Grocery stores ranked on seafood sustainability
2009-07-03 01:00:00 Greenpeace sent out their Sustainable Seafood Scorecard earlier this week, ranking grocery store chains. I don't eat seafood, but I do know about the issues the underwater environment faces from poor operations, as well as supporting these operations. But the findings for the best and worst of the chains were somewhat surprising to me. Of stores found in Chicago, Whole Foods, Target and Dominicks came in 3rd, 4th and 5th, respectively. Walmart even made the Top 10. Trader Joe's, a Chicago fav, however ......
Restaurant Tip: Batik Seafood - Nai Yang Beach
2009-05-19 05:42:00 My parents have been visiting, and last weekend we took a trip up to Nai Yang Beach where I had been recommended a restaurant. On the way we stopped off at the Thalang National Museum, which is worth a quick visit if you are heading to the north of the island. At Nai Yang Beach I went to look for Willy who runs a Kite Surfing shop on the beach - he'd recommended a restaurant called Octopus.. but it was closed, and Willy was not in the shop, so we wandered along the narrow road checking for other dining options.Nai Yang is very quiet, there are fishermen coming and going - we watched a bucketload of squid being sorted out and we watched longtail boats coming in. Other fishermen (and women) waded out into the shallow water with fishing rods. The traditional feel of Nai Yang is matched by the low key restaurants on the beach. Part of the beach is a National Park, so building is limited. We chose the very last restaurant along the dirt road, just before the treeline. It looked simple, t...

Tips For Spicing Up Seafood
2008-12-03 05:02:00 The allure of exotic spices launched Columbus on his journey of discovery. Today, home chefs can explore new taste sensations by using spices and other flavorful ingredients to add a new world of flavor to fresh fish and seafood."There's nothing like the fresh flavors of herbs and spices for cutting unhealthy calories without sacrificing taste," said Red Lobster Executive Chef Michael LaDuke, who offers the following simple tips for enhancing the natural flavor of fresh fish and seafood:World of Flavors: An easy recipe that turns fresh fish into an exotic dish is topping tilapia with a mixture of soy sauce, lime juice, orange juice, fresh ginger, garlic and cilantro. To produce a richer flavor, make the soy sauce mixture at least 24 hours in advance and refrigerate the sauce overnight. Serve the sauce at room temperature or slightly warmed. With its sweet, mild taste and firm, flaky texture, tilapia will soak up the flavors and take on a deliciously Asian flair. If you prefer a deli...

Gearing Up For Seafood Fridays
2008-12-01 02:56:00 As we enter the Lenten season, millions of people will be looking for great seafood recipes as their alternative to meat. Not knowing where to look, many will opt for basic dishes that might not satisfy their craving for a bona fide good meal. With a little creativity and help from shelf-stable seafood, the Lenten season can be filled with a variety of palate-pleasing alternatives."People often do not know what to cook during Lent, so they turn to 'tried-and-true' favorites such as veggie sandwiches, pastas and salads," said Culinary Expert Lena Cutler."Shelf-stable seafood is very affordable and easy to substitute in your favorite meat-based dishes," said Cutler."Canned and pouched seafood are available in many varieties, including tuna, salmon, crab, shrimp, clams and oysters," said Cutler. "You can use tuna or salmon instead of beef for burgers, tacos, stir-fry and more."Shelf-stable seafood also has many health benefits."In addition to being conve-nient, shelf-stable seafood i...

Great Health Benefits Of Seafood
2008-11-21 02:57:00 Seafood contains essential oils that are an important part of your diet. Oils provide the source of energy we need and they are also great flavor enhancers. More importantly, they are a source of significant fatty acids.Seafood oils are unique and have great nutritional benefits to our body. This oil contains the omega-3 polyunsaturated fatty acids, specifically the eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA).Our body only produces small amounts of these important fatty acids; therefore we need to rely on other sources for this essential nourishment. Seafood is one of the best sources of these nutrients. In fact, oils are the second biggest components in most seafood.Eating seafood just once or twice a week can provide good health benefits. Eating fresh seafood is a great way to obtain your required dose of these essential oils. Oils extracted from seafood are also available as nutritional supplements.Oils derived from seafood help prevent some of the most deadly dise...

An Encounter with a Lobster
2008-06-09 00:13:00 I feel I should warn you, out of respect for my more sensitive or vegetarian readers, that this post is about cooking a live lobster and it is rather frank in places. I won?t be offended if you choose to skip it.I?m a real seafood lover, I love shellfish in particular and lobster is probably my favourite. I say probably because these days I?m having a wonderful love affair with oysters, of which I can?t get enough. But this post is about lobster, not oysters and so I won?t go down that road this evening. Loving lobster as I do, and being such a passionate home cook, it?s only natural that I would want to cook it. It?s something I?ve thought about on and off over the years but what?s stopped me from doing so, up until now, is the fact that lobsters have to be cooked live or immediately after killing because, like all crustaceans, they deteriorate rapidly. For the same reason it?s preferable to cook a lobster rather than buy a ready cooked one as the texture of the flesh changes very ...
Cafe on the Tenth
2008-06-03 07:22:00 It was an all girls' night out to celebrate my cousin's birthday. Mom was nice enough to babysit and for the first time I was out for a record time of 5 hours. It was a buffet and what a spread there was. I am really into the cold cuts, salads and the raw stuff. Oysters and salmon galore. I must say that they kept the oyster supply coming the whole night. They were fresh and with an extra dash of tabasco sauce, tastes divine.I never liked fresh oysters until I discovered how well it goes with tabasco and a squeeze of lemon. I think between all the ladies and I, we probably ate several dozens. Some of us started with oysters and ended the meal with oysters! The dessert spread was pretty good. I have to confess I had 2 servings of caramel custard, mango and bread butter pudding plus a selection of cakes as well :)There were mini cream puffs as well! Made with fresh cream - my favorite. The other ladies preferred custard filling but not me. Alas, the choux puffs were a bit disappointin...

Restaurant Tips: Pak Nam Seafood
2008-05-28 17:37:00 I admit that life sometimes becomes a bit repetitive, mostly governed by work and school, and we tend to sink into regular patterns. We eat at home much of the time (see Home Cooking), and when we eat out we tend to head for regular hangouts, places we know, places that are safe for the kids, places where we know we can get good food. I vowed to try some new restaurants this year, and finally last week, when I had a holiday and both kids were at school, we found a new restaurant which we liked and indeed went back a few days later with the kids. Pak Nam Seafood is right on the northern edge of Phuket Town on Ratsadanuson Road which winds around the edge of "Monkey Hill" from the government offices in the extreme northeast of town to just north of the Mission hospital which is on the main road out of town to the airport. 2008-05-20 05:48:00 When someone offers to babysit, don't refuse! We jumped at the chance to have dinner together, just the 2 of us when my sister offered to babysit Micah for the night. It was nice to get all dressed up - I have been in living in shorts and t-shirts or jeans and t-shirts for the past few weeks and for once, wearing a nice girly top with some silver hoop earrings and a bit of make up did wonders for me. So did a great Japanese dinner. We were in one mind about where to go yesterday night - both keen to use the Starwood Privilege card which we renewed this year. I was not a fan of these type of cards before but my resolve wavered once when a telemarketer convinced me of the benefits and I have been renewing my membership ever since. We've used the card in China so being away from Kuala Lumpur hasn't diminished the use of the privileges.Japanese was our choice of cuisine and Sheraton Subang, one of the participating hotels is the nearest as we didn't want to be away from Micah all that...

2008-05-11 15:21:00 David and I had an opportunity to go out for dinner yesterday night after being housebound ever since Micah was born. For the past 2 weeks, I've eaten at home and this outing, though nearby and just for dinner was the highlight. The wait for the food was long but not unexpected since it was a Sunday night and also Mother's Day. Wild American Shrimp vs. Farmed Shrimp
2008-05-04 11:32:00 Shrimp are one of the healthiest, low calorie foods you can eat, provided they aren't battered and fried. The trouble is that imported farmed shrimp are toxic and the farming methods used are bad for the environment. Shrimp farming in Asia and Latin America is destroying mangrove forests and, in turn, coastal villages. And because disease is rampant in shrimp farms, farmed shrimp are pumped full of antibiotics and pesticides. Imported wild shrimp are also a problem because of bycatch. For every pound of wild shrimp caught, several pounds of other animals such as turtles die needlessly in the trawler nets. If you're going to make shrimp a part of your diet it's best to avoid shrimp imported from Asia and Latin America altogether. Wild American shrimp are the best choice for your health and the environment. American shrimp fishermen are required by law to reduce bycatch. For instance, they are required to use Turtle Exclusion Devices to stop turtles from being caught in ...
