These are from Mansoura Middle Eastern Bakery, 515 King's Highway Brooklyn. The apricot paste is face-scrunchingly sour and centrifugal with fruitiness. The blanched pistachios are very fresh and vivid. The sweetness and sourness of this candy somehow stay completely separate, not melding into any recognizable sweet-and-sour combination. A real Steeplechase ride for the palate.

It happens to me at times after a chocolate overdose in the kitchen. Something different has to be attempted; something which has a chance of turning out unexpectedly good or even bad, but different. Have started throwing caution to the wind & have begun treading on uncharted territory. Read on for my tale of good...& then bad, as in disastrous! In a span of 2 days I baked over a 100 cupcakes & iced them as well. The first 80 were vanilla cupcakes, the ones for the playschool Christmas party. These last batch I had to do a little different for my own experimentation & therapeutic pleasure! The flavours of chocolate & orange complement each other beautifully. I love the way the Christmassy ones turned out with the red, white & green; & also the pink 'n' purple 'very girly ones'. For the chocolate stars & flowers, I drizzled the stars, flowers, zigzags etc onto butter paper, & peeled them off gently once they were set. These can be made in advance and stored in an airtight box in a cool place. Fix them onto the top of the cupcake with a little melted chocolate. When I got this amazing dried cantaloupe at Sunflower Market in Queens, I also got these fresh pistachios, The husks are easily removed and the tender kernels taste just like pistachios, but more so. I had never seen anything like this before, and I betcha Sweetnicks hasn't either!
