Indian Red Rice Pulao
2008-04-29 15:39:00 Sometimes I feel like mentally flogging myself for not going with my gut instinct when it first urges me to do something, and on occasion, it really comes back to slap me good. Like seeing some ultra-bargain in any random store and thinking ‘Wow, I should get some of that.’ - insert any item into ...

BIRYANI/YAKHNI PULAO...Mingle with a 'One Dish Dinner'
2008-02-19 13:24:00 "In the childhood memories of every good cook, there's a large kitchen, a warm stove, a simmering pot and a mom."Barbara Costikyan LAMB BIRYANI/YAKHNI PULAODecided to make a biryani/yakni pulao for lunch last weekend. Have been procrastinating making it for long as it is just a bit involved. Then I thought, might as well, & went off to dust the cob-webs off my biryani utensil which hadn't seen light of day for a while. Life seems to be all about eating & drinking...so I got on with tying my bouquet garni!! In a strange quirk of fate, after eating the Mughlai dish for lunch, we unexpectedly got invited to see a special screening of the film 'Jodhaa Akbar' that night. The film was a tad disappointing for a period film. It's based on a 16th century love story about a marriage of alliance that gave birth to true love between a great Mughal emperor, Akbar, and a Rajput princess. The high point of the film was beautiful glimpses of extensive shooting done within the palaces o...
PRICELESS PULAO
2008-01-08 15:45:00 The warm mewa pulao is perfect to beat the winter chill. There are pulaos and pulaos. To begin with, there are the non-vegetarian pulaos that can be prepared with mutton or chicken or even fish and prawn. Then there are the vegetarian delicacies that go by many names - zeera, peas or navaratan (that translates as a mixed seasonal vegetable pilaf.) The most exotic and expensive, of course, is the gucchhi pulao prepared with aromatic dried morels from the Vale of Kashmir. There are practitioners of the culinary craft who try to palm off vegetarian pulao as biryani substituting kathal for flesh, fowl or fish. To be honest, one has long been pining for something different. Pulao yes, but the staple fare that has jaded the palate, certainly no. Spare us, the makhana-shakhana, khumbh and kabuli channa and please let us not confuse the tahri or khichdi with the pulao. There are also sweet pulaos like zarda and muzaffars, incorporating saffron and fruits. We were delighted when recently ou...

Palak(Spinach) and Corn Pulao
2008-01-01 19:28:00 Christmas and New Year have been heavy for me, and I mean "literally heavy", as I feel having gained a pound or two, so it's time to shift gears and turn towards some veggies and grains, giving a hiatus to the loaded desserts that I have so enjoyed making and consuming:) But with the sweet tooth that I have, there's not much time before I get back to my baking, so while I still have the enthusiasm and dedication to eat "a bit healthier and low-calorie diet", I'm going to grab on the opportunity! And when I think healthy, spinach is always at the top of my list. So, rather than the traditional Palak Paneer, I thought I'd use spinach puree in my Rice to make this delcious and pretty-looking Palak and Corn Pulao. It's basically similar to Fried rice, but just with indian flavors instead of asian spices. And to get that balance of crunch with a bit of sweetness, I added the corn kernels. It was very wholesome, and you could add a whole lot of other veggies like brocolli or potatoes...

Jhinge Ka Pulao (Spicy Prawns and Rice)
2007-12-31 19:24:00 Since discovering the wealth of recipes to be found on the web, especially those published on many of the food blogs I now regularly read, I find that I hardly ever feel to the need to seek out a recipe book. That said, I do like to occasionally flick through one of my few recipe books at the weekend to get ideas for meals. This Christmas, I received another two books, both with good flick-through properties and today, I decided to give one of the recipes I found a try.My sister got me The Indian Kitchen by Monisha Bharadwaj, a really interesting book, with more emphasis on the ingredients, rather than the recipes themselves. Definitely a nice format for a book of this kind, and with lots of nice photos and illustrations too. There’s more than one ingredient mentioned that I’d never even heard of, and so I decided to make one of the easiest recipes, for which I had all the required spices already, just to be on the safe side. I also added some peas which weren’t in the ori...

Pea and Mixed Vegetable Pulao - picking out the peas
2007-01-31 04:50:00 My children love peas, and adding them to a rice dish makes the food go much quicker. The deal, is that each spoonful should have at least one pea and it is a great source of excitement if they get more. Green Pulao
2007-01-28 20:40:01 As my blogger buddy Pooja said, winter in green. So I thought why I don?t try cooking some green dish. After scratching my head and also my hubby?s head I thought why I don?t try some green rice for our lunch box. So I rushed into my kitchen and opened my treasure chest which happens to be my fridge and started taking out whatever green veggies available there. Well, I had Coriander leaves, Mint leaves, Green Chillies, Dill, Green Peas and Broccoli? Wait a second, broccoli? Well, why not? If we can make cauliflower rice then why not with broccoli? So with this thought in mind and backing up from my sweetheart I went into a mission of creating my own version of ?Green Pulao?. Green PulaoIngredients:2 cups of Rice1 medium Onion, roughly chopped˝ cup Green Peas1 medium Broccoli, cut into big florets including stem˝ tbsp Jeera/Cumin Seeds1 inch Cinnamon3-4 Cloves2-3 Green Cardamom2 Bay Leaves˝ tbsp ginger Paste˝ tbsp garlic Paste˝ tbsp Ground Pepper1 tbsp GheeGrind to smooth paste:1 sm...
