Shrimp Salad with Tomato Raita Dressing
2008-03-01 18:09:00
I have always enjoyed a small bowl of raita with my fiery hot curries. I loved the way the yoghurt cooled the heat in my throat and kept me ready for another bite.Yet in summer, I felt like indulging myself in such mind-blowing ritual every night was definitely not good for my shapes. So I figured out another way of enjoying the sensational yoghurt mix - as a dressing to a vegetable salad. There are several ways of making raita. For a basic one, whisk some yoghurt with salt, pepper and cumin powder. Should you find it too sour, add a bit sugar. Then add chopped cilantro and sprinkle with paprika powder or chilli. Raitas can be further combined with chopped veggies, such as boiled potato, tomato, onion, grilled eggplant, blanched spinach with raisins or dates. My favorite one is:TOMATO RAITA1 tomato, choppedsalt, pepper1/4 tsp cumin powder1/4 onion1 tsp fresh coriander leaveswalnuts, choppedsweet paprika powder (try the smoked kind)chilli powder Whisk the yoghurt with...

Lower Carb Chicken Tikka Masala with Raita
2007-09-29 12:41:00
My Husband loves curries but he doesn't like meals which are high in carbohydrates, as it doesn't make him feel the best after. I have experimented with a few different ways of making curries that a lower in carbs than traditional methods. Of course there are some curries which are very yummy, that you have to pair with rice.I am posting this recipe below for tikka Marsala on bean sprouts but bean sprouts are also ok with Tandoori and some Thai curries. You can also do curries by themselves in a bowl and don't pair with anything, whether your doing a plain curry by itself or with bean sprouts it will not not soak up the juice as much as rice. The great thing about doing it this way, is you tend not to feel so heavy afterwards. Also you can make rice for the people that want it, in my family my son love's his rice as it fills him up, so it is quite easy to throw some basmati rice on for him. If you don't want to make this a low carb dish you can make the same recipe and just pai...
Tomato Raita Hors D'oeuvres
2007-09-27 16:45:00
I was always intrigued by the old ads for Monaco biscuits with their nicely decorated toppings. I, on the other hand, dipped my Monacos in my tea till my cup became a soggy, salty, inedible mess. I wasn't aware that Monaco was a salty cracker and didn't always have to be consumed with one's tea. (Of course, when you drink your tea on a two-wheeler parked under a tree, you dunk whatever is available in your tea.) In the ads the Monacos were usually decorated with strange, colourful toppings, although I had never really seen one pass by on a tray of hors d'oeuvres at a party. Not so long ago, I happened to be on the Parle Monaco website where they featured Monaco wallpapers for your computer. Why? I had to take a peek and I must share this ad / wallpaper with everyone. And as a professional in advertising I couldn't help but laugh at it. Considering the fact that no one outside of India would've even heard of Monaco, this ad must be for Indian audiences. It features a couple tha...
Makkai Parathas (Sweet Corn Parathas) with Raita
2007-09-19 19:13:00
The season of sweet corn is still on in California, and 2 days ago, when I saw a farmer picking fresh corn from a field in front of our house, I decided I had to make something with corn this week. And one of my friends in Australia, Janki, had also requested me to post some corn recipes as she loves them. Well, there might be very few people who don't like corn! So here's the Makai (Maize flour) Paratha recipe. It is similar to corn tortillas, but it tastes way better with all the spices and sweet corn kernel added to it. Enjoy it for dinner and for breakfast the next day! And with corn, its a whole and hearty meal too!!Ingredients2 cups corn meal flour(makkai atta)1 cup wheat flour5 tbsp oil1 cup sweet corn kernels1 tbsp ginger-garlic paste2-3 green chillies - chopped1/4th cup cilantro - choppedspices - garam masala, red chilli powder, turmeric powder, dhana-jeeru - to tastesalt - to taste2 tsp powdered sugar2 tsp lemon juice2 tbsp yoghurtHot water to knead the flourSalted Butte...

Mango Rice with Cucumber-Mint Raita
2007-02-15 08:47:01
Mango? I can say without any hitch or hesitation that mango is my favourite fruit. It?s not just because of its colour and taste. It is one fruit which is connected to my happy childhood memories. My childhood days I have spent almost every summer vacation in my grandma?s home. Every year me and my sister and our cousins would eagerly wait for our holidays and keep our bags ready before our exams. Right next day after our exams our uncle would come and take us to grandma?s place. We all cousins would gather there and play day in and day out. When our elders use to take siesta in hot afternoon we would go to our mango groves and collect basketful of mangoes for my grandma who would cook delicious items using them. The choices are numerous: Pickles, Mambla (made using mango pulp and sun dried), Gojju, Sasame, Papadam, Sambar, Rasam, Raita etc. It?s a never ending list of delicious mango delicacies. Mango Rice with Cucumber-Mint RaitaToday I am posting the recipe of Mango rice which h...

This is very simple, and you could eat it with any rice dish or with bread, naan etc.Ingredients:1 cup yogurt1 potato (1/2 potato if the size is big)1/4 cup milkBoil Potato. I usually do this in microwave, takes 2-3 mins.Allow the potato to cool, peel, and cut it into small pieces. In a bowl, take yogurt, put milk in it and beat it with a whisk to get smooth consistency.Add potatoes to it.Add salt, pepper according to taste. For garnishing use little bit of red chili powder and coriander leaves. This is healthy too since it contains yogurt and fresh ingredients. That's it. Quick, easy, delicious and healthy.
The best raita you'll ever make

A raita is a liquid salad - yogurt, cucumber, some spices, even the Greeks make it. But a memorable raita needs precise balance of the right ingredients.

Three mice & Radish Raita
2006-10-18 03:10:00
Three blind mice, three blind miceSee how they run, see how they run...Noone would mind these mice scampering around in the kitchen now would they?! Unlike the farmer's wife in the rhyme I didn't just cut off their tails, I used them to make a raita :-)The radish is generally used for a raita and the leaves to prepare a tambli similar to this one. I combined the two recipes today to make a sort of rai-tambli!KOSHIMBIR (Radish Raita)1 bunch of red radish, about 12-15 (or 1 white radish)1 cup yogurt1/2 tsp mustard seeds5-6 curry leaves2 tbsp roasted peanuts (optional)Grind finely with a little water -1-2 tbsp grated coconut1-2 green chillies1" piece of gingerWash radish and cut into small pieces. Take a handful of the leaves (use good ones), wash well and chop finely.Add salt then steam cook both in a saucepan. The radish is done when it changes color.Whisk yogurt with the coconut-ginger paste. Season to taste. Heat oil in a tadka ladle, add mustard seeds and curry leaves. Saute for...
