It has become more than just desserts since I come every week with stories out the wazoo, so I hope you will allow me to make this post about one person whom I lost and love and celebrate his memory. One person whose passing changed me radically in every thing I do and every way I see things. We choose lamb chops. Most lamb is farmed in Australia or New Zealand, and while this doesn't fit into the local profile I am still an omnivore and need meat. Lamb is an all natural meat. The New Zealand lamb that we ate last night follows all of the other restrictions that I have. The animals are raised in pasture. Eating only the grass that is grown. They practice sustainable farming and healthy slaughter. The recipe is from Gourmet magazine and is super easy to put together.The recipe calls for a package of puff pastry. That?s right, from the store but you could make yours if you like. And I had this extra-special affection for swiss rolls, those colorful, spiral cakes that tasted like heaven, and even with the minimal frosting and decoration, they always attracted the attention of dessert-lovers, including me!! I harbor this fascination even today, and the first thing I notice in a pastry shop has to be a swiss roll cake (my hubby can vouch for it:)) Swiss roll is a type of sponge cake baked in a very shallow rectangular baking tray, and then filled, rolled up, and served in circular slices. So did these beauties originate from Swiss?? Not really; although the origins of this cake are unclear, wikipedia says that these are certainly not widely eaten in Switzerland, where they are known as "Biscuitrolle" or "Roulade" . Baked Apples with Raspberry Fluff recipe
2007-12-25 01:24:00 6 large baking apples *2/3 cup seedless black or red raspberry jam1 cup Marshmallow Creme1/3 cup chopped nuts * Rome Beauty, York Imperial, Rhode island Greening, Baldwin, Newton Pippin Core appless almost through to blossom ends. Peel about 1/3 of the way down from stem ends. Place in baking pan, peeled side up. Add enough boiling water to cover bottom of pan. Cover pan. Bake apples at 350 degrees F for 20 minutes. Remove cover and spread half the jam over peeled portion of the appless. Bake 15 to 30 minutes longer, or until apples are easily pierced with a fork. Remove from pan and cool. Combine remaining jam, Marshmallow Creme and nuts. Use to top baked apples just before serving.
