I have been looking forward to baking this for some time and was very excited this past weekend when I finally made time for it. I am a big fan of pies and cakes. Also, I am always intrigued by vegan food and the many things you can do with tofu. I have made tofu cheesecakes in the past (Blueberry tofu cheesecake and Blackberry vegan tofu cheesecake) and those turned out totally delightful. The ingredient tofu is a great substitute for milk and eggs. I imagined tofu pumpkin pie would just be as amazing!I ended up making one 9 inch pumpkin pie and 6 mini ones. I used Keebler ReadyCrust graham cracker piecrust. I scaled up the ingredients a little. I only found 29 oz size cans of pumpkin puree and decided use it all up.The tofu pumpkin pies came out amazing! The spices made the pie very flavorful. I baked the muffins before we left. In Germany we don't have cans of unsweetened pumpkin puree. I bought a tiny Hokkaido pumpkin about 500 grams, cooked it for about 15 minutes and pureed it with a blender. It brings a nice golden-orange colour to the muffins. They were delicious and easy to prepare. I used lightly toasted pumpkin seeds for topping. Take a look:The little guys are sugar pumpkins. These are the ones you want to get the best pies. They are more dense, less stringy and smoother than larger pumpkins. It's very simple to do. Cut the pumpkins in half and remove the seeds and extra "gunk". Once the gunk is gone, set them, cut side down, on a parchment lined tray and pop into the oven at 350 degrees F for 45 minutes. Those really little guys were for the Pecan Pies in Pumpkin Shells that I did for Short Order Mom. The softened pumpkins. Once they are cool enough to handle, start scooping the meat out with a spoon. Make sure to get it all! Mere shells of their former selves. Pulp ready for the blender. Just pop it into the blender and puree until smooth. Perfect Pumpkin Puree!

I was walking with Rufo (my 16 years old dog) and taking pictures for my works. I couldn't resist to snap this one... in fact I took a lot of pictures that day, while Rufo was laying down. What I really like about this scene was the light. The afternoon was so bright that no matter what color you were looking at it would turn absolute white because of the strong light. This was served on the day after the wedding where just the family members from both the bride's and the groom's side gathered for a final farewell. And what a meal it was...the taste of this rice preparation lingered on and on...well after we boarded the train to come back home.
