Here's a recipe for a healthy light soup. It is quick and simple.Ingredients:8 ounces of soft tofu (cut into little cubes)baby spinach1 ounce dried seaweed (wakame)2 quarts chicken or vegetable broth1 teaspoon sesame oil1 teaspoon minced garlic2 tablespoon minced gingersalt and pepper, to taste(some sliced shiitake mushrooms would also be great)Directions:Soak the dried wakame seaweed in a large bowl of water for 20-30 minutes to rehydrate them.In a pot, heat the broth. Add the sesame oil, garlic, and ginger.Add the spinach and seaweed, followed by the tofu.Bring the soup to a boil, reduce the heat and let it simmer for 15 minutes or so.Ready to serve. This is really quick to make, tastes great and if like me you are only making these for yourself and hubby, they make great leftovers for the next day, as my son and I found out. You will see from the photo I shaped into quite large patties, I don't usually do this I just wanted this for photo purposes. It is alarming the way the food prices are sky rocketing these days. Some days I feel as if I could do with support from the Army Catering Corps. The nights when we all arrive home late, drenched in rain and exhausted by work, school and football fixtures. There are instant demands for food. I fend them off with a drink of squash and a biscuit but that only buys a few minutes? grace. The demands become more aggressive. An unexpected side effect of the Great Big Vegetable Challenge was that I am now far better at looking at the fridge and coming up with fast food, incorporating vegetables. I made spaghetti with baby spinach leaves, bacon and pine nuts. The pine nuts or pine kernels are oily and can be toasted very quickly in a dry pan. I hardly ever make deep fried snacks or meal but this one particular rainy day, I craved for them so much that I actually went out in the rain, got some fresh spinach (palak), gram flour (besan) and coconut oil to make this lovely and crunchy snack.What I Used: Spinach/Palak - 1 cup, choppedGram flour/Besan - 1/2 cup and a bit moreChilli powder - 1 tspAsafoetida/Hing - one pinchJeera powder - 1 tspOil (I used coconut oil) - enough to deep fry the pakorasHow I Made It:1. Yes, a daycare.One of the daycare teachers was making fresh pasta with her kids and on top of the pasta she swirled on this lovely spring green sauce. I had to have some. It was so fresh and delicious! Serves 41 (10-ounce) package frozen chopped spinach2 (13 3/4-ounce) cans artichoke hearts1/2 cup mayonnaise1/2 cup sour cream1 cup freshly grated Parmesan1 cup grated pepper jack cheesePreheat the oven to 350 degrees Fahrenheit. Grease a casserole dish with nonstick spray. Heat the spinach in a microwave oven on high for 5 minutes and squeeze dry. Drain the artichoke hearts and coarsely chop in a food processor. Combine all the ingredients except the jack cheese in a large bowl. Stir well. Scrape into the prepared casserole dish and sprinkle the jack cheese on top. Bake for 30 minutes. This will be displayed at the local library for the entire month of April. I am leading one group and the topics we have been allocated are Marathi Food, Marathi Painters, and Sculptures in Maharashtra. The food part is the easiest one obviously but the painters and sculptures needed a bit of research. This is a lovely healthy light recipe, the salad recipe was another one I tried from a zaar member for the swap I am doing, the fish is mine. I will post a link to the salad recipe underneath it, so you can go and see the wonderful photos that the chef, of this recipe took, they are gorgeous. These make for a great light and healthy lunch, I have had them for my dinner before and gave myself 2 rather than 1. They are very easy to make and are very low in fat.Ingredients1 Bunch English Spinach, washed (about 1kg)Filling250g Canned salmon, drained120g ricotta cheese2 Tablespoons chopped chives2 Tablespoons fresh parsley, finely chopped1 Egg lightly beatenPepper to tasteMethod1. Boil, steam or microwave spinach until just tender, drain and allow to cool2. Select largest spinach leaves, and line four lightly greased ramekins of about 1 cup capacity. Make sure and leave some of the leaves overhanging the top to fold over and encase cheese mixture.For the Filling1. Squeeze as much liquid as possible from remaining spinach and chop finely.2. My mom claims that my brother developed a love of spinach because of his childhood obsession with Popeye. I don’t have any such stories, but I also am a huge fan of spinach. Especially when it’s baked with cheese in a flaky phyllo crust. And especially when you haven’t slathered every layer of phyllo dough with butter, so you don’t feel so bad about eating one more. Spanikopita are traditionally Greek, but I’ve seen them at Middle Eastern restaurants, too. I guess everyone has their own variation on the theme (the Italians have the spinach and cheese calzaone). I suppose my version isn’t totally authentic, what with the mozzarella cheese in there, but I didn’t have enough feta so I had to add what I had on hand. Also, I don’t add dill to mine, as many people do, because I seriously hate dill. So add dill to yours, use all feta cheese, add other herbs or cheeses – whatever floats your boat.
