Here's an oven baked pork chop over a spring mix salad, topped with crushed almonds.This is very easy and simple, and makes a great lunch. The marinade for the pork chop consists of soy sauce, lemon juice, brown sugar, onion powder, garlic powder, and salt and pepper.I placed a few pork chops in a container and pour in the marinade. I let it sit in the fridge and marinate for a couple hours (or make 10-15 minutes if you're hungry). I heated the oven to 350 degrees F. I baked the pork chops for about 20-30 minutes, until the pork chops were done (The internal temperature of the pork chops should reach 160 degrees F).

Last night was a karate night so I had to think fast on a meal. I decided that T. would be home early enough to grill some pork chops so all I really had to do was come up with a marinade. This one turned out real well and would be good with a pork loin or chicken.Marinade1/2 cup soy sauce (use low sodium soy sauce if you like)1 T Worcestershire sauce6 cloves garlic2 tsp lemon juice1/2 tsp ground black pepper1 teaspoon vegetable oil4 pork chopsAllow to marinate for 30 minutes or more. The thicker the meat the longer the marinade time will be. We grilled the chops but they can be baked or broiled as well.We served it with a healthy bowl of steamed broccoli and salad.
