I’m not sure why, but I’ve been rather shy about mint in my cooking career. Did I have a traumatic experience with mint at some point in my life? The overdose on wintergreen Life Savers that I went through as a child? Why has mint not been forefront in my culinary dishes? I haven’t an answer, ...

Muzzle Velocity of a Potato Cannon

Let's assume, hypothetically of course, that a high schooler built a potato cannon. Let's assume that hairspray was used as the propellant and a gas BBQ grill lighter/starter was used as the source of ignition. This hypothetical cannon might have been made from 2 inch and 4 inch PVC pipe with a se

Feta Potato Patties & Salad
2009-06-29 00:04:00
Sweden is not a very big potato producer. Nevertheless, potatoes are an important part of our diet and I always cook extras for different purposes. Day old boiled potatoes seem to become firmer and easier to handle than newly boiled ones. Besides, cold boiled potatoes can be used in so many ways. In Greece, they eat a lot of cheese. This country holds a top place for cheese consumption per person in all of Europe (together with France). A Greek recipe of Patatokeftedes (potato balls) in the cookbook 'The Original Greek Cooking', inspired me to add Feta cheese into potato patty batter. A non-melting cheese like Feta seemed to be the right thing. I have been to Greece but I have never had Patatokeftedes, so I don't know how these feta potato patties compares to Greek potato balls. The ingredient which really made them taste different was real genuine feta cheese. It was produced by Kourellas S.A. company (located in Grevena, Greece). This cheese tastes so much bett...

Snacks For My Couch Potato
2009-05-11 02:11:00
The goddess of fortune and chance has paid me a visit. A couple of weeks ago I won a check for 160 SEK (20 USD) from Candy king! I definitely appreciated this prize. Recently, Candy king purchased Parrots, Scandinavia's oldest and largest producer of snack foods (nuts, beans, peas, dried and soft fruits), which meant I was able to put together a large candy/snack bag according to need and taste. I didn't know that Candy king had so many varieties of snack packs. Delicious snacks for my Sunday couch potato who is watching sports all day long on TV! Weekly soup for Souper Sunday: Potato soup with chives and blood sausage

For the Kohlrabi Parsley Soup two weeks ago I had to buy the parsley. With the first chives from my garden I prepared a Potato soup with chives and blood sausage as the 13th post for Debbie's Souper Sunday. Amazingly Delicious Paneer Potato Bites
2009-03-26 11:40:00
A very warm Hello to all my dear readers. Sorry I have been away for so long. Had a lot of other tasks to do and somehow in all the rush to do 20 things at the same time it is always my blog that takes a back seat. But it is never far from my thoughts. Whenever I cook something different from the ordinary my mind is planning out how I can present this on Food-n-More. In fact in the last fortnight it so happened twice that I did make some tasty snacks and was determined to take pics of the dishes but somehow I left it too late and the food was over and gobbled up (don't ask by whom) before I could get my camera out of it's case. But not this time. This time I did take pics before anyone had a chance to set eyes on what I had made. And what did I make? Yes these very delicious ,crispy and mouthwatering Paneer Potato Bites. They were practically made in minutes . They are a great starter for any party or get together and my friends loved them. So will you! Here's what you need:1 larg...

Soup of the week: Sweet potato & coconut soup with Thai pesto
2009-02-22 10:38:00
This is my 5th post for Debbie's Souper SundayThis week was odd, each day one or more members of our family felt ill. The whole family suffered from a viral infection and I did a minimum of shopping. This did not prevent me from posting my soup of the week. I prepared a Sweet potato & coconut soup with Thai pesto from the store cupboard. The original recipe provides a homemade curry paste but I used a store-bought. I substituted the coriander/cilantro with a parsley/coriander mixture. Baked Sweet Potato Fries

One of my friends had this picture of baked sweet potatoes in her Facebook album and of course I immediately wanted the recipe. Not that I hadn't come across the dish online but to see someone you know had tried it and with success, made me want to try it too. She passed me the link and I tried it the next day! I am nothing if not a sucker for "immediate" action when it comes to trying out simple recipes ;)Oven-baked sweet potato 'fries'The potatoes came out quite well and though TH would have preferred it with normal potatoes, I enjoyed the subtle sweet flavour and contrasting heat form the chillies. I also loved the fact that it requires very little time to prepare and most of the work is done by the oven anyway! Dum Aloo / Potatoes in Yogurt-Tomato-Onion Gravy
2008-12-04 09:09:00
'Dum' cooking is a traditional method of slow-cooking, normally on a bed of coal with pots over them, sealed with flour and water so that no heat escapes it. Sometimes coal is spread out on the pot lid to distribute heat evenly. Thanks to our modern-day cooking accessories, nothing takes that much effort, though the difference in change is definitely debatable. Dum aloo is not something I make often because I try to avoid using the mixer on weeknights and normally don't buy pureed stuff in cans (or anything in cans for that matter, except milkmaid!).This was made on a weekend a few weeks back when I was in a lovely mood to cook and I followed the recipe I had scribbled down from mom-in-law, to the last letter. What I Used:Baby Potatoes / New potatoes - 15 nosTomato - 1 large, choppedOnion - 1, choppedGreen chilly - 2Ginger - a 1" pieceGarlic - 3 cloves (or 1 tbsp ginger garlic paste)Yogurt / curd - 2 TbspOil - 1 tbspSalt to tasteCoriander (cilantro) leaves - for garnishingSpices:C...

This recipe has been totally and completely flicked from my sister's blog. I didn't have curry leaves in the house and mine didn't come quite as delicious-looking as hers, especially the gravy, but both TH and I licked the bowl clean. Sweet Potato Cake with Chocolate Cream Icing
2008-11-20 23:47:00
This time around the The Cake Slice (rs) voted for a sweet potato based cake. It was the perfect cake to bake right before Thanksgiving. The cake called for sweet potatoes, cinnamon, cloves, and vanilla. At first, I was a little worried that the sweet potatoes would over power the cake, but not so. The cake had a very light "carrot cake" taste to it.The orange cream cheese filling was not as "orange" tasting as I had hoped. I think next time I am going to add a teaspoon of orange oil to enhance the flavor. The chocolate cream cheese icing was a nice surprise. It tasted rather delicious. The only complaint I have is that in the book the icing is orange. It's clearly orange. I wonder if the icing in the book is dyed orange and/or was the chocolate supposed to be white chocolate? If you would like to over 60 versions of this wonderful cake then go to The Cake Slice Bakers and enjoy!Sweet Potato Cake: 2 medium or 1 large sweet potato (12 ounces)3 cups of cake flour*3 teaspoons of bakin...
Aloo Palak - Potatoes in a Spinach Gravy
2008-11-12 07:46:00
I really can't believe how fast time is flying. Its been week since my last post. I have been making mostly simple sabzis the past week since we have been apartment hunting almost every evening after work. A subzi and some steamed rice is all I have energy for after work and poking around strangers' houses.Aloo PalakAloo Palak is a sure-shot winner at home since TH loves both potatoes and palak. And its generally a quick recipe for me since I chop the spinach during weekends and freeze it or sometimes buy it chopped.Aloo Palak is originally a Punjabi recipe, (which reminds me - what happened to RCI??) and the authentic recipe includes addition of some methi or fenugreek leaves to it. My version is very customized to my laziness so you may or may not find it to resemble something you would get in a Punjabi restaurant ;)What I Used:Palak / Spinach / Cheera - 2 cups, choppedPotatoes / Aloo - 2, cubedOnion - 1 small, chooped (I used 5-6 shallots so that works as well)Garlic pods - 2 ...
Sweet Potato Waffles

Ever since that post about using my mini waffle maker, I have been pondering about cool tasting waffles to make. I was thinking, how about sweet potato waffles! I love to eat sweet potatoes. Sweet potato fries are delicious. Mashed sweet potatoes with a pinch of cinnamon are awesome (unless they add too much brown sugar and make it way too sweet and difficult to eat). Of course, oven baked sweet potatoes are just as great. Here is waffles meets sweet potatoes! Here?s the recipe I used for sweet potato waffles. Ingredients:1.5 cups sweet potatoes (peeled and cut into cubes)2 cups all purpose flour1 tbsp baking powder1/2 tsp salt6 egg whites1 cup milk1/2 cup light brown sugar1/2 cup butter, melted2 tbsp orange juiceDirections:Steam potatoes for 20 minutes until potatoes are soft. Cranberry Sweet Potato Soup
2008-10-27 17:00:00
The soup which the seniors made in the South Arm Community Kitchen is called Cranberry Sweet Potato Soup. Soup is just great for the colder fall weather. Moreover, most soup can be frozen in small batches for up to 2 months. Reheat the soup on the stove gently and you can have a bowl of hearty soup anytime. October is the harvest time for cranberries and Richmond is the top producer of cranberries in BC. Cranberry is a superior source of nutrition and vitamins. It is an excellent source of antioxidants which helps to protect against cancer, heart disease and bladder infections. Cranberry juice is also rich in polyphenol content as in red wine which makes it a heart-healthy drink.
Aloo Paratha
2008-10-16 12:10:00
Aloo Paratha really doesn't need an introduction to any Indian cuisine lover. I remember having it in an Indian restaurant in Dublin and though everything else tasted nothing (much) like Indian food, their Aloo Paratha was very near the real one. The best Alu Paratha I have ever tasted was in a well-known dhaba in Gurgaon lovingly called the Convergys Dhaba. Darsh took me there during one of our many visits to Gurgaon and I will never forget the taste of that paratha which was super-thick, soft, oozing in butter with a square butter piece on top that melts around the paratha as you eat. And they serve it with a really nice achaar (pickle). The paratha was hot till I finished eating it, that's how thick it was. Bliss..As with most street food, its impossible to get that taste at home for me. I chicken out and add very little butter and I guess that's for the best anyway. I like my parathas nicely browned and with avakka pickle while TH also takes curd with his. What I Used:For the...
