Drive Thru: Top Chef Pregame, Pancakes, Crunchies, Tamales, and Fideo
2009-08-19 19:00:00 It's not fall (repeat after me: it's not fall), but the first summer (yes! summer!) apples are arriving. Fruit Slinger has the scoop. Thinking of Drinking participates in a "Pottery Barn Dinner" of local cocktail and food pairings. Lakeview's Asado Coffee Company gets the spotlight for its delicious java by the Food Chain. Skillet Doux keeps it clean in a game that keeps getting dirtier with Top Chef Season 6 Power Rankings. Serious Eats also joins in the fun. (The series premieres tonight at 8pm on Bravo, FYI.) My Vegetable Blog whips up corn tamales, braised beans and glazed mushrooms. Yum. I didn't know what Baked Fideo was, but Foodmomiac has schooled me and I will never be the...

2009-04-18 01:20:00 Wow! I'm overwhelmed by the responses from my last post. Thank you so much for all the support and encouragement! One thing for sure, it showed that I do have people out there who cares about me and like what I'm doing. :) I have received a few more emails from the same person but I choose to send it to the junk box. Hopefully, he or she will stop sending me emails when there is no response from me.To those who had spend time send me emails and posting your comments here and in my chat box, sorry I have not response but do know that I'm truly grateful for your comforting words. I'm not very good with words. So, it's just thank you, thank you and more thank yous. Thank you so much for everything! :)Okay, this is for someone who likes me too (you do, right?) :P She works for a local kids magazine and she dropped me an email to check if I would be interested to do food feature for them. Pumpkin Pancakes!
2008-10-02 15:20:00 If you know one thing about me, it's probably that I LOVE anything pumpkin. Wait, that would be really sad if that's all you knew about me, but really, that is how much I love pumpkin. Fall is my absolute time of year because I highly enjoy throwing on a fleece jacket and wandering around in the crisp weather with some pumpkin spice coffee. I'm so happy that the rest of the world is finally catching on and loving pumpkin as much as I am.I am obsessed with this stuff:Anyway, what goes best with pumpkin spice coffee? Pumpkin pancakes obviously. I had a craving one evening and decided it would be the perfect breakfast for dinner. What you'll need to make my pumpkin pancakes:1/2 cup all-purpose flour3/4 C whole wheat flour2 T sugar2 t baking powder1/2 t cinnamon1 1/2 t pumpkin pie spice1 C buttermilk8 T canned pumpkin puree2 T melted butter1 eggFirst, whisk the flours, sugar, baking pow...
Pumpkin Pie Pancakes
2008-09-27 09:45:00 OMG, where have I been for 21 days? I wish I could say that I had been somewhere exciting and done some insane thing. The reality is that regular old life had gotten in the way of things.I had wanted to bake something inspired by the fall weather. I know it's fall because it's almost October, but you'd be wrong. Go ahead and take a look outside. It's been in the high 90's here in So. California.Seriously. Somebody hand summer her "pink slip" because she has stayed well past her welcome.I am ready for fall's cool mornings. Mornings filled with coffee and something sweet.I have had muffins on the mind for awhile now. Ever since my friend Katie sent me a set of gorgeous muffin cases. I stare at them every night and say "...soon I will bake something delicious." So, I have been patiently awaiting the entry of fall.I guess fall is going to be fashionably late here. Until fall makes his grand entrance I give you pumpkin pancakes. Yes, no oven required, yet packed full pumpkin pie ta...

Baked Peach Pancakes
2008-07-08 04:45:00 One food item I have truly missed since I moved here to New Zealand ten years ago is Bisquick. It is just so easy to use and very convenient to have on hand in the cupboard. Unfortunately it is virtually unavailable here, but just recently I was browsing some food categories on TradeMe New Zealand which is the New Zealand equivalent of eBay and I found a lovely lady that had some for sale which she had brought over from the States. So I immediately bought 6 large boxes and found myself in seventh heaven. I hadn't used any for ten years so this was definitely heaven sent as far as I was concerned. Now I know many of us are Gordon Ramsay fans and I would probably get a "white thumbs down" if he ever knew I was using anything but the natural ingredients from scratch, but sorry Gordon we all have a comfort zone and now was my chance to get busy in the kitchen again making some great Bisquick goodies. I thought you might all enjoy a great recipe for Baked Peach Pancakes....using B...

Spontaneous Carob and Date Pancakes
2008-06-02 03:17:00 Thanks, everyone, for all your wonderfully supportive and encouraging comments about the osteopenia diagnosis. I’ve been boning up on the topic (sorry-ouch) and have some great recipe ideas to share in the next while (and even one today). I’ll also get to my responses asap. . . sorry I’ve fallen behind a bit! Last week, out of nowhere, I made a monumental resolution. Flushed with excitement, I rushed home from work and announced to the HH, ”I have a great idea. I think we should be more spontaneous from now on.” He appeared flummoxed (this happens all too often when I make my pronouncements, it seems). ”Okay, so now we’re making plans to be spontaneous?” Hmmn. I SO hate it when he’s right. “Well, how about this, smarty pants?” I countered. ”I went grocery shopping today and I spontaneously bought these overripe tomatoes on sale, even though I had no specific plans to cook anything with them.&r...

Apple Pancakes with Nutella Sauce
2008-05-25 17:51:00 leggero come l'aria/light as airSchool is out for the summer. Although I am not done just yet, the kids are. Now that its over, I can dance around and let out a loud Whooohoooo! I have been waiting for May 23rd since, well, um.....October. Undoubtedly, this has been them most difficult year to get through, professionally, that I can remember since I worked for crazy Ann at Y&R. Now, don't get me wrong, I did my job and I think I did it well. I just don't think the direction I have traveled during my teaching career, and for which I have been mentored and groomed for by wonderful leaders, is the right path. This has been a huge sense of internal contention for me, and I will work the next couple of weeks trying to get my head back in the game before I have to go back. What better way to work out the issues that make you cranky than with cooking? The restaurant, while full of interesting dynamics all its own, has been a tremendous outlet. But, I need to get back to cooking and ...

PANCAKES, I LOVE YOU!

Savoury multigrain yeast pancakes
2008-04-01 12:12:00 When yeast is used in pancake batter, it does away with the need for eggs, milk or baking powder. Kerala cuisine regularly uses yeast to make a variety of aapams. These pancakes made from a mix of flours, can be made savoury or sweet. Since we are more the savoury breakfast kinds, I have used onions, green chillies and salt. You could easily replace this with brown sugar or jaggery and serve the pancakes with fruit compote or maple syrup.Feel free to use up any flour you have. Sometimes, we have a little bit of a variety of flours left over. This is a great way to clean up the flours in your pantry. I would like to try this out with ragi and buckwheat flour along with the rice and whole wheat flour.Savoury multigrain yeast pancakesCategory: BreakfastTime taken: Around 20 minutes plus 1 hour standing timeServes 2-3 people, number of pancakes depends on the thickness and sizeIngredients1/2 cup cornmeal1/2 cup chick pea flour1/2 cup rice flour1/2 cup whole wheat flour1 1/2 cups water pl...

Fun with scallion pancakes
2008-03-30 22:51:00 Scallion pancakes makes an awesome appetizer or snack. Well, the way I make them... they can probably a whole meal. Scallion pancakes are also known as green onion pie or Chinese pizza. It's not really a pancake, a pie, or a pizza. It's more like a Chinese flat bread made with dough, oil, and green onions. The literal translation is "green onion oil cake" or something along those lines. They are fun to order at selected Chinese restaurants and cafes. Luckily, you can also enjoy it at the comfort of your own home with little effort. They are available in frozen packages at the local Asian supermarket. This is the one I usually buy.The pancakes are separated with layers of plastic wrap, which makes it easy to peel. It's a very simple process.Basic directions:Heat a large frying pan with some oil. (I like to use cooking spray instead)Place the pancake into the pan.Cook for a few minutes and then flip it over.Cook until both sides are slightly golden brown. The scallion pancake is read...

Mmm ... pancakes!
2008-03-27 18:01:00 Us siblings could be called children of a Disney generation - we grew up hooked onto sunday morning Disney cartoons and spent many a summer day perched on a wall or a tree branch reading their comics. And Mickey Mouse made me quite happy - I mean, who couldn't love those fabulously huge ears, that crazy Disney voice that sounded tailor-made for MM, a mouse with a dog (some insist Goofy is a cow!) for a friend, another dog for a pet, such insanity! As much as I've grown past this, and often view Disney productions with a much more skeptical eye, there are some indelible memories associated with this essential piece of our growing years. So, what does any of this have to do with pancakes? Or even with food? Really. Well, that was the first time we even heard of pancakes - when we saw Mickey eating a ginormous stack of pancakes doused with a mug of maple syrup! Whoa! A mouse can eat a whole stack of those oothappam-lookalikes? Really? And I was filled with this crazy urge to eat thos...

“In Bruges” recap and the best pancakes in town
2008-03-20 16:04:00 As previously mentioned, Pete, Mere, and I returned from Europe on Monday afternoon. After attending the ITB travel conference in Berlin, we drove to Brussels (ha! more about that later) and started the “hotel hunt” part of the trip. Pete and Meredith took on Brussels and I took the train to Bruges, where I spent five days checking out the hotel scene. First impressions of Bruges As I had never been to Bruges, my expectations were limited. I anticipated a picturesque, small town, heavily touristed, high hotel prices, and hotel owners who might not have time for me. (In some cities, after all, hotel proprietors give you the impression that they have better things to do than, say, show you all of their rooms.) I was only partially correct. Bruges is a gorgeous place, crisscrossed by canals, paved with cobblestones, and architecturally “preserved” to 16th-Century storybook perfection. It’s hard not to take photos — but also hard to figure out what...

Pesarettu (Green Moong Dal Pancakes)
2008-03-14 14:19:00 Submitted by: Vaishali Ingredients: 1 Cup whole green moong dal 1 green chilli 1 cm piece ginger 1/2 cup cilantro (coriander) A pinch of hing (asafoetida) Salt to taste Method: 1. Onions finely chopped to add over the pancake (optional) and keep aside for later. 2. Soak green moong dal for about 5 hrs or best overnight. 3. Grind with all the ingredients to a smooth dosa like batter with some water. 4. Make dosas/pancakes and add some finely chopped onions over the pancake. 5. Once you see the other side golden brown, flip over carefully and cook for a couple of minutes on the other side as well. 6. Serve hot with chutney or chutney powder mixed with some sesame oil! Enjoy the healthy snack. ShowMeTheCurry Notes: Thanks Vaishali, for this awesome and super healthy snack. We loved it. This dish is a close cousin to Adai, so you can check the video on that to see how the Dosa/Dosai is made. Another tip - put the chopped onions, it ads a wonderful crunch to the Pesarettu.
Bastiaan Bakery & Cafe
2008-03-14 04:58:00 I love eating at bakeries. The smell of freshly made breads, rolls and pastries plus the warmth of these eateries is enough to make you feel at home and comfortable.Bastiaan Bakery and Cafe is one of those places. We found it while walking on the Hongmei pedestrian street which is littered with many restaurants and cafes. It was very busy on that Sunday that we visited. A lot of people preferred to sit outside on the sidewalk as it was a sunny afternoon. It was still quite cold but I guess when the sun is shining down it can be nice and brisk. We wanted to eat alfresco but there were no tables left.We don't regret having lunch inside because the atmosphere was even nicer with lots of fresh food on display at the counter to entice you and a host of Easter chocolates on sale. The menu was pretty extensive for a bakery and I decided to have a roast chicken and avocado salad while David went for a salmon sandwich.Bottled apple and orange juice.Fresh juice is also served. There was quite ...

Traditional Chinese Spring Onion Pancakes
2008-03-05 14:31:00 Everyone who knows that I spent two years in China would know that due to my time there I turned into a complete spice-addict. And all that out of a pure fact. Zlamushka could not cook. I dotn mean cooking non-spicy or Western dishes, I mean nothing... zero, nadah. I even called my mum one desperate day to ask her how to boil pasta. I know,... I was 19 years old.So in order not to starve to death, I ate out every day (or more accurately - 3 times per day). No worries, Chinese street food is more than just affordable, let alone student canteens or street stalls. My first account with spicy food was an unbearable experience. I never even seen anything apart from A black peppercorn in our FAMILY Sunday soup. Now I was standing there, with a mouthful of different spices, coughing and sweating.Gradually things went better, I even learned how to make dumplings and fried noodles, even spicy eggplant. And then, after I returned back home, schnitzel and mashed potatoes simply lost its taste....
:: Oh so oaty pancakes!
2008-03-04 11:20:00 We have a visitor staying with us at the moment, and he eats a lot, no wait, A HELL OF A LOT! After a big dinner of chicken and rice, the other night, he ate two big bowls of Special K, a Banana, and a bag of popcorn. I wouldn't mind, and apologies for being crude, but what worries me is that the amount of toilet paper were going through does not reflect the amount of food being eaten. As you can imagine I am a little worried about his well being, so I decided that healthy longlasting breakfast, full of fibre would do the trick and perhaps keep him running a little more regular.I do hope, I haven't put you off the recipe completely, because it's a darn good one, a healthy twist on classic American pancakes. Don't get put off by the use of oat flour, just whizz up some oats in a blender it takes seconds and is much healthier than the refined white stuff. I got the recipe from Stella's Kitchen Blog which gives lots of different options- we used goats milk out of personal cho...

International House of Flying Pancakes
2008-02-08 01:53:00 Jin and Xiao ran through the forest, an army after them. They break into a clearing and realize they are surrounded. Brandishing blades and fists, they fight, but are losing the battle. With only seconds left to live, they are expecting to die, but something happens. From the trees weapons are thrown and curve into deadly trajectories and hit the enemies. Slice! A buttery pancake removes the head of a swordsman. Thuck! A pancake covered with syrup sticks into the chest of a pike man. Splat! A final pancake covered with peanut butter slams into the face of an archer, knocking him to the ground. They have been slain by members of the International House of Flying Pancakes.

Pancakes, kale and soup.... oh my!
2008-02-07 18:40:00 This entry is a bit of a round-up of what I've been eating this week... last Friday turned out to be a "snow day" me. Because I work in higher education, our campus sometimes closes when the weather gets too rough. Let me tell you, it's a great feeling to receive a phone call from your boss early in the morning, telling you to go back to bed because campus will be closed. :) In celebration, I treated myself to a pancake breakfast! I chose this recipe for low-fat whole wheat pancakes over at Vegweb.com. I took their suggestion of adding fresh blueberries into the mix, and I couldn't resist adding a few more after the maple syrup had been poured. Deeeeelish! This week, I also tried this recipe for Bean and Kale Scramble over at fatfreevegan.com. It was my first time--ever--having kale.... and I liked it! Maybe it just tasted so yummy because I knew this dish was low-fat AND packed with nutrients. :) I should also mention that this recipe used white beans that I made in the ...
