Cooking with Anna: Involtini e Melenzane
2008-06-04 16:54:00
So we are going to go back in time a little with this post. I hope you all don’t mind the time warp this blog sometimes is! It is hard sometimes figuring out when to post what! The life of a food blogger is all about organization…and sometimes the lack thereof. Anyway, as you all know, the week before our wedding, Anna, Roberto’s mom came to stay with us. She is a food blogger and member of The Foodie Blogroll! Her blog AnnaGarau.com features recipes from her native Sardinia. It is a great blog, full of wonderful anecdotes about Sardinia as well as beautiful pictures and she is quite the chef. It is in Italian, so if you want to check it out, and I recommend that you do, use one of those handy dandy translators like this translator from Google. You can even watch a video of traditional Sardinian dancing and singing - something Sardinians are known for. When she was here at our house, she was updating that post and we were having such a good time. I was really ...

¡Ni Papas! (Not even potatoes!)
2008-05-22 13:55:00
For those of you who don’t know “ni papas” is a Canarian expression which literally translates as “not even potatoes” but really means “nothing” (I suppose because if you’re not even collecting potatoes, there’s nothing left). Usually it’s tacked on the end of a sentence; I’ve heard it used in the following phrase by my ...
English potatoes are nutritious
2008-05-21 18:07:00
According to my reading, English potatoes have 10 times more protein and vitamin B1 than apples. The food also contains three and a half times more vitamin C than the apple. As for vitamin B2 and iron, the contents in English potatoes are three times more than apples. Besides, the English potato has two times more phosphorus than the apple. It has the same amount of sugar and calcium as the apple. Sailors in the past took English potatoes to prevent scurvy because they contain a lot of vitamin C. 60 per cent of potassium is found on the skin of the food. Hence taking English potatoes with the skin intact will lower the blood pressure. However those with renal problems should not take English potatoes as the accumulation of potassium will worsen the condition of the disease.

Jersey Royal Potatoes with Feta and Watercress Sauce
2008-04-13 20:49:00
Our 'In the Bag' event features flavoursome Jersey Royal potatoes and fresh, peppery watercress, both in season in the UK right now, along with feta cheese. I was initially going to make a simple salad to enjoy these great ingredients more or less untouched - and of course fresh, seasonal produce is always fabulous this way - but then I got to thinking about how else I could combine them. Feta is a strong, salty cheese and I thought it could combine well with the peppery watercress to make a good sauce to smother the potatoes in; and indeed it does.Jersey Royal Potatoes with Feta and Watercress SauceIngredients500g Jersey Royal potatoes100g feta cheese100ml double cream2 handfuls of watercress1. Cook the potatoes in salted boiling water until tender.2. Crumble the feta into a saucepan and pour in the double cream. Heat gently until the cheese melts, then simmer until the sauce starts to thicken.3. Chop the watercress and stir it into the sauce. Cook for a few minutes more then tak...

Batata nu Shaak (Rasedar Aloo ki Sabzi/Potatoes in Tomato Gravy)
2008-04-10 10:31:00
A delicacy in a Gujarati household and in almost every traditional Gujarati function. The potatoes are simmered in spiced tomato gravy. My mother in law adds Kalonji seeds (onion seeds) and I notice that this adds to the flavor of the dish. The potatoes are so well cooked along with the spicy tomato gravy; that this process of cooking allows the little starch from the potatoes to thicken the gravy as well.

Sweet and Sour Potatoes with Mango
2008-04-02 18:47:00
One of the most interesting and challenging part of cooking is experimenting with flavors and spices. It reminds me of my lab-experiment days when you'd keep adding elements till you successfully concocted a new compound and exaltingly cried out "Eureka!!" Ok, I know not all experiments go great, but at least that gives you enough incentive to try out new stuff; that's precisely what I felt a few days back when I decided to try a vietnamese recipe for Sweet and Sour Potatoes with Mangoes! Recipe: Tiella di Cozze (Mussel Casserole) and Yogurt Carrot Cake redux
2008-03-31 15:59:00
Recently we had my family over for an open house. We have been in our new place for a while now and not everyone had been here to see it. So we decided to do a luncheon. I had two ideas going into this party ? I wanted to make something rustic and old-school hearkening back to the times that Italians stopped what they were doing to enjoy a nice lunch spread together out in the fields, on a big slab of wood turned into a table. Also along this theme, I really wanted to make something using ingredients that we already had at home. Too many times when preparing for a party, I decide on a menu and then go and buy all the ingredients. This time, I wanted to challenge myself more and use what was around. We had been to the Farmer’s market the day before and had gotten our staples: potatoes, tomatoes, squashes, onions and beautiful bread. We also had a bag of frozen mussels in the freezer. So I decided to make a regional dish from Puglia, called Tiella di Cozze or Mussel Casserole ?...

Easter chump lamb with rosemary and roasted potatoes
2008-03-23 17:18:00
Note: French version is on La cuisine de BabethImportant: don't forget to check: Help beat sarcomaI wish you all an happy Easter! We had a pretty classical Easter Sunday: our day started at the farmers market, then a visit to our butcher and baker. We went really early (that may not be early for you but for us it was) in order to be ready for 11 o'clock Easter mass. And today no way to be late for mass. In France it's quite a tradition to be late at mass, except for my Grand-Dad but he was in the Army so he's never ever late, a way of life. We even planned to arrive a bit early. On regular Sundays in churches all over France, even when really late you can still get a seats but not so for Christmas or Easter where you are quite likely to be left standing. Our church doesn't waive to that principle. Before we left for church I had time to prepare our dessert: a cinnamon apple pie. When we got back we didn't waste any time. We peeled and cut the potatoes, potatoes with a charmi...

Soak potatoes for healthier chips
2008-03-07 12:12:00
Soak potatoes for healthier chips A new British study suggests that simply soaking potatoes in water before frying can significantly cut down the levels of the suspected carcinogen acrylamide. (File Photo)A new British study suggests that simply soaking potatoes in water before frying can significantly cut down the levels of the suspected carcinogen acrylamide, media reported Friday.Acrylamide, the potentially cancer-causing chemical, is created when starch-rich foods are cooked at high temperatures above 120°C, such as frying, baking, grilling or roasting. The study finds that washing raw chips, soaking them for 30 minutes and soaking them for two hours can reduce the formation of acrylamide by up to 23 percent, 38 percent and 48 percent respectively. The study is conducted only if the fries were cooked to a light color. It's not clear whether the same reductions could be achieved if French fries are cooked to a deep, dark brown."There has been much research done by the foo...
