I am not much of a salad person. I mean, I do like them but not as a meal in itself. Most of the salads are ones I make as an accompaniment to the main course. Because of this I don't spend much time on them, especially the dressing. After beginning to work, I find myself pressed for time to make dinner and I feel bad when there is just one gravy and one curry with rice. TH never complains but still I feel guilty. So salads like these are my solution! I sometimes fill the gap with raita too, but about that in a different post :)Now onto the salad.What I Used:Serves 2 (on the side)Boiled Corn kernels - 1 cupBoiled peas - 1/2 cupFinely chopped onions - 1/2 cupFinely Chopped tomatoes - 1/2 cupMinced garlic - 1/4 tsp (1-2 cloves)Pepper powder - 1/2 tsp (I used white)Lime juice - 1 tbsp (or to taste)Salt - to tasteHow I Made It:1. Summer is absolutely the time for salads! You don't need to turn the oven on and your entire dinner can be fixed in minutes!! I have been craving salads nearly every night of the week in this already hot and humid weather.Salads are light, cool, crisp, and refreshing on a warm summer evenings. They are also packed full of nutrition if you make sure to add lots of fresh vegetables! I made this particular layered salad several weeks ago for a picnic. Who would have thought I actually survive having only salad for the past few days. I told you that you need to have faith and motivation when you want to achieve this goal -- to get thin.Like any other people out there, they thought I'd die of hunger. You guys threw bad remarks about me. You people have tried so hard to put me down in a way so that I will stay fat like you. Try harder the next time, hunney. Come out with cooler techniques okay. You guys have put me in a place where I should stay positive and let all my idol took over my brain cells.So anyway, when was the last time I had fast food, eh?
