One of my early memories of helping out my mom in the kitchen is making eggplant parmesan once a month on Sunday evenings. As far back as I can remember, I always wanted to help in the kitchen. When I was really little, I was allowed to stir things (initially ones that weren’t on the stove, but as I got older, the stove was no longer off-limits) and I beat eggs on Sunday mornings for omelettes and stirred in seasonings, but I think that this dish was one of the first things with which she really let me get my hands dirty – both literally and figuratively. My mom would slice up the eggplant and prepare the bowl of dredging liquid (she used a thin batter made of chickpea flour and water), and she did all the frying. But I was completely in charge of everything else. I loved dipping my hands (oh, and the eggplant slices, too) into the dredging solution and then coating them in breadcrumbs. As STL readers know, Champagne only comes from the Champagne region of France (STL post here). Here is another pork recipe by a recipezaar member that I tried last night. My hubby found it delicious, I thought it could have done with a little more liquid left after cooking to pour over pork. The overall flavour was very good and it all worked really well together the pork came out very tender. I will definitely be making again but I think next time I will add a little more wine and perhaps some water. I also only cooked at 190c instead of 200c and for less time, this is because I had a pork tenderloin of far less weight as it was only for 2. Serves 6-81 lb Pasta shells2 c Mayonnaise1/4 c Parmesan cheese, grated1/4 c Red wine vinegar1 ts Dried oregano1 ts Dried thyme1/2 ts Salt1/2 ts Pepper1/2 ts Garlic powder1/4 cup chopped parsley1 c Mozzarella cheese, diced1 Red bell pepper, coarsely chopped4 Scallion, finely choppedIn a large pot of boiling water, cook oasta until tender. Meanwhile, in a large bowl, blend the mayonnaise, parmesan cheese, vinegar, oregano, thyme, salt, pepper, and garlic powder. Drain and rinse pasta and add to the mayonnaise mixture; mix well . It seemed like an easy enough recipe with ingredients we always have on hand, so when we were trying to decide what to have tonight I figured this would easy to whip up. This is a nice light version of the typical Italian dish, risotto. Nick and I are both big fans of the creamy rice concoction, but we treat ourselves to it only on special occasions because it can be pretty heavy. I came across this lighter adaptation on Cooking Light and only made a couple of slight modifications on the original recipe. There are no leftovers to speak of, so you know it was a hit! This was also a great clean-up meal since you only need to use one pot! Auch dieses Jahr gab es wie immer den Kartoffel-Steinpilz-Gratin am Heiligabend. Für den 1. Weihnachtstag hat der Familienrat sich für Knusprige Entenbrust mit Parmesan-Pastinaken, Chutney und Kroketten entschieden. Sehr lecker! Mein weihnachtliches Chutney passte sehr gut zu der Entenbrust. Die Parmesan-Pastinaken waren ein wenig aufwändig, sind aber die Mühe wert. Die Zitronenschalen-Petersilienmisc-hung und der Balsamessig hob den Pastinakengeschmack sehr fein. Der Backofen hatte ordentlich zu tun, auf drei Etagen übereinander brutzelten Pastinaken, Entenbrust und Kroketten. Die Entenbrust habe ich wie hier angebraten, aber dann 18 Minuten bei 175 °C garen lassen. Comme promis samedi avec les deux recettes qui osaient marier chocolat, foie gras et parmesan (je vous rassure pas les trois ensemble!), une autre recette trouvée dans la presse italienne avec une utilisation non-conventionnelle du parmesan dans le cadre de la campagne "Quando c'è, si nota."! Le titre de cette recette numéro 23 est "Come sconfiggere un giorno triste" (en gros "Comment vaincre un jour triste"). La photo est toujours issue de l'excellent site parmigiano-reggiano.it que je vous conseille de visiter, en italien ou en anglais, surtout bien sûr la page des "recettes", en particulier celles imaginées par de grands chefs à l'instar de cette recette je vous propose aujourd'hui. Hier, j'ai fait le plein de revues italiennes de cuisines, chez le marchand de journaux du coin, à Rome. Une campagne de pub un peu particulière a attiré mon attention... Le "conzorzio" du parmiggiano reggiano a largement diffusé une série de recettes décalées surprenantes et qui ne manquent pas d'humour, avec le slogan "quando c'è, si nota" (quand il y en a, on le remarque). Les recettes sont numérotées avec un message (dans le style des "leçons de séduction" de la marque de lingerie Aubade!). Les pubs pour le parmesan ont bien changé, tout comme la société italienne.
