Matar Paneer - Peas with Indian Cottage Cheese
2008-09-01 10:14:00
This is a recipe totally "flicked" from Jugalbandi cuz this month they are featured on Zlamushka's Taste & Create.I had been meaning to make this dish for a while and had some left over paneer after making palak paneer. I always have frozen peas in the fridge, though my mom keeps telling me I should get fresh ones. Well, I will if I find them around, but till then, frozen ones will do. They are just so convenient!I have also been planning to make paneer at home one of these days. But my lazy self found that Mustafa Stores in Singapore stores paneer (among everything else under the sun!) so I am happily buying and stocking up on frozen Amul Paneer cubes.Anyway, I have the recipe below, the way I modified it but I have stuck to it pretty much entirely. What I Used: Serves 2-3Inspired by Recipe from Jugalbandi Cubed cottage cheese - 2 cups, fried a light brown.Green peas - 1 cup Chopped onions - 1 cup Chopped ginger - 1 tsp Chopped garlic - 2 tspTomatoes, pureed - 2 cupsCapsicu...

TH loves Palak Paneer. If you give him butter naan and palak paneer every day, I don't think he would tire of it so easily. That and pizza!I got some fresh organic red spinach from the wet market complete with roots and snatched up the last bunch before it was all gone. I knew there are so many great recipes for palak paneer in our blogosphere so wasn't too worried about finding one.Zeroed in on Sailu's blog, finally. I didn't make many changes to her recipe, except for quantities of some. Be warned that this is not one of those quick and easy recipes. It takes time to cook but is definitely worth the effort and time. What I Used:Serves 2Recipe source Paneer - 1 cupSpinach/Palak - 4 cups, shreddedOnions - 1 medium, choppedRipe tomatoes - 2 big, pureedGinger garlic paste - 2 tspGreen chillies - 2, slitCumin - 1 tspChilli powder - 1 tspCoriander powder - 2 tbspCurry masala - 1 tsp (optional)Cream/malai - 1 tbsp (optional)Ghee - 1 tbspHow I Made It:1. Tandoori Paneer Tikka with Mango Dressing
2008-05-05 16:54:00
I've said it before and I'll say it again; if there's one thing you'd want to make and serve to your guests without thinking twice, its Paneer! No matter how you serve it, there's hardly a chance you'd go wrong. One such crowd favorite is the Tandoori Paneer Tikka, succulent cubes of paneer marinated and grilled or baked in a "tandoori oven", then served with grilled vegetables. But here, I have tried to take it one level up by making a spicy yoghurt marinade, then serving the Paneer Tikka with... Please Click the Title for the Full Post
Kesar Rasmalai (Bollywood Cooking)
2008-05-04 22:29:00
Blogging has changed my outlook towards cooking. Cooking for me is no more just something that I do to fill our stomachs but it has acquired a completely different facet. I go to extreme lengths now to make the food look as good as it tastes. And when there is a blog event that challenges me to bring out the best in me I am definitely game. That's exactly what Meeta's Monthly Mingle has done. The theme she has presented us (or rather challenged us with) this month is Bollywood Cooking. It's a fabulous theme with a wide variety of dishes to explore. Glamorous as Bollywood is , I thought my dish had to be equally glamorous . And my Kesar Rasmalai is just that. It's elegant, sophisticated, and has just the right balance sweetness and creaminess. I also wanted to try out something from a different culture than mine. The other reason why I chose to make a Bengali sweet like Rasmalai is to celebrate all the beautiful Bengali actresses in Bollywood. Right from the beautiful Suchitra Sen...

Paneer, also known as Ricotta or Cottage Cheese is a favorite ingredient in Indian cooking, and as restaurants and recipes bridge the gap between boundaries in cooking, it has become a renowned name internationally too. As you can see, I have posted several paneer recipes on this blog, and over the course of time, a lot of my readers have reported that they live in regions where readymade paneer is not that accessible, and it'd be great to make it at home. Actually, making paneer at home is... Please Click the Title for the Full Post

Palak Paneer Parathas
2008-03-21 23:38:00
I am a very erratic blogger these days. And it's all thanks to this certain project that I have undertaken. I might have mentioned it before but let me tell you a little about it. The Marathi Mandal in my city had been offered the chance to create and display a cultural showcase exhibiting all different aspects of Maharashtrian culture. This will be displayed at the local library for the entire month of April. I am leading one group and the topics we have been allocated are Marathi Food, Marathi Painters, and Sculptures in Maharashtra. The food part is the easiest one obviously but the painters and sculptures needed a bit of research. Needless to say that there are a thousand other things pertaining to the project that are taking up all my time. But believe me I am enjoying every bit of it. But that's put a strain on my blog. I am typing so much for the project that I just can't find the energy to type some more for my dear blog. But it's Easter weekend now and I am feeling a bi...

Mutter Paneer/ Paneer in Peas Gravy

An all time favorite North Indian dish. The combination of peas, tomatoes and paneer gives this dish a subtle sweetness which enhances the taste of this flavored dish. You could alter the spice level according to your taste. If you don't much care for the sweetness of the peas, you could add a little more red chilli powder or even add green chilli paste.

Savoury Muffins with Sun-Dried Tomatoes and Cottage Cheese(Paneer)
2008-01-14 16:22:00
When we think about comfort foods, we tend to give in a bit more towards chocolate or desserts, but for some of us, savoury dishes go more towards comforting our palettes than sweet ones. I am one of those with a huge sweet tooth, and almost always give in to my dessert temptations; but lately, I'm trying to extend my skills by experimenting a lot more with new spices and herbs, and combining classic ingredients in a contemporary style to create a savoury tantalizing dish. This weekend, I decided to realize one of my whims - I'm a huge fan of muffins, and so I thought why not make a Savoury Muffin! when Indians think of comfort food, 9 people out of 10 zero in on "Paneer", or Cottage-cheese. So I too chose paneer as my main ingredient, then started adding other stuff, some inspired by my sense of taste and smell, some purely by instinct, and some simply because they are favorites!:) So what things finally made it into my muffins?? well, it was mainly Sun-dried tomatoes, cottage-ch...

Achari Paneer Tikka Wraps - Healthy and Delicious!!
2007-11-22 20:00:00
As an Indian, I am bound to be biased by Paneer, but frankly, even if I wasn't an Indian, there's no way someone could have kept me away from this magical ingredient called Paneer (Cottage Cheese)!! It is healthy, rich in proteins, less on trans fat, and can impart tremendous richness and flavor to any dish that it goes into. One of the easiest wasy to relish paneer is by making Paneer Tikka, that is, marinating it with spices and eating it with veggies. So I just went one step ahead and combined the paneer tikka with some chilli-garlic pickle, added veggies and cheese and wrapped them into wheat parathas to make these extremely inviting Achari Paneer Wraps. I was first exposed to these wraps at an Indian restaurant called Amber Bytes (which I'm going to review very soon!), and I was totally taken over by the taste. Hope you like it as much as we did!!Ingredients2 cups paneer (cottage cheese) - cut into small cubes1/2 green capsicum (bell pepper)- diced finely1/2 red capsicum - d...
Bihari Subzi - Shahi Paneer
2007-11-21 07:25:00
I always dream of making an entire thali for Regional Cuisine of India (RCI). Managed somewhere close for Odiyan Cuisine but sadly failed this month. The best I could do last weekend was this typical Bihari dish - Shahi Paneer. I am a paneer lover and like it in almost any dish. This is my first attempt at Bihari Cuisine and I must say I am a fan now.Shahi PaneerWhat I Used:Paneer - 200gm, defrozen and cubedOnions - 3 mediumTomatoes - 2 largeCapsicum - 1 smallGinger garlic paste - 1 tbspGaram masala - 2 tspCoriander powder - 1/2 tspCashew nuts - 10Oil - 2 tbspSalt - to tasteHow I Made It:1. Fry cubed paneer lightly in little oil and keep aside.2. Saute onions in oil till golden brown. Add masala, ginger-garlic paste and coriander powder and fry for 2 mins.3. Paneer Jalfrezi (A spicy end to a very sweet Diwali)
2007-11-13 10:40:00
After a very sweet Diwali I thought a spicy Jalfrezi was a good recipe to post . This is a firm favourite in my house. Actually anything with paneer is always welcome in my family, that's particularly because I adore paneer. My husband teases me by saying that my face glows with happiness when I cook ,eat or even buy paneer. I don't believe him and know he exaggerates. But I can't deny the fact that I love it. I don't know what the word Jalfrezi means but I have always associated the word Jal with fire and therefore make this dish a little more fiery than normal. So here's my very simple recipe for a spicy and mouth-watering Paneer Jalfrezi:Ingredients:200 gms Paneer cubes,1 large onion chopped (chop them into small square shapes if possible),3/4 cloves garlic crushed,1/2 inch piece ginger grated or 1 tspn ginger paste,2 large tomatoes coarsely pureed,1 tspn concentrated tomato puree (optional),1 large green capsicum cut into small square shapes,4 baby corn (each one cut into 2 ...
Spinach and Paneer Cutlets - Bring a Zing to your table!
2007-11-07 20:57:00
Cutlets, also known as "Croquettes" or "Tikkis" are a top choice for delicious snacks, coctail parties or finger-food appetizers. They are easy to make, can be prepared a day in advance and can go with any kind of cuisine! That, along with the multitude of variations that can go into these make it a favourite choice at lots of party platters. Potatoes are by default a preferred ingredient in most vegetable cutlets, but this time I chose to add something else that could give my cutlets a unique taste and texture. So I chose the next best thing in the Indian cooking glossary - Paneer, and added a bunch of peas, spinach and spices to make these delicious Vegetable Cutlets. You can serve them with any dipping sauce or enjoy these by themselves at tea-time!Ingredients1 cup paneer (cottage cheese) - shredded2 cups spinach - blanched and chopped1 big potato - boiled and mashed1/2 cup peas - boiled and mashed1/2 cup coriander - chopped3 cloves of garlic - minced1/2 cup onions - chopped fine...
SMOKED BUTTER PANEER?Paneer-e-Dhungaar is what I like to call it!
2007-10-29 09:43:00
"Raising children is presented at first as a true-false test, then becomes multiple choice, until finally, far along, you realize that it is an endless essay. No one knows anything."Anna QuindlenSMOKED BUTTER PANEER CURRY?'Paneer-e-Dhungaar' is what I like to call it! This recipe is the result of trying to keep the dinner table smiling with eager kids. Here's a nice change to the regular Indian style cottage cheese/paneer curry. It combines the best of paneer tikka (which has a smoked flavor) & butter paneer. I made this up one day when the kids were losing interest at the dinner table, and I had paneer on hand which I wanted to add to the menu! The flavour turned out very nice indeed; and the kids enjoyed it a lot. I dare say this would taste just as well with chicken too, but have yet to try it.Ingredients:Paneer/cottage cheese ? 250gms (NOT CUT INTO PIECES)Piece of coal ? 1 smallGhee ? few dropsTomotao Puree ? 200mlOnion ? 1/ chopped fineCapsicum ? 1 / chopped fineGreen ch...
Palak Paneer from UK
2007-10-23 19:51:00
I call this dish Palak Paneer from UK because I saw this recipe on a show on UKTV Food. I am always intrigued when English chefs cook Indian food on TV. All the ingredients seems so much more exotic when they talk about it. Everyday items from an Indian Kitchen like curry leaves, cumin powder, garam masala, fresh coriander and ginger-garlic paste which are used by me without giving them a second thought appear so much more glamorous on TV. Terms like beautiful and gorgeous are used very frequently to describe very commonly used spices, but I must say they do make you see stuff in your own kitchen from a different perspective. And I like that. sometimes while cooking something mundane I pretend I am on a TV show and say things like "Now lets put some of this gorgeous yellow turmeric powder in our curry" or "I am going to chop some of this beautiful fresh green coriander and garnish my lovely crunchy salad" It really makes me laugh while cooking and takes away some of the boredom out o...
