2009-06-04 17:44:00 Esta es la receta de la pasta de curry rojo que utilizaré en el guiso de dorado para el festival de roti. 100 g Ají peruano 100 g Ají rocoto 10 g Ají dulce en polvo 200 g Cebolla morada 40 g Ajo 50 g Ají seco 100 g Jengibre 60 g Lemon grass 100 ml Aceite onotado 20 g Comino molido 20 g Semillas de cilantro 5 g Pimienta blanca 5 g Canela en rama 5 g Nuez moscada 2 g Clavo de especie 1. Cortar todos los ingredientes. 2. Calentar en el aceite el comino y las semillas de cilantro. Agregar todos los otros ingredientes y sofreír. 3. Pasar por un procesador hasta obtener una pasta homogénea. Si hace falta, agregar un poco más de aceite.

Pasta de curry amarillo
2009-06-02 18:02:00 Comparto con ustedes mi receta de pasta de curry amarillo, el cual usaré en el guiso del roti de gallina que prepraré en el próximo festival del roti. Para 1 taza 1/2 4 ajíes peruanos (los anaranjados alargados) 4 ajíes rocotos amarillos 6 shallots o una cebolla morada mediana 2 dientes de ajo 4 cdas de tallos de cilantro 3 tallos de malojillo 4 cdas de [[galangal]] o de jengibre 1 cda de comino molido 1 cda de cúrcuma en polvo 1 cda de pimienta blanca 1 cda de semillas de mostaza amarilla ralladura de 1 limón francés 1/2 taza de aceite 3 cdas de aceite onotado 1. Cortar todos los ingredientes. 2. Calentar en el aceite el comino y la cúrcuma. Agregar todos los ingredientes y sofreír. 3. Pasar por un procesador hasta obtener una pasta homogénea. Si hace falta, agregar un poco más de aceite.
