Als ich bei Rike das hier rezensierte Kochbuch durchblätterte, war es nur noch eine Frage der Zeit, bis mein Widerstand, neue Kochbücher anzuschaffen, brechen würde. This is one of my favorite side dishes. You can make it as low fat as you want, it’s still going to be delicious (assuming you like spinach). My version is adapted from Home Cookin’ (Compiled by Junior League of Wichita Falls, Inc., Wichita Falls, TX. It’s been a long time since I’ve referred to the cookbook recipe. I’m surprised to see it calls for three eggs. I don’t think I’ve ever made it according to the published recipe. It’s a great side dish because it’s good to eat and easy to make and also because although the main ingredient is spinach it’s not runny — the liquid from the spinach gets absorbed by the roux you make at the start. This is really quick to make, tastes great and if like me you are only making these for yourself and hubby, they make great leftovers for the next day, as my son and I found out. You will see from the photo I shaped into quite large patties, I don't usually do this I just wanted this for photo purposes. I make three patties per person and as you can see, if you made them this size, it would just be too much. A couple of nights ago, Mrs. Chicken Fried prepared some Spinach and Feta Cheese Stuffed Salmon Filets which we purchased at Trader Joes.We love prepared meals which include all the ingredients but still allow you to cook them, but have had mixed results from the prepared dishes we get at warehouse stores.However this was not the case with our latest meal from Trader Joes. We grilled the salmon and within minutes we had a wonderful restaurant quality meal. While this prepared meal had all the necessary ingredients, you would be best advised to flavor to your liking, and the only improvement I would add would be a dash of sea salt. Other than that though, The salmon was tender and flavorful. The Feta and Spinach really added to the personality of the dish, with the it combination of the smooth rich tasting Feta and the earthy nuttiness of the spinach. It is alarming the way the food prices are sky rocketing these days. Every time we go to the grocery, we notice an increase in the price even for the essential commodities like bread, pulses, milk, vegetables etc. We seem to be getting lesser and lesser for the same amount each year. I personally feel the prick most when I see the prices of Toor Daal and Uraad Daal go.  These were the most frequently used Daals at home growing up and it is painful to see their prices shoot up at such alarming levels.
