This week's recipe chose Karina from The Floured Apron from page 32 of Baking: From my home to yours: Apple Cheddar Scones. I like scones, preferably with clotted cream see here, here or here. I also baked Welsh Scones, son no. 2 like them most since our vacation in Wales two years ago. The recipe was easy, the dough was very sticky. Instead of worrying with that I used my biggest ice cream scoop and spooned out 12 equal pieces onto the baking sheet. We liked the combination of apples and hearty cheddar. Dorie recommends a good jam, we think it goes well with apple jelly or enjoy the scones with cheddar cheese on top. Ich liebe Scones, am liebsten mit clotted cream wie hier, hier oder hier nachzulesen ist, aber auch die walisische Variante habe ich schon gebacken. Diese Woche also ist Dorie Greenspans Version mit getrockneten Äpfeln und Cheddar Cheese an der Reihe. Der Teig sehr weich und anstatt mich mit dem klebrigen Teig abzuplagen, habe ich 12 Scones mit meinem großen Eisportionierer auf das Backblech gegeben. Oh, I cannot tell you enough how much I am enjoying ?The Sweet Melissa Baking Book?. This time around, I made the Orange Scented Scones. I just adore any baked goodie that I can have at breakfast. In my world, a naked cupcake counts as a muffin. However, these scones are just perfect for those lazy days that include the newspaper and an endless pot of coffee.First off, the recipe makes only 6 scones, which is perfect for small families (example: Mr. Gigi Cakes & I). Second, I was intrigued at the addition of oat flour. I was worried that the scones would have an oatmeal taste to them but I was a worrywart for nothing. I've felt like making (and eating) scones for a while now, and by coincidence there was a really interesting recipe in a new book I have just bought. "The great book of chocolate" by David Lebovitz, the book is brilliant, I have found it really interesting as it contains far more than just a regular cookbook, although there are planty of great recipes, in fact more than half is about chocolate, from it's history to how it's made and even health benefits.There are 30 recipes in the back and these scones are one of them.I have had cherry scones before but never with chocolate in which I thought was a really good idea, the recipe also calls for orange zest which I didn't have so I used orange oil instead. Hmm. It is hard to admit failure when you are so close to victory. This morning I got up a 4 am because I wanted to have a fresh scone with my morning coffee. The recipe sounded great, I even had all the ingredients on hand. (Yes!) Hmm, two hour chill time? No problem. So, there I am at 4:00 in the morning making scones. I saw these scones on Annie's blog a while back and I saved them because I thought they looked bright and fresh. These were a cinch to throw together and took less than 10 minute to get into the oven. I must be honest though - Nick and I both agreed that the scones I typically make that either have heavy cream or buttermilk in them are MUCH better. Vacation starts in 9 days and while things should be winding down, my dear sweet husband is working harder than ever. For the past 3 months, Cornelius has been in lock-down mode and despite the occasional sleeps and nutrition breaks, it's been nothing but work-work-work. This has been a long time favorite recipe in the family and one of the first batch of yummies that my husband baked for me when I first moved down here to New Zealand. I have been eating them ever since. Mum's Lemonade Date SconesIngredients4 cups of self raising flour (or 4 cups of standard white flour with 4 heaping teaspoons of baking powder added)1 (335 ml.) can lemonade (Sprite)300 ml. cream1/4 tsp salt400 grams (14 oz.) of whole dates (will be added to the mixture whole)DirectionsPreheat Oven To 200 degrees C. or 390 F.Mix all ingredients well in large mixing bowl. Yes?I did it. At last, I managed to overcome my phobia of baking(Is there a thing called Bake-phobia?;). Some what, I have always stayed away from baking cakes or cookies. I have discovered that when things don?t work out the way I want, they really get to me. My first attempt of baking goes back to my teenage year which was a complete disaster, where I ended up almost setting the house on fire. Since then I have kept myself away from oven until now. It looked quite simple and easy to make them and I had all the ingredients except eggs in my pantry which didn?t hinder my enthusiasm. First thing I did before I started baking was switch off the fire alarm;) Then with all courage and determination I started making scones from scratch. I heart scones. I never thought I would have to use this already vastly exploited phrase, but there really wasn't any other way of capturing my current scone attraction. I don't absolutely love scones, I won?t go gaga over them; I simply just heart them. It's probably a lot like telling someone gently you don't love them, but you do like them, a lot. And I hope that these scones don't take it the wrong way, I really do heart them. They make getting up in the morning much more bearable. And if it weren't for them, I would be an even bigger grump in the morning than I am now. This newfound attraction to scones has come out of nowhere. I don?t know what exactly it is about them; and I wouldn?t say it has reached obsession stage, all I know is that I have had a penchant for baking them lately. Dit hoort eigenlijk geserveerd te worden bij een High Tea, maar als lunch-hapje ook erg lekker! Smelt 30 gram boter. Doe in een kom 310 gram bloem, 1 1/2 eetlepel bakpoeder, 1 eetlepel poedersuiker, 250 ml volle melk en de gesmolten boter. Meng dit met een spatel, want het deeg wordt erg kleverig. Als het goed gemengd is kunnen ze op de bakplaat. Maak met een eetlepel die je telkens door een bakje heet water haalt mooie ronde hoopjes. Nu kunnen ze in de voorverwarmde oven op 220 graden voor ongeveer 10 minuten. Je serveert de scones warm, en natuurlijk met een lekkere jam, eigenlijk serveer je er ook slagroom bij maar dat had ik helaas niet in huis.
