Tuesdays with Dorie: Chocolate Pudding
2008-07-21 09:09:00 This week's recipe picked from Melissa at Its Melissas Kitchen is on page 383 from Baking: From my home to yours: Chocolate Pudding. I have to admit, I was very surprised by the recipe, because a food processor is used. I don't own any so I did in the old-fashioned way with this international kitchen-gadget. At the age of 6 I made my first chocolate pudding with a bag from this firm. Meanwhile I try to omit these bags and do chocolate puddings from scratch. But without a food processor I prepared the chocolate pudding like the instructions on the bag: Mix cornstarch with cocoa and sugar and salt, add gradually 6 tablespoons of the milk and stir until smooth. I mixed all together including the egg and egg yolk in the mixfix. Bring the remaining milk to a boil, remove from heat and pour in while constantly stirring the mixed powder. While constantly stirring reheat over medium heat until the pudding thickens. Remove from heat and the butter-chocolate mixture. For some crunch I a...

Dienstags mit Dorie: Schokoladen Pudding
2008-07-21 09:09:00 Click here for the English version. Entweder li...

Cardamom Tapioca Pudding, Roasted Rhubarb And Strawberry Syrup
2008-04-29 08:01:00 I know my mom is going to say "Ah! Finalement" (Ah! Finally) when she reads this post. You see it is not uncommon during our phone conversations for me to say "Oh, by the way, I saw this really cool ingredient, gadget, linen, etc...on a French site and I am having it come to your house so you can bring it next time you come visit or pop it in the mail with the next care package. Hope it's not too much trouble!" There is usually a pause, sometimes a sigh, followed by "where the heck did you find this? What don't you sleep at night for a change?" The explanation is easy: B's muscles unwind when he falls asleep by severely twitching which provokes him to jerks and send his knee(s) in my ribs or his arm across my face. One black eye and a many bruises later we both agreed that it was safer for me if I let him fall asleep first and then sneak in the bed half an hour later. Most of the time, I turn the computer on and start browsing....and find things I "need" for baking. You've been ...

Nie kochst du ... Schokopudding aus Raspeln

Dairy Free Chocolate Pudding Recipe with Chia
2008-04-22 03:00:00 Here's the first dessert recipe I've made using chia gel (Salba gel). I have to say I'm pretty happy with the results. The chia gel gives the pudding a nice, thick consistency, adds mass, and doesn't affect the flavor at all. For this recipe I made the gel in a 1:4 ratio - 1 part chia seed to four parts water. The recipe contains no eggs or dairy and is suitable for vegans. I used coconut milk but you could use soy milk, almond milk, or just water instead. I like coconut milk because it's rich and creamy like milk. The bananas and semi-sweet chips provide enough sweetness for me but you might want it sweeter, so taste the final mix for sweetness and, if necessary, add a bit of your favorite sweetener to taste. Ingredients 2 c. sliced bananas 1/4 c. coconut milk 1/2 c. chia gel or Salba gel (1 part chia to 4 parts water) 1/4 c. almond flour 1 c. semi-sweet dark chocolate chips 1 t. vanilla extract 1 t. almond extract 1/2 t. nutmeg 1/2 t. sea salt Directions Pour hal...

Taste of Yellow: Sweetcorn pudding
2008-04-20 02:40:00 Last year 149 bloggers came together for Barbara of Winos and Foodies' Taste of Yellow in support of LiveSTRONG Day and The Lance Armstrong Foundation's awareness event for cancer issues and cancer survivors. When she announced Taste of Yellow 2008 I knew I wanted to participate, but wasn't sure if my schedule would alow it. During the past week, when I caught up with my backlog of blog reading, I saw so many wonderful posts like Bron's, Annemarie's, Paz's and Ivonne's, I knew I had to carve some time out for it.Most of us know someone who was afflicted by it or know someone cared for a sufferer. Some of us have had our own scares--as some of you know, I've had two breast cancer scares in ten years--I'm fine, but they were life-defining moments. My contribution to this year's event is a favourite side dish that I usually make with ribs or pork chops, Nigella Lawson's Sweetcorn Pudding. It's tasty and easy and wonderful to eat on its own, especially after a very long day...
Poorly Sick And Can't Eat Pudding.
2008-04-20 02:36:00 I can't blame pollen and other allergens for giving us the sniffles a few days ago, Isla and I have full blown colds as of last night. Conor seems to have been spared the 'tap' runny nose so far. Isla is a miserable little thing. I had perhaps two hours sleep last night as she would not settle. She preferred to be up and about and even tried out some standing athletics which I will post of movie of later. Even trusty Noo-Noo was a no go trying to get her to bed. This is only the second cold Isla has caught. The first was minor, just a bit of nasal stuffiness which made breastfeeding a little annoying.Hopefully, she will fare better tonight.Sickly Poppet in new dressing gown.

Haggis, Black Pudding, White Pudding
2008-04-08 09:34:00 Haggis, a traditional Scottish dish, is - according to Wikipedia - made of the following ingredients: sheep's heart, liver and lungs, minced with onion, oatmeal, suet, spices and salt, mixed with stock, and traditionally boiled in the animal's stomach for about three hours. Today the dish is prepared in a casing rather than an actual stomach. MacSween (picture, right) sells cooked haggis, and we only need to remove it from the outer plastic bag, wrap in foil and re-heat it.Traditionally served with neeps and tatties (cooked turnips and potatoes), haggis is always present on Burns Supper, when Scotland's national poet, Robert Burns, is commemorated. In Jakarta, you can find it in St. Andrews Ball. I can't remember seeing it in Highland Gathering, but check the chief's tent, probably they have it. Or try to make it using BBC recipe. We had our haggis at Marriott Dalmahoy last weekend for breakfast (!) and it was superb.Black pudding is a sausage made by cooking blood (usually fro...

Pudding Head Wilson For President
2008-04-01 03:19:00 The next day--that is to say, on the fourth of September--somethingoccurred which profoundly impressed Roxana. Mr. Driscoll missed anothersmall sum of money--which is a way of saying that this was not a newthing, but had happened before. In truth, it had happened three timesbefore. Driscoll's patience was exhausted. He was a fairly humane mantoward slaves and other animals; he was an exceedingly humane man towardthe erring of his own race. Theft he could not abide, and plainly therewas a thief in his house. Necessarily the thief must be one of hisNegros. Sharp measures must be taken. He called his servants before him. There were three of these, besides Roxy: a man, a woman, and a boytwelve years old. They were not related. Mr. Driscoll said:"You have all been warned before. It has done no good. This time I willteach you a lesson. I will sell the thief. Which of you is the guiltyone?"They all shuddered at the threat, for here they had a good home, and anew one was likely to be a chan...

Coconut Rice Pudding
2008-03-30 16:00:00 Regular rice pudding is fine I guess but I've never liked it much. I Can't Believe It's Not Pudding
2008-03-05 05:51:00 One of Ms. New Beauty's greatest joys in life is eating and eating well. She's not so much a "foodie" as she is a "greedy" - meaning that she can rarely turn down the opportunity to eat really, really good food. Naturally, MNB loves to eat out. From 5 Star restaurants (on the cheap during restaurant week) to local Mom & Pops, if you cook it, Ms. New Beauty will come. She also loves eating out with friends and of course, tasting food from their plates. What never ceases to amaze MNB is some of her friends funny eating habits. Like one fabulous lawyer friend of hers who always wants to try something that the restaurant does not specialize in. She'll order Moet at a small town pub or even cheesecake from a greasy Thai joint. (In the latter instance, said cheesecake proved to be of the frozen Sara Lee variety and came to the table completely melted as the waiter had put it in the microwave to defrost). Ms. New Beauty has another close friend, we'll call her D, who is mo...

Chocolate & Raspberry Pudding Parfait
2008-03-01 17:24:00 When trying to come up with a dessert to go with fried chicken, mashed potatoes and gravy, plus accompanying sides, there is really no need to get fancy. I wanted to have something sweet and something chocolate (as per my guest's request), and as I had one successful go at an easy vanilla pudding recipe earlier in the week, I thought I'd have a go at the chocolate version and dress it up a little for a little dinner party that I was hosting. The result was a glass full of rich layers, silky chocolate pudding, billowing vanilla-specked whipped cream, and a sweet-tart raspberry sauce. The glass may have made it look fancy, but the ingredients were simple and combination worthy of finger-licking.Chocolate Pudding 1¼ cups (300 ml) whole milk1¼ cups (300 ml) whipping cream½ cup (100 gr) sugar¼ tsp salt¼ tsp vanilla extract 3 tbsp cornstarch2 oz (57 gr) bittersweet chocolate, chopped 2 tbsp unsalted butter, softened Combine 1 cup each of whole milk and...

Taste & Create VI - Chocolate Tofu Pudding!
2008-02-24 07:53:00 This whole idea of trying out recipes from fellow bloggers is really fun - I've been indulging in this a lot more lately, sometimes trying to follow the recipe as closely as possible, other times I add my twist - as is what I often do with most recipes :) Either way, it is always really exciting to try something suggested by a fellow blogger, see how it turns out and be able to talk about our successes and misadventures. So, when Chris suggested that I should check out Taste & Create started by Nicole, I was intrigued. This event basically pairs up food bloggers who proceed to try out a recipe (any recipe) from each other's blogs. The first time I checked out the list of bloggers who were interested in trying this out, I realized there were *tons* of folks out there who I had never visited. Obviously, we all reach a saturation point in terms of how many blogs we can check out, how many posts we can read, how many comments we can submit, even how many recipes we can try out! But...
Pudding is a Virtue
2008-02-22 05:19:00  Both our dogs contain a generous sprinkling of Border Collie, a breed known for its patience. As a working breed, BCs were meant to guard sheep all day; and since sheep are not exactly what you’d call wild and crazy guys, the BCs must be willing to sit still for a very long time. Moreover, they exhibit what’s known as the ”Border Collie Stare”–that steely gaze that bores right through you  and makes even the most obstreperous mutton acquiesce to their wishes. I’ve been the object of that stare, more times than I can tell you. You see, the house we live in is an ”open concept” design, so the living room opens on to the kitchen, which opens on to the rest of the house.  After many hours of sweat (mine) and a lot of practise (theirs), I’ve trained The Girls to ”stay out of the kitchen” on command. Basically, this means they are not allowed to put paws to tile (but wood or carpet–the floo...
Goat Milk Chocolate Pudding - or regular milk will do!
2008-02-20 14:45:00 My oldest is still home sick today but at least she is well enough for me to drag her to the Farmer's Market today!I promised you the Goat Milk Chocolate Pudding - so here it is. I took the recipe from SmittenKitchen and I am so glad that I did!The only thing that I did differently was using whole goat milk in it! T. thinks of pudding as medicine (his comfort food) so he really loved it! This recipe was soooo easy to make so I tried to make a vanilla pudding yesterday for my little sickie and it didn't turn out so good and was way more work! I would stick with this one if I were you!Another satisfied customer!Silky Chocolate PuddingAdapted from John Scharffenberger, via Wednesday Chef Serves 6 1/4 cup cornstarch1/2 cup sugar1/8 teaspoon salt3 cups whole milk (I used whole goat milk)6 ounces 62% semisweet chocolate, coarsely chopped (I used good quality semisweet chocolate chips; use 70% bittersweet if you want more of a dark chocolate kick) (I used some leftover chocolate from...

Bamboo Honey Vanilla Pudding (Japanese Knotweed)
2008-02-08 22:49:00 I have been making this pudding, or something like it, almost every week for the last three months. Bamboo honey is made from Japanese knotweed, or Polygonum cuspidatum which looks like bamboo, but is unrelated. The knotweeds are related to buckwheat, and the honey, like buckwheat honey, is dark, spicy, and rich in life-giving antioxidants. Bamboo honey is milder and fruitier than buckwheat honey, and perfectly suited for any desserts made with milk, cream, or yogurt. The Yiddish word for knotweed is ????? (grike), so Japanese knotweed is probably ??????????? ????? (yapanishe grike). The word in Chinese is ?? H?zhàng. Ulrike will be rounding up other herbal gifts of the weekend at Kuchenlatein. Honey Vanilla Pudding 6 cups milk 1 fat bourbon vanilla bean 1 ½ cups bamboo honey, or other honey, or agave pinch salt 2 1/2 ounces cornstarch (1/2 cup, lightly spooned) 2 eggs 2 ounces (1/2 stick) butter 1 teaspoon vanilla-scented bourbon, or vanilla, or bourbon, or n...

Hasty Pudding Theatricals is the nation’s oldest theater company, which annually puts on a spectacular spring production starring Harvard men in drag. For people asking about Paris, she received a Harvard Lampoon award. I am convinced that Paris thought she was getting the Woman ...

Sticky Toffee Pudding
2008-02-06 19:51:00 My friend Nirina just tasted her first sticky toffee pudding (STP) today. She has been here for quite sometimes, but has not been properly introduced to the Scottish deserts. No, wait.Just like Malaysia and Indonesia, Scotland and England have never ending debates about everything too. And sticky toffee pudding, a moist sponge cake made with dates and covered with toffee or caramel sauce, is one of the things that both sides claim as theirs.clipped from en.wikipedia.orgOriginsThe dessert's origins are considered a "mystery" according to the gastronomic journal, Saveur; however, the dominant story is that Francis Coulson developed and served this dessert at his Sharrow Bay Country House Hotelin the Lake District in 1960.Coulson's former protégé and chef, Juan Martin, has said that according to Coulson, the original concept for the dessert was derived from the South of England. Indeed this statement was backed up when the hotel researched the origins of sticky toffee pudding before t...

World Nutella Day 2008: Nutella-Date Pudding Cupcakes
2008-02-04 02:29:00 The reason we are all gathered here today ? at least in my corner of the universe, is because February 5th is World Nutella Day 2008. This is the day that my buddies, American expats in Italy, Sara, Michelle and Shelley decided we should all sit back, relax and enjoy the Nutella. This is a day to celebrate this delicious chocolate-hazelnut spread that puts smiles on faces young and old all across the world. My first encounter with Nutella was when I lived in Norway, in 1994. Bread is a big thing in Norwegian cuisine. You eat it for breakfast and lunch with a wide variety of meats cheeses and spreads. My favorite was always Brunost (?Brown Cheese?) ? I had it for breakfast and lunch, every single day. Of course, I was a foodie back then, too, I just didn’t know it yet, so I was addicted to going to the grocery stores there and seeing what kinds of products I could find that were unique to Norway. When I came across Nutella and realized you could eat it on toast for breakfast, ...
More Pudding, Please
2008-02-03 00:10:00 'Make a remark,' said the Red Queen; 'it's ridiculous to leave all the conversation to the pudding!' --Lewis Carrol, from Alice's Adventures in WonderlandFebruary is finally here, and I?m glad of it.In February, you do not need to charm or entertain, nor announce resolutions. All you have to do is rise in the morning, address the tasks at hand, and be. The sheer relief of February quiet is enough to make anyone turn to pudding. And turn to pudding is exactly what I did today: it was rice pudding today, but I?m open to most every variety, from bread pudding, to stirred pudding, to sticky pudding, and even ready-made cups of pudding when time is short.Pudding is a simple luxury. Unlike foie gras with blackberry gastrique or egg and basil roulade with yellow tomato coulis, you do not need to ?understand? pudding. You just eat it. When you are filled with doubt, the thing about pudding is that you can count on it. It has no nasty surprises, no guesswork. Pudding cheers, fills, comf...
Comfort from the Cold: Spiced Brown Basmati Rice Pudding
2008-02-02 04:11:00 Somewhere around the first week of December (either that or the 3rd day there’s snow on the ground, whichever comes first), I decide I’ve had enough of winter. Bah! Who needs lawns covered in a glistening, pristine blanket of white? Who needs billowy undulations of snow-covered hills along the roadside? Who needs that dainty spray of unique, lacy flakes as they gently descend from the heavens? Not I!   Despite all its awe-inspiring beauty, winter also brings with it a whole host of evils: treacherous patches of “black ice” concealed beneath a thin veneer of fresh white powder; knee-high snowdrifts that are agony to traverse in my ponderous, barely-warm-enough galoshes; wooly scarves pulled high over the nose (must protect my delicate proboscis from all that cold air whipping around, after all), causing impaired vision as my glasses fog up from the vapour of my heaving breath; and The Ordeal of the Walk, with its multiple layers of clothin...
