The second dish we prepared for the dinner party was a roast pumpkin soup. I got this recipe from Central Foodhall (Bangkok supermarket) magazine. It was our first attempt at the recipe and were very pleased with the result. Roast Pumpkin SoupPumpkin, peeled and diced 1 kgGarlic cloves, unpeeled 6Carrots, peeled and chopped 1Celery, chopped 2 sticksLarge onion, chopped 1Butter 1gGround cumin 1 tspVegetable/Chicken stock 4 cupsPre-heat oven to 180C. Roast the pumpkin, whole garlic cloves, carrot and celery on a lightly oiled tray for about 30 minutes, until the vegetables are soft, but not browned. In a large saucepan, fry the onion in butter until soft. Add the roasted vegetables, vegetable stock and cumin and slowly bring to a boil. Leave to simmer for around 30 minutes, remove from heat and allow to cool. Puree the soup in a blender until liquidised. I really love chicken cooked with herbs dishes. They just taste and smell so nice not to mentioned good for general health.This is one of the herbal dish I cook rather often. I used to steam it before I have an oven. This time I did it a little different. I roast it! I used the way I did the Roast Chicken with Garlic to make this. It's still taste the same except now we have crispy skin. Okay, it's a bit burned here. :PThis chicken meat is soft, moist and filled with the sweetness of herbs! Serves 2-32 tablespoons (30 ml) olive oil1.5 lb (700 g) pot roast such as chuck1 medium onion, chopped3 tablespoons (45 ml) vinegar1 can tomato paste1 1/2 cups (375 ml) water 16-24 very small pearl onions, peeled1 clove garlic, unpeeledA potpourri bag of 2 bay leaves, 8 allspice and1 teaspoon (5 ml) cumin seed1/4 teaspoon (1 ml) sugarSalt and pepper, to taste Directions:Heat the oil in the pressure cooker until very hot. Add the pot roast and brown well on all sides. Transfer to the steamer basket. Add the onion to the pressure cooker and sauté until wilted. Stir in the vinegar, tomato paste, water, salt and pepper. With all the publicity that Free Range Chickens are getting at the moment due to Hugh Fearnley-Whittingstall's Chicken Out campaign, I really fancied a Roast Chicken myself this weekend. I wasn't planning on cooking for anyone except myself, but I wanted the leftover chicken for other recipes, and wanted the carcass to make the stock, too. However, I was slightly upset to find that none of the chickens in my local Waitrose came with Giblets. This was definitely mildly annoying as I wanted to use the Giblets to make the stock for the gravy at the very least.Still, it was a nice Chicken which I managed to cook just right so that the breast was still nice and moist without being undercooked at all. I think it's definitely worthwhile getting a chicken larger than you need so that there are enough leftovers for another meal or two as it's definitely cheaper than buying in smaller pieces of Free Range Chicken.With or without Hugh's Chicken Run, I'd been put off mass produced, ...

nevicata/snow fallAtlanta received a bit of snow on Wednesday evening. Unfortunately, it didn't hang around, so we had to work on Thursday (a bit of a bummer). Tonight I bring you the tale of the plastic knife and the pot roast, in which we will attempt to answer the question: Will the little red plastic knife be able to cut up vegetables for a pot roast or will it have to call on the reinforcement knife lurking in the background? The bright red beauty is a Zyliss salad knife - theory being that if you cut your salad with plastic/nylon instead of metal the lettuce won't oxidize and turn icky brown. I tear lettuce for salad by hand so that purpose was of little interest to me, but I have been looking for kid-safe tools and wondered if it would work to cut veggies but not fingers.  Setting my expectations at some reasonable level, I decided that I would try something soft to start with.
