The cake had a tight tender crumb with a coconut essence. And the icing?Cream cheese icing is a favorite for many. I have to tell you that this version will be my "go to" icing from now on. I will use it on coconut, carrot, banana, and hummingbird bird cakes. The icing has the cream cheese flavor we all love but adding "meringue" lightens the icing to an indescribable level.Unfortunately, I am unable to show you the layers because I sold the cake! Not to beat this dead horse with a stick, but there are Southern Europeans and their supporters who strongly object to the notion that they have more than a smidgen of Black blood in them. In fact, there are websites that are set up in part to specifically negate that premise. Some of their supporters are simply racists.This is definitely a sore point with Southern Europeans. As an Italian friend of mine said, "The Southern Italians really hate to be called negri. If you call them negri, they pull out the knife." One of our favorites was an inn in Brattleboro VT called 40 Putney Road, named after the address there. It had beautiful French architecture and a nice location. We ended up passing on it because we found our current VT bed and breakfast inn that was a better fit for us and made our numbers work better. Since that time, 40 Putney Road has changed hands a couple of times I think. The new owners, Tim and Amy, look like they are doing a great job with it - see especially the room photos on their website.They also write a blog I found a couple of months ago just as we started heading into the big fall foliage rush. The San Fernando Valley Brady Campaign Chapter is proud to bring this exhibit to the L.A.-area.Through the stories and pictures, the creators of Wounded in America bring a realistic picture of gun violence and its lasting impacts to viewers of the exhibit.
