More College Cooking on the Cheap: Chefs & Soups
2008-05-20 18:19:00 My food options were few my freshman year-mostly because (a) I was broke and (b) I didn’t have a car. That meant breakfast, lunch, and dinner were either the cafeteria or something microwavable I could buy on campus (so, macaroni or soup in a cup). Once my roommates and I got into a place with ...
Tofu & Basil Thai Soup
2008-05-19 15:20:00 If there's one thing I love about Thai food, it is the variety of flavor in their curries. A spoonful of red, green or yellow curry paste can add such a wonderful taste to an assortment of veggies! After mastering the recipe for Veg Tom Kha Soup, I decided to try a hand at this classic Thai Soup with Basil and Tofu. Its a very simple broth made of coconut milk and flavored with all the Thai herbs like lemongrass, galangal, kafir lime and ginger, coming together with the basil, tofu and peas to... Ugly as a Monkfish?s Uncle
2008-05-12 22:14:00 If monkfish can teach you one thing, it’s “don’t judge a book by it’s cover.” There are hardly any foods in the world that are this ugly: But monkfish isn’t simply ugly, it’s also hands-down the best fish to use in a stew, assuming you can get over the look long enough to cook it. ...

Vegetable Soup? It?s freakin? 80 degrees out there!
2008-04-18 01:23:00 It’s getting hot in here. Well, not in here—this series of tubes that we call “the internets”—but out there, on the other side of my window, where tulips and blossoms are beginning to bud under the warm New Jersey sun. Tomorrow’s temperature may reach 80, there’s a warm breeze blowing through the blossoming trees, and the ...

Rice Soup with Shrimp Dumplings
2008-03-27 16:25:00 I’m not well today - probably the flu. But that doesn’t stop me from cooking. No siree, it doesn’t. Mélange - Soups
2008-03-25 05:38:00 Wow! This is the longest blogging break ever. Long enough that I started going into withdrawal! Guess that's what happens when work mania takes over. Long hours, little sleep, and not enough cooking - that does not bode well for me!Guess given how the drafts are piling up, it is time for another Mélange post. This time about a certified favourite subject - soups. We love soups - chunky, pureéd, spicy, hearty ... just bring it! And these bowls of goodness end up being even more appetizing on those cold snowy or rainy days - nothing like a cup'o'soup to warm the soul, huh?I'm actually having to rack my brains about these recipes as I start to type them up - we made them a few weeks ago and I never did get a chance to write about any of them. Guess that's just one more reason why this whole blogging mania is so awesome - the e-trail that I can use to look up recipes! All 3 soups featured here are relatively chunky or thick - guess that was a sign of wanting to warm the insides on a...

2008-03-17 15:49:00 I am very fond of entertaining, and hosting parties or gatherings is one of my favorite hobbies:) The other appealing feature is that I get to try different food, especially appetizers and hors'douvres that we don't usually cook in our day-to-day lives. A Simple Stock
2008-03-06 12:41:00 Ningbo is famous for its seafood as it is very near the coast. So it is usual to find lots of seafood produce at the supermarket. One of the most common I find is tiny shrimps which I see used in soups, fried with vegetables and probably used to make stock.Tiny shrimps are also found in Malaysia and used quite a lot in our cooking but they are usually dried shrimps or a paste and can be very strong in flavor. The most flavorful of all is belacan which is fermented ground shrimp. You can smell it a mile away and it packs a punch when chili is added. Pungent, aromatic and delicious! We had cabbage the other day - a boring but easy to cook vegetable. To add some flavor, I fried some tiny shrimps in hot oil and then added some garlic before the cabbage. It turned out very nice.I used a fair bit of shrimps and was very generous with the wolfberries too.Today I used the tiny shrimps to make a stock. To take away the fishy taste, I added ginger slices and to sweeten, wolfberries (also known ...

Season Of Soups: Recipe: Artichoke & White Bean Soup
2008-02-25 16:10:00 Soup doesn’t always have to be a long and involved process. I love quick and easy soup recipes using things I normally have stocked away in my pantry and fridge ? that’s what being the LeftoverQueen is all about, right? I love spending hours experimenting in the kitchen but sometimes even I am in a rush and need a quick but healthy meal. To me soup is the opposite end of the coin from salad - both use lots of veggies and healthy ingredients - just one is hot and one is cold. Here is one of those easy, healthy and delicious recipes straight from the pantry! INGREDIENTS: 2 TBS olive oil 1 medium Spanish onion, chopped 1 10 oz. package of frozen artichokes, rinsed 1 clove of garlic, sliced 2 15 oz. cans Cannelini or Northern Beans 2 cups vegetable broth juice from half a lemon salt & pepper to taste METHOD: In a stock pot heat the olive oil and add the onions, artichokes and garlic. Watercress & Potato Soup
2008-02-21 07:38:00 Now there's nothing quite like warm soup on a cold winter's day. And here in the Great Lakes area we appear to be having the coldest, snowiest winter ever. In fact, not only do we have 3 feet snow on the ground, the branches of trees have frozen over and are glittering like shiny ornaments in the bright winter sun! Yes I spent the better half of my day admiring this sight and taking loads of photographs. With the setting sun, I decided to get back in and get some hot soup going. We love soup so much around here that I have taught myself to prepare it 'from scratch'!! Yes, I make my own soup stock, freeze it, and keep it handy to boil up a steaming hot favourite in a snap. Mix-Vegetable and Coconut Milk Soup (Healthy and Wholesome)
2008-02-20 19:13:00 When it comes to soup recipes, we tend to go after the tried and tested combinations more often than not. Even I used to do the same, because some recipes and flavors just stick with us and we don't feel the urge to try something new. But this time around, as I mulled over the idea of a wholesome vegetarian soup, there were quite a few ideas that played in my head. I wanted it to be thick and creamy, yet without all the fat that heavy cream brings with it, and I wanted it to be flavorful as well as healthy. So guess what! I decided to try a mix-vegetable soup (a nice way to throw in all the veggies that you love!:)) combined with coconut milk. To give it that distinct flavor, I decided to roast/saute the ingredients and flavor them with spices which infused a higher taste and aroma. The boiled and cooked veggies also leave water which eliminates the need to add artificial broth, and the addition of coconut milk gave it the thick texture and consistency that I was looking for!I have...

Lamb Stew with Cranberry and Mint
2008-02-17 16:30:00 This recipe originally came from an old Cooking Light magazine but I tweaked it here and there for myself. Season of Soups: Recipe: Lamb Stew
2008-01-31 18:22:00 Here is a Leftover Queen classic! Remember all those greens from the Farmer’s Market several week ago? Well even with all my recipes that week, I still couldn’t use all the greens, so I washed some and stored them away in the freezer. I also had leftover tomatoes in juice from the Imam Bayildi and then there was the issue of random pieces of veggies in my vegetable bin. I also had purchased a small piece of lamb shoulder at the store, perfect for soup. I went into the pantry and found a can of cannellini beans and a package of rice pilaf. Put this all together and what do you have ? an AWESOME stew. I am telling you guys, the flavors in here really really rock. It’s got a bit of the Middle East happening in here since I spiced it up with Sumac and Za’atar, a dash of coriander and a bay leaf and the world is a warm bowl of stew. We ate some for dinner, had it for lunch the next day and put the rest in the freezer for next week, so we can have leftovers of lef...
Panchvati Garlic Dal (Mixed Lentil Soup) - A Healthier Choice
2008-01-30 19:05:00 "Dal", or Lentils, are a part of the staple food for Indians, and hence it gets tricky to come up with different variations that can make this daily bowl of soup/dal more interesting. Almost every one has a tried-and-tested dal recipe, and it's a challenge to drift away from that and try something new! especially when that's a main course deal you are counting one:) But bored with the regular style of Dal we eat every time with rice, I decied it was time to try something new. So i made this Panchvati Dal (totally a name I concocted!) which combines 5 different types of lentils cooked together, and flavored with garlic, spices, ghee, green chilies and quite a bit of cilantro. The mixture of dals gives this a nice thick texture, and the aroma of ghee (clarified butter) makes it a treat to consume even by itself, perhaps as a lentil soup! For the Indian palette, combine it with parathas or plain Jeera Rice, and you are all set for a delicious meal!IngredientsI used 5 kinds of lentils...

Roasted Red Pepper and Tomato Soup
2008-01-13 16:00:00 Aren't you proud of me? I've posted three healthy, light meals in a row. I don't know how much longer I can keep it up without throwing something chocolaty in soon (don't think about donuts, don't think about donuts, don't think about . . . )Of course this soup is the best when the summer's produce is at its peak but it's still wonderful in the winter when soups are what keeps you warm. It's easy to make because you just cut up the veggies, roast them and puree them and it goes great with a side salad, crusty loaf of bread and some new year's resolutions. Yum.2 ¼ pounds tomatoes, halved lengthwise3 large red bell peppers, halved1 onion, cut into thin wedges8 large garlic cloves, peeled4 tablespoons olive oil1 teaspoon dried thyme2 cups chicken broth4 tablespoons grated Parmesan cheeseArrange vegetables, onion and garlic on a greased baking sheet and bake at 450 degrees for 40 minutes. Remove and cool. Puree in a food processor, transfer to a stock pot and add the rem...

Roasted Cauliflower and Bell Pepper Soup
2008-01-02 19:34:00 I think the major reason people flock to the western coasts of California is the beautiful weather that we are blessed with. But looks like mother nature is playing games with this blessing that we have started taking for granted. It's been record lows this winter, and we have to turn on the heater every night! Well, not that I should complain a lot though, because a lot of my friends in the east coast have a way more hard time shovelling their driveways and uncovering their snow-clad cars in the morning, layered themselves in jerseys and overcoats. Anyways, one of the ways I think we can comfort ourselves against the cold is fuel our bodies with something hot, healthy and delicious. Yes, you guessed it right - Soups! Generally when we think about making soups, we go with chosen favorites like tomatoes, pumpkins, mushrooms, chicken or veggies in a creamy broth. But recently I came across a cauliflower soup recipe on Southern Living, and it caught my eye. I had also seen a tomato-be...

Soups and Salads
2007-12-19 09:54:00 Soups and Salads (Sop, Soto, dan Sayur Segar)Indonesian soups can be divided into two categories: sops and sotos. A sop is similar to a Western soup with a clear broth and some ordinary looking vegetables. Soto venture into much less familiar waters to include chilies, sour galingale, lemon grass, and sometimes coconut milk. While a sop might provide comfort on a cold winter's day, sotos are more the ticket for a hot one. Between the actual temperature of the soto and the chilies it contains, you might break into a sweat powerful enough to make even a puny breeze feel downright cool. Sotos are also open to improvisation by the server. Where a sop will be ladled straight away from a single stock pot, sotos tend to be assembled from their components on the spot.First cooked noodles are added to an empty bowl and covered with a broth from one pot and some meat from another. Various vegetables are added and allowed to steam in the bowl while splashes from different bumbus cover them. ... |
