately brought back memories of school and my dabba wallah. As I tried explaining the concept of the Tiffinwallah to Scanlynn, I realized that the Indian tiffin delivery system that I didn’t think twice about was such an elaborate and complicated ordeal. The New York Times recently had a big article about the Tiffinwallahs of Mumbai and their FedEx like precision delivery systems. This article does more justice to it than anything I can ever say about it. And all this fuss just so that people like myself that too lazy to go down during lunch hour can get hot, home cooked lunches at their desks at work (or school). Although my dabba wallah at school operated at a much smaller scale, he did cater to about 100 students. One of my pet peeves about my dabba was getting watery currie...

Okra with chicken - a present from Greece
2007-09-17 15:42:00
Having finally banished the slime by seasoning and frying okra, I couldn't say good bye until I had at least tried to cook it successfully another way. When you have 30 people from around the world championing the delights of a vegetable it is hard to resist another recipe. We discussed it over breakfast and Freddie decided that okra deserved another crack at the whip. We looked through the suggestions once more. An email from Kalli in Athens said that she had been amazed how the "slime" had disappeared when her friend had cooked chicken and okra recipe for her. We like to imagine where people live, what their kitchens look like, what they see when they look through the window. Alex and Freddie imagine that as Kalli typed out a recipe for them, she could see the Parthenon in the distance. Whatever the truth, as we made our Greek Chicken with Okra, we thought of her. I went to our local butchers to buy the chicken. If you want to learn more about vegetables, visit the butchers...

The Great Big Okra Convention
2007-09-13 14:21:00
I read through the comment box, and scoured the internet message boards. Message boards are the modern day equivalent of gathering round the campfire to chat. A man called Norm popped up in a box on the Martha Stewart community message board, telling me how his mom used to cook okra. Your suggestions came thick and fast. And this was the consensus on my new best friend, okra:1. Buy small and fresh (I know my first lot looked rather ill) 2. You must fry them.3. Bread them, then fry.4. Coat in cornmeal, then fry. 5. Soak in buttermilk, then fry.6. Embrace the slime and make a gumbo.7. Oil and roast them.8. Spice them and fry.9. Sauté them.10. Deep fry them.I get the message. OKRA NEEDS TO BE FRIED. I did offer Freddie the gumbo option and he turned it down. Armed with this collective wisdom, I have now followed the path to zero slime. The most intriguing tip had been emailed by Cynthia who lives in Barbados. She advised me to lay out my cut okra on a baking sheet and let them d...
O is for Okra
2007-09-11 13:21:00
Forget singles columns or online dating sites, vegetables are the next big thing in making relationships. Okra has generated more conversations, more new friendships for me than any other vegetable. I am presuming that the okra's long slender shape gave it the name lady's finger. It beckoned at me from the supermarket shelf and then pointed at the first of many people with whom I found myself discussing cooking methods. My first introduction, in the supermarket aisle, was to a woman from Syria. She insisted that the best okra are the smallest ones.Later at Shepherd?s Bush Market, a Nigerian man insisted that the worst crime is to overcook them. I made a mental note of his tip and went home with my bag of okra. The trouble is that slime has got in the way of making a dish that the family like. The okra feels the need to dribble this clear gooey secretion as I cook it. I made a sauce with bacon and onions and tomatoes and the okra then spoilt it. Not even my husband, with an iron s...

Oh Oh Oh Okra

Red and green okra from Yuno?s Farm I am staggering to keep up with my CSA farm share deliveries, but even with baskets full of succulent organic vegetables demanding my attention, I could not possibly pass up these breathtaking red and green baby okra from Yuno?s Farm. These are far and away the best okra I have ever tasted in my life. I hope they have some more this week; I can?t wait to make this again. This recipe, which I must own, is the best okra recipe anyone has ever tasted, is similar to one I remembered from Classic Armenian Recipes by Alice Antreassian and Mariam Jebejian. This book is hard to find, so if you are lucky enough to come across a copy do not let it get away. I just looked it up, and I see that the original recipe calls for cherry tomatoes, and you make a big daisy with tomatoes on the inside and okra all around. That might be fun for next time. This time, I just stirred everything together. I have to insist you try this. The liquescent okra are ...

Bhindi Fry in Yogurt
2007-05-18 18:24:00
Weird, quirky, out of the world, unusual name hah? I don?t blame you? The name Bhindi Fry in Yogurt is the name we kept for our Accidental Diva. After working my ass off in office trying to figure out where I went wrong with some thousand lines code, no wonder my brain was on curfew. There was a bag of lovely tender okra which was sitting in one corner of refrigerator for more than a week and before it starts rotting I wanted to cook something out of it. I hate to waste things especially food. All I could think of cooking was simple Stuffed Bhindi. With my brain cells going haywire, I absentmindedly chopped half of Bhindi?s before it dawned upon me I am supposed to slit them for Stuffed Bhindi. And before I could do anything my better half was ready with the ground masala for stuffing the okra. The only solution which came to my rescue was my Hubby Dear who is an expert in fixing things ;) The end result was Bhindi Fry. Just when I thought all?s well which ends well, I ended up addi...

Okra Lasagne...Just Kidding!
2007-05-10 19:37:00
Well, kidding about the okra in any case. We did, in fact, make a lasagne this weekend. I wouldn't have minded okra in it, but then, I am American and Freya says we don't know how to make lasagne.Okay, I'll admit that what generally passes for Italian food in the US would probably go down the waste disposal in Italy, but cottage cheese and spinach are good in lasagne regardless. Besides, Freya isn't allowed a high horse as she grew up in a country obsessed with Spaghetti Bolognese. Actually, with what Brits try to pass off as Italian she doesn't even deserve to ride a pony. This isn't a criticism. I enjoy food of any kind, authentic or not.The first lasagne Freya made for me was in Wisconsin at my parent's farm. It was her first visit to Door County and while she loved the idea of a pool table at the grocery store, she wasn't too keen on the absence of vegetarian mince. She was reduced to cooking with actual meat. This was difficult for her at the time as she was still flirt...
O is for Okra - Bhindi Masala
2007-05-06 04:45:00
Ever had to catch a train that left the station. I once had to do this during my commuting days to the city. It took me at least 3-4 tries to get caught up.I have been getting that feeling as I have been following the A-Z of Indian Vegetables on Nupur's blog. Well, tonight might just be the night when I can make it. I made this Bhindi or Okra dish, in a very classic north Indian style. Just did not fry the bhindi though. Bhindi MasalaServes 4 Ingredients1 lb young fresh okra1/2 tsp turmeric1 tsp salt1 lime1/3 cup oil1 tsp whole cumin seeds1 onion finely chopped4 cloves of garlic minced3 tomatoes finely chopped1.5 tsp cumin-coriander powder1/2 tsp red chilli powder1 tsp dried kasuri methiFor the garnish1/2 cup chopped grape tomatoes2 scallions coarsely chopped2 tbsp chopped cilantro2 green chillies mincedMethod of Preparation1. Okra - This is Your Last Chance
2007-05-05 12:00:00
This is it. The final Okra recipe to make any non-believer change his mind and follow us to the dark (or should that read ?mucilaginous??) side. You may remember that we have tried out hardest to show glorious Okra in it?s most favourable light: homestyle, simmered with tomatoes, traditional-style in gumbo and given the catfish treatment by coating them in Fish-Fri and then plunging them in bubbling hot oil to produce a fun alternative to popcorn or canapés.I had thought I had seen it all. In what other ways could Okra possibly be served that get the taste buds tingling with excitement just to look at it?Enter cooking hero (at least to Shaun and myself), Tamasin Day-Lewis. With the possible exception of the Sologa (I spent many clumsy-fingered moments slaving over that in my non-artistic way), her second cookbook, Good Tempered Food is a hidden gem of dashingly unusual recipes that are much simpler to prepare than they look. I enjoy tricking people in this way. What cook wouldn?t get...

2007-04-12 14:12:00
Spinach with paneer or with alu is a very common combo. I tried a new combo and used two of our fav veggies together and the end result was outstanding. This is my contribution for JFI- Going GreenINGREDIENTS:OkraSpinach- 1 Bunch washed and chopped1 Big Onion Sliced1 tsp Jeera seeds1 tsp Coriander Powder1 Tbsp Kitchen King Masala1 tsp Chili Powder1 tsp Haldi PowderSalt as per tasteMETHOD:Wash and dry Okra and cut them lengthwise. In a heavy bottomed pan heat oil and had jeera seeds. When jeera starts sputtering add sliced onions and fry them until brown. Now add okra and add all the rest of the masala ingredients to it and keep the flame on high and cook okra until they are completely cooked. Now add chopped spinach into this and adjust the salt and cook untill all the spinach in competely cooked. Note: Don't add any water to this as spinach lets enough water and this should be good to cook the vegetable.Serve hot and enjoy it with white rice or chapathi.
