Royal Foodie Joust - Mango Pastry Puffs
2008-04-29 15:07:00
Mango Pastry PuffsThis was probably not one of my finest hours. This whole month has been a real challenge for me. I have messed up so many recipes and meals that I was starting to wonder if it was all going to fall back in place! One thing that I have learned from this past month is that everything that I cook or bake has a bit of me in it. If I am not feeling good (too much stress, distracted, busy, worried etc...) nothing I make will turn out right. But on the other hand if I am feeling good (which honestly is my normal state!!!) my food is great. I have never really noticed before the impact that this had on all of our food. Maybe that is because normally I don't let too much get to me but when it does boy is it an avalanche and I have felt the pure weight of it this month. Things are so much better now but that brings me to my Royal Foodie Joust entry for this month...The Royal Foodie Joust is a monthly event that is normally hosted by Jenn the Left Over Queen but see...

Jibe Goja - Fried Pastry in sugar syrup
2008-03-26 03:38:00
Food events make the food blogging world a little more interesting. I love events, I do not have time to participate in most of them, but ever so often one of them catches my eye and I have stop by later to see what a variety of dishes are offered in the round-up even if I cannot participate. One event that I have been following since last year is RCI-Regional Cuisine of India. I think this event is such an amazing idea, just brilliant of Lakshmi to think of this. This month RCI-Bengali is being hosted by Sandeepa at Bongmom's cookbook. There are just so many interesting recipes, I finally settled for trying this sweet simple recipe. Jibe Goja is thinly rolled pastry dipped in a thick sugar syrup. Works wonderfully with tea and actually keeps fairly well for a few days in an air-tight container. The name is derived from the toungue shaped appearance, jib in bengali refers to tongue.Jibe-Goja- Fried pastry in sugar syrupMakes about 15 gojasIngredientsFor the syrup1 cup water2 cups su...

Bastiaan Bakery & Cafe
2008-03-14 04:58:00
I love eating at bakeries. The smell of freshly made breads, rolls and pastries plus the warmth of these eateries is enough to make you feel at home and comfortable.Bastiaan Bakery and Cafe is one of those places. We found it while walking on the Hongmei pedestrian street which is littered with many restaurants and cafes. It was very busy on that Sunday that we visited. A lot of people preferred to sit outside on the sidewalk as it was a sunny afternoon. It was still quite cold but I guess when the sun is shining down it can be nice and brisk. We wanted to eat alfresco but there were no tables left.We don't regret having lunch inside because the atmosphere was even nicer with lots of fresh food on display at the counter to entice you and a host of Easter chocolates on sale. The menu was pretty extensive for a bakery and I decided to have a roast chicken and avocado salad while David went for a salmon sandwich.Bottled apple and orange juice.Fresh juice is also served. There was quite ...

Woodmoor Pastry Shop = V Day Lovin'
2008-02-18 00:44:00
Happy Valentine's Day everyone! Would you be mine? Today my preschooler is excited about his class party and giving paper hearts and chocolate to all his friends, I have promised my husband that I will make googly eyes at him tonight and not the computer. Pretty standard semi-urban bliss. Barf.Something that can really get everyone's heart pumping is a trip to the Woodmoor Pastry Shop to choose one of those beautiful treats lined up under the glass. Serious yum. It's a kid's paradise and always reminds my son and I of the candy shop in Charlie and the Chocolate Factory (the Gene Wilder version.) My daughter can't resist the huge yellow happy face sugar cookies and my son is methodically working his way through a different cookie choice at each special visit.I am a fan of seeing just how long I can make one of their chocolate encrusted strawberry petit fors last, and then eating a second one like a huge bite of sushi. But it's hard to go too crazy as the sign of the ne...
Hemp Seed Filling for Tarts, pastries, and Homentashn (Hamentashen)
2008-02-17 19:50:00
Well, of course I am beginning to think of poppy seed fillings, even if we have (blessedly) an extra month to think about them this year, and it seemed to me that the qualities of richness, mild bitterness, and just general seedlikeness (seediness?) that makes mon, or poppy, such an ideal pastry filling all work in favor of hemp seeds too, maybe even more so. My very first hemp seed filling is so delicious that I will be making many more, possibly a hemp and poppy mosaic sometime. Erin from The Skinny Gourmet will be hosting Kalyn?s Weekend Herb Blogging, where you will find all manner of plant-based sweetness. Hemp Seed Filling for Tarts, pastries, and Homentashn (Hamentashen) 2 cups hulled hemp seeds 1 cup milk (in this recipe, you can easily substitute soymilk or coconut milk) ½ cup agave (or honey) 4 cardamom pods 2 pinches salt Zest from one largish lemon, grated or microplaned Toast the hempseeds in an iron skillet to a light golden brown, stirring constantly. We rented a car from Priority Car Rentals at the Brisbane outlet which was really a good deal. I think David paid AUD$25 a day for a manual Hyundai Getz. Mike sent us to collect the car and pointed us to the right highway to get back home to Westlake but somehow we took a wrong turn and ended up heading to Sunshine Coast. It took only 5 minutes before we realized and turned back.David wolfing down his meat pie.Bronze award for Mai Hot Bread. We took the Nudgee exit on the motorway and turned back towards the city. It was then I spotted the PIE SHOP! It was past 1pm and we were hungry so we made a pit stop and discovered a great pie shop. Mai's Pies have won awards and I must say that it deserves the medal.Warm steak and mushroom pie.The filling is full of gravy and very tasty. The Chocolate Mud Cake was also excellent.I have to say that I enjoy pies - I like the combination of pastry with a savory filling and I especially enjoyed this meal. I am glad we took a wrong turn!

Pastry Chef back
2008-01-14 07:25:00
Alistair Wise has just returned to his hometown of Hobart after three years working for uber-celebrity chef Gordon Ramsay — two years in the pastry section with him in London and a year in New York helping open his restaurant and hotel complex as head pastry chef. Reviewing a special 22-course all-dessert menu Wise presented at Marque IV in May 2006 while en route to New York, I described it as a technical tour de force of 21st century foams, gelees, emulsions, slurps, pops, water ices, fruit confetti, cremeux, concasses and fondues and said, while provocative and confrontational, it wasn’t a meal. He now says, ”That was in my molecular, technique-driven phase. I’ve now learnt that people’s best food memories are not toothpaste and jelly experiences. In the last year I’ve stood back and realised that just because you can do something, that doesn’t mean it needs to be done. ‘The best dessert I tasted in New York was also the simplest—...
CHOCOLATE TARTLETS...Mini pastry shells filled with chocolate ganache.
2008-01-12 04:51:00
"If you get melted chocolate all over your hands, you're eating it too slowly."Author Unknown CHOCOLATE TARTLETS......Mini pastry tarts filled with a ganache, topped with marzipan. Ever since I've seen these mini bites, I've been fascinated by the little things & was looking for an opportunity to make them. There's something very attractive about single sweet morsels because each piece has a 'complete' look . Eventually made them for the daughter's birthday, & coordinated them to match the colours & look of her 'YIN YANG Chocolate Cake', pictured below. The recipe for the pastry cases / pie shells is from a quaint little book of contemporary recipes called 'What's Cooking Chocolate' by Jacqueline Bellefontaine. I made these & some jam tartlets too, using the same pastry recipe. On Latha's request, am posting these as soon as I can. Here's the recipe as adapted from her book...Ingredients:Flour - 1 1/2 cupsButter - 1/3 cup ; chilled & cut into piec...

Portuguese Traditional Christmas Pastry...

There are some Portuguese Christmas tradition that have stayed on in my family although we have been abroad for so long. Some tradition are nicer than others, and this is the case of a delicious pastry done on Christmas and New Year. They are called "Filhóses" or "Velhóses" according to the region in Portugal where they are made, but the recipe is always the same...most of the time! This is the tradition I will now make you discover...for me there is no real Christmas without at least one of my mother's "filhós"Ingredients · 1500g pumpkin (this weight is after the pumpkin was cooked and dried of its residual water) · 600g of flour· 4 eggs (optional)· 20g of live yeast· 5g salt· a (very) small glass of Port wine· sugar and cinnamon1. Peal a medium pumpkin, cut it in cubes and cook it in water without salt. Once cooked, let it dry and squeeze it well to get rid of any residual water.2. A French Cafe in Ningbo! We were so excited when Julie told us about this cafe and couldn't wait to try it out. I really wanted to eat dessert there for my birthday but the cafe closes at 8pm which is too early.Today, David did not go to work - he had to stay in the city to meet a client in the afternoon so we had an opportunity to go have lunch there. It is only a short walk from our place.Since it was a weekday, we were the only customers. Well, there was a local Chinese customer who came in and had a quiche and left after 15 mins. There is no menu but a selection of freshly made sweets and savories laid out for you to choose from. The offering for the day for the savories were a Quiche Lorraine and Ham and Cheese muffins. And there was Chocolate Cake, Apple Pie, Chocolate and Banana Crumble and Pear Cake. I guess it is nice to be surprised when you visit the cafe but sometimes, I might just want to eat something I like and have a craving for but I guess I could just call to find ...
