1 lb. fresh broccoli (try to get stalks with as much floret head as possible. Less stem is better!)2 c. low sodium organic vegetable broth (Pacific brand is gluten, dairy free, and vegan)1 to 1 1/2 c. organic lite coconut milk1 c. water1/4" chunk fresh ginger root7 cloves fresh garlic5 t. nutritional yeast2 T. extra virgin olive oilSeasonings:turmericfreshly ground cuminrosemary, to tastesea salt and pepper1/2 fresh lime, peeledOptional:2 T. organic hemp protein powderOnce all of your ingredients are in order, start by washing your fresh broccoli and chopping off a few of the florets to reserve for later. These past few months, Jon and I have been quite busy. From plodding through our degree programs and planning our wedding, finding a time to sit down, relax, and write to you has been a blessing seldom received. Rest assured, we've still been cooking and have plenty recipes stored away! Lately, we've focused on the often-requested, though rarely shared, weekend meals to last the week. Recipes for roasted-quinoa porridge, David's coconut guacamole, roasted tomato hummus, and cinnamon flax butter adorn our more recent list of recipes yet-to-be-posted. The Omega-3 packed cinnamon flax butter was delicious on our Sunrise Cinnamon Raisin Biscuits. We traded a batch of our roasted tomato hummus for two of Pete's Kombucha SCOBY's, for which Pete said:That was very likely the best hummus I've ever tasted. These cookies were inspired by Karina's recent rehash of an old sunflower seed cookie recipe that looked fantastic. I thought I'd do cashew instead here, but the yummy results still seem to hold.1 c. unsalted raw cashews1/2 c. mixed nuts1/4 c. sunflower seeds1/4 c. sesame seeds3 small dates1/4 c. shredded coconut1 organic carrot, shredded1 t. cinnamon1 t. natural brown sugar (optional)Add the nuts to the Vita-Mix and blend them on high for about 90 seconds until they form a thick paste. Add everything else and blend again on high for about 1 1/2 minutes or until well mixed. While blending, press the ingredients to the bottom of the blender using your Vita-Mix damper.Coat a cookie sheet with non-stick spray and preheat your oven to 350 degrees. I used a spatula to remove the nut batter from the Vita-Mix and then scooped the batter into a large mouth bowl. Form cookie patties in your hand and drop them onto the cookie sheet. Bake the cookies at 350 for 15-17 minutes. Let cool.

1/4 c. frozen unsweetened blueberries1 1/2 c. water1/2 c. coconut milk or almond milk2 T. hemp protein powderdash cinnamonlight sprinkle spirulina powder* (optional)optional topping: rice bran with agave nectarCombine everything in the Vitamix or blender and mix on high until smooth. You can omit the spirulina if you wish, but the algae (sounds gross, I know) has amazing health benefits and blends right into the shake- no bad taste. I topped my shake with the rice bran, but you can just add it right in for extra fiber and protein.

2 large organic carrots1-2 bananas (I used one)4-5 chunks frozen unsweetened mango or pineapple1/4 c. fresh red cabbage1 whole fresh pair, ripe4-5 ice cubes2/3 c. water or unsweetened fruit juiceWash veggies and throw everything into the Vitamix or your blender. Add water, ice cubes, and fruit juice if you chose to use it. Blend on high for 1-2 minutes or until smooth. I did not add any sweetener since the ripe pair and banana makes the shake fairly sweet (and you can always add honey or more fruit juice afterwards, but you can't un-add it!)

Ah ha! My first excuse to use my pepper mill :) This is the high point to my recent depressing discovery that I may have a mild almond allergy (if you have been reading this for any amount of time then you know how much I adore almonds... sigh). Looks like some more allergy testing is in store..ergh. Anyways, I fooled myself into thinking I had slivered almonds on my salad by using dehydrated chopped garlic instead; it really has a nice crunch, which is part of what I wanted.2 c. organic lettuce (I used red leaf)1/2 pint or a few large handfuls sprouts2 T. organic hemp protein powder1 T. dehydrated chopped garlic (optional)Seasonings:oreganofre-sh pepperdried basilDressing:1 T. balsamic vinegar2 T. extra virgin olive oilToss lettuce and sprouts in a large bowl. 5 organic carrots, washed1 can(15 oz) organic unsweetened coconut milk (or half coconut milk and half almond/rice/soy milk)1/2 c. low sodium organic gluten free vegetable broth (optional)Seasonings:1 T. graham masalafresh gingerfresh ground peppersea saltStir-In Options:natural raisinschopped and steamed (or microwaved) collards or kalesliced carrotsGarnish:cilantro, chopped (or parsley)coconutFlax CrispsWash and dry carrots. Break or chop in half and add to Vitamix (or your blender). Add the coconut milk, vegetable broth, and spices. Blend on HIGH for 6-7 minutes or until mixture is steaming. Serve immediately with cilantro (or parsley) and flax crisps.

You can omit the chicken for a vegetarian/vegan option.1 cooked chicken breast (or 2 chicken tenders), sliced1/2 organic carrot, sliced1 red bell pepper, choppedhandful chopped fresh red cabbagehandful each: fresh chopped collards & green cabbage1 slice onion, chopped1 jalapeno, sliced3 stalks organic celery, choppedSeasonings:sea salt and pepperoreganoitalian seasoningcilantroDressing:2 T Braggs liquid aminos1 T. San-J Low Sodium Wheat Free TamariWash and pat-dry fresh veggies. Slice and/or chop veggies with the saladmaster or by hand. Add everything to a large bowl and season with sea salt and pepper and spices. Slice chicken and add on top of salad if desired. Garnish with cilantro. Serve cold with or without dressing.

Garnish with slices of fresh pear (with skin) sprinkled with rice bran, ginger powder, cinnamon, and nutmeg. This is a great quick, healthy breakfast with supplies the ideal balance of Omega 3:6 fats, it is very high fiber and low carb, and gives good quality protein.
