This week this blog hosts the 148th edition of Weekend Herb Blogging. This week school has started and we all have to get back to our regular schedule. That means I have to cook a healthy lunch for the schoolboys. As always we have initial difficulties the first week and yesterday we had Red Pepper and Rosemary Lamb with Pasta I didn't read the recipe accurate enough and I had to do it on the fly. Glad, I have rosemary in my garden, its flavour fits perfectly to lamb mince. Rosemary means in the language of flowers remembrance and love. Greek students believed it improved the memory, and so they wore it in their hair when studying for exams. In France, during the Middle Ages, it was combined with juniper and burned in bunches in hospitals to kill bacteria. In my garden rosemary holds the fort against the slugs as I mentioned before. The other day, I did BBQ Ribs for dinner and I made potatoes to go with it. The ribs were flavourful and it goes really well with these potatoes.Seriously, I could eat the potatoes alone. Here is a recipe I made the other night, from a zaar member. It was not for a swap I just liked the sound of it and it was very good, both myself and my hubby enjoyed this. I made mine with racks of lamb as this is what I had on hand, I cooked them in the oven as a rack for about 25 min's at 190c. Ingredients1 cup orange juice1/2 cup dry white wine1/2 cup maple flavored syrup2 teaspoons chopped fresh rosemary1/2 teaspoon salt1/2 teaspoon freshly ground black pepper4 skinless, boneless chicken breast halves2 tablespoons butter2 tablespoons olive oilMethod1. Bring orange juice and wine to a boil in a small saucepan. Reduce heat slightly, but keep high enough to continue a low boil for 5 minutes, stirring occasionally. semi boneless leg of lab (ours was about 2.6 lbs- try to get well treated, grass fed and local roasts when possible)Seasonings:dried rosemarycayenne pepperhot curry powdercrushed red pepperYou'll need special equipment for this one, of course! I used our baby George Foreman rotisserie which fits a medium to large sized chicken (~6 lbs max). The instructions here are easy: Wash off the raw lamb and mount it on the rotisserie bar. Secure the meat with the rotisserie skewers and mount the assembly into the cooker, as shown below.I mixed all of the seasonings in a plastic bowl and dry rubbed the mixture onto the meat. The fat in the lamb kept the meat moist as the roast rotated. Cook the roast depending on its weight. Our 2.6 lb leg with bone cooked for about an hour. If you aren't sure about exact timing, then err on the side of less done. Charred lamb is never good :)I served this with my Grapefruit and Cranberry Glazed Green Beans and Molasses-Maple Pecan Carrots.

Ingredients2 tsp. fresh ground pepper1 Tbsp. kosher saltOne quarter cup fresh rosemary, chopped2 cloves garlic, mincedOne quarter cup olive oil1 5-pound leg of lambOne quarter cup red wine2 Tbsp. shallots, chopped2 cups chicken brothCombine pepper, salt, rosemary, garlic and olive oil and stir. Coat leg of lamb with mixture and marinate in the refrigerator for several hours or overnight. Preheat oven to 425 degrees. Place lamb on a wire rack with roasting pan underneath. Roast lamb for 15 minutes. Add wine to pan and roast another 15 minutes. Reduce heat to 350, add shallots to roasting pan and continue roasting, basting every 15 - 20 minutes until lamb is done to your liking. The lamb will take an hour or more to cook but should read at least 130 degrees on a meat thermometer for rare meat. Remove lamb from oven. Skim off fat from roasting pan, add chicken broth and stir. I just made this up so many ingredients are optional. Feel free to tweak it to be sweeter or saltier for whichever suits your taste better. Last Sunday, we had our neighbours over - Paul and Marylou. They brought over an usual bottle of wine, what was interesting was that she had wrapped the bottle of wine, with a sprig of fresh rosemary. Other than just being decorative, it smelt wonderful. I was wondering how I could use this.Over the week, I put together a simple chicken dish with some soy sauce, honey and balsamic and of course seasoned this with the rosemary. 2 c. cooked grits (or 1/2 c. dry grits, 2 c. water)1 T. olive oil or Smart Balance vegan butter1 T. coconut oil (or vegan butter), for frying1 medium organic apple2-3 slices onionSeasonings:2 T. rosemarydash sea salt1 T. cinnamonGarnish (Optional):Banana, slicedunsweetened jam or agave nectar (or honey)If you do not have pre-cooked grits, bring water and grits to a boil in a saucepan. Stir in vegan butter (or olive oil) and rosemary. Cover grits and simmer on low for 5 minutes. In a separate pan, melt coconut oil. Chop one medium organic apple and three slices onion (or so). Add chopped apple, cinnamon and onion to the pan and saute for 3 minutes or until the onions are soft. Top the cooked rosemary grits with the cinnamon apples and onions and serve. You may wish to add a dash of coarse sea salt before serving.
