I have been stuck trying to write this post for a couple of days. I am torn folks....I feel like a bad blogger. I don't want to bore you with book details but it explains a lot of my postings on this site. I have to admit, I use this plastic containers for years, a shelf in the cellar is full of this stuff for freezing and refrigerating. The stuff is great, but I am afraid to buy more, because of my husband's behavior. T***ware and men don't agree. But I had to have the ravioli maker. As I promised, I didn't go to a party. I ordered it through my work-mate. I had some some pasta dough in the fridge from the lasagne. When I came home, I went straight into the kitchen, mixed together ricotta cheese parmesan cheese, egg yolks and basil pesto and rolled out the pasta. Business first...Today's the Last Day!April 29th - it was this day, seven years ago, at 9:23 AM, that I called my sister from the parking lot of my doctor's office. I had just been told that the golf ball sized lump sticking out of my neck looking like an enormous Adam's apple was in fact Thyroid cancer. While a blur, I won't forget asking my sister, an RN at the time, to call my mom. to tell her the news. My diagnosis date is the deadline (technically) for Cooking to Combat Cancer! I am pleased to report that I received a great blast of emails yesterday to put with the ones that have been arriving throughout and am getting ready to put together the round up. Yes, I know....I should have been compiling the round up as I received the entries, but...I didn't. En helaas, ook zoals vaker, had ik geen idee meer wat het ook al weer was, laat staan dat ik het recept terug zou kunnen vinden. Ik vergeet de laatste tijd helemaal veel dingen, raak dingen kwijt en ben zo ongeorganiseerd. En dat is eigenlijk niets voor mij, omdat ik altijd juist erg gestructureerd was en alles onder controle had. Slowly bring milk, cream, and salt to a rolling boil in a 6-quart heavy pot over moderate heat, stirring occasionally to prevent scorching. Add lemon juice, then reduce heat to low and simmer, stirring constantly, until the mixture curdles, about 2 minutes. Pour the mixture into the lined sieve and let it drain 1 hour. After discarding the liquid, chill the ricotta, covered; it will keep in the refrigerator 2 days.

I recently made this dairy-free ricotta cheese and used it in a vegan lasagna. I also plan to use it in manicotti and stuffed jumbo shells. It could also be used as a base for dairy-free dips and spreads. 14 oz. box medium firm or firm tofu 2 cloves garlic, finely chopped or 1 tsp garlic powder 1/4 c. olive oil 1 tsp basil 1 tsp oregano 1 tsp parsley 1 tsp salt (or to taste) dash of black pepper Mash tofu. Add all other ingredients. Continue mashing until it has a ricotta-like texture. I put the espresso pot on the stove and quickly stir up some oats and jump into the shower. When I come back, the kitchen has warmed up considerably and I can start my day. But endless days of porridge can be a bit of a drag and yesterday morning I decided to put a little something special into a mid-week breakfast. I looked back to a couple of earlier breakfast recipes (cornmeal pancakes and orange ricotta pancakes) and decided to do a little mash-up. Despite the fact that my fridge is full of apples, there isn't one apple present in today's recipe. (Don't you love how I snuck in an apple into my baked pasta recipe yesterday? Ha.) These pancakes are light and fluffy and have a nice tang from the orange zest (although lemon zest could be subbed in too). Cornelius wasn't too sure about having pancakes with cheese - he obviously never grew up with my dad's amazing cottage cheese pancakes - but after the first bite he was converted.This recipe makes for a pretty thick but delicate batter. Be careful not to add too much batter to the pan and make sure you gently smooth over the tops. The key is to get a nice crunchy edge which adds a nice contrast to the pillowy soft interiors.
