Vandaag bakte ik weer eens zoete broodjes. Nee ....... niet bij mijn baas, maar gewoon thuis in de oven :-). In het deeg wordt saffraan verwerkt, waardoor het een lichtgele kleur krijgt en is heel makkelijk te verwerken. De broodjes worden afgewerkt met parelsuiker. Tijdens het kneden blijft het een beetje plakkerig - als je het deeg in een standmixer maakt blijft het iets aan de bodem plakken - maar weersta de neiging om meer bloem toe te voegen! De broodjes zouden anders droog worden. Het deeg kan met een standmixer, met een broodbakmachine (deegstand of alleen ± 15 minuten kneden en dan de werkwijze hieronder volgen) of met de hand worden gemaakt. Het recept zat in het mapje "ooit nog te bakken brood" en zo langzamerhand vond in het weleens tijd om de broodjes te maken! Ik heb het recept ooit gevonden op de site van King Arthur Flour. The movie No Reservations made my taste buds sweat. Starring sultry actress, Catherine-Zeta Jones, her character makes gourmet food more enticing. I can't help but compare the movie to Ratatouille where the plot also revolved around the kitchen, secret recipes, and magical ingredients. In No Reservations, Saffron Sauce was a star and the Pinot Noir from Adelaide, Australia was also mentioned. Saffron Sauce reminds me of the saffron here in the Philippines which is rather cheap and easy to find. It can be easily bought in markets and is known locally as "Kasubha". My favourite cuisine after Indian is definitely Italian. I love the use of cheese, herbs and spices that their dishes contain. And raviolis are my personal favourites on any italian menu. As a cook, I always try to combine flavors that I think go well with each other, irrespective of their origin, and that's how most of the fusion dishes are created. A good pinch saffron1 glass white wineOlive oil1 large garlic clove, finely chopped1 pound dried tagliatelle1 1/2 pounds (680 grams) mixed seafood (red mullet, scallops, clams,debearded mussels, squid)1/2 pint double cream (heavy cream)Salt and freshly ground black pepperA bunch flat parsley, choppedSoak the saffron in the white wine. Add a little oil and the garlic to afrying pan, and cook until softened. Add the clams and mussels, shakethe pan around, and add the white wine and saffron mixture. Bring to aboil and cook until the shellfish opens, discard any shellfish that remainclosed.Then, lay the rest of the seafood, parsley, and the cream on top. Simmerfor 3 to 4 minutes and season to taste. Cook the tagliatelle in salted,boiling water until al dente. A couple of months ago I made a vegetarian dish that I hadn't tried before. A bit exotic because it contained sweet potatoes, bits of dried apricot and spices like saffron, chili and caraway/cumin. Basically it was a stew made from the ingredients above plus chopped onions and various beans. My wife thought that the dish was rather odd and she posted in her blog. Some of her readers tried it out and they thought that it was rather tasty.

Quantity and Ingredient2 c Rice4 c Water6 T Ghee1 t Saffron threads (or less)2 T Hot water1 c Sliced onion1 small Cinnamon stick - splintered4 Bay leaves4 large Black cardamoms1 T Cumin seed4 Cloves2 t SaltMethodSoak saffron in hot water.Wash and soak rice in 3 c water (optional).Heat ghee and fry onions and then remove and keep aside.Add cinnamon, cumin seeds, cardamoms, cloves and salt. Wait 1 minute and then add the bay leaves and 1/2 the onions. Drain the rice and reserve the water.Add the rice grains and stir for 4-5 minutes until all the water evaporates and the grains of rice are coated with oil.Add the water and bring to a boil.Add saffron and its water and pressure cook at 15 psi.Remove from the heat and allow the pressure to drop by itself.

As in a previous post I said that I was going to use more dried spices. This is one of my new recipes, inspired by my new spice range. I hope you all like it. David, Ben, Maddy and I loved it. Ingredients 4 cups of Arborio Rice500 mils of Chicken Stock1 cup of WaterPinch of Saffron Strands1 scoop of Macadamia Nuts8 Chicken Thigh Fillets, no skin and no bones.1 Large 500 gram Tub of Natural Greek Style Yoghurt2 large Passionfruit or 4 small ones1 clove of Garlic finely choppedSalt & PepperMoroccan Spice Mix, you can pick that up at any good Indian or Asian GrocerSprinkle the Moroccan spice mix all over the thigh fillets an hour before your ready to cook and allow to marinate covered in the fridge. Your ready to cook. Preheat your oven to 150 degrees. Place your Macadamias in an oven proof dish and toast in the oven. Keep an eye on them you want them toasted, not burnt.
