2008-11-08 17:00:00
Ade made a wonderful dessert with Japanese squash and tapioca pearls. Japanese Squash is also known as Japanese Pumpkin or Kabocha. Japanese Squash is rich in beta carotene (as in all red-orange colour fruit), iron, vitamin C and potassium. It also has small traces of calcium, folic acid and minute amounts of vitamin Bs.

Mary Kate Olsen and Nicole Richie Squash Rumours!

Fried Squash Blossoms
2008-07-12 18:59:00
I've been growing zucchini for several years now and I never really took the time to pay enough attention to determine which flowers were male and which were female. As a result I've missed out on many a fine dish of fried blossoms. This year I went out and took photos as the buds, and then flowers, were growing and figured it out. Now I'm going to pass on this wealth of info to you - aren't you happy to have found my blog? The male flowers are attached to longer and thin stems. It's was fairly easy to figure this out once I took into account the fact that none of those stems was sturdy enough to support a growing zucchini. Then I found the zucchini that were growing and not only are the female flowers smaller, they are attached directly to the tip of the growing zucchini, which grow from the base of the plant. So, there you have it. Leave the girls behind and pick the boys as soon as they open. Rinse them off, make sure there are no bugs inside and remove the stamens. Now they'...

Batch resize images with Squash
2008-04-03 11:53:00
While Photoshop can take care of any batch action needs you may have, few people know about these features and using a separate tool just for this purpose may prove to be easier and more productive. I read about Squash a few days ago on gHacks and I very much like both the interface and the features, although features maybe a bit stretching it, maybe feature would do better. Squash is simple, choose images, choose an output directory, choose a file suffix if you need it, set the size and that’s it. I am actually all for lightweight apps like this, simply built for this one purpose, in which it performs pretty well. I would appreciate a few added features like maybe choosing a file type, but otherwise the app is already fine, it is even available for Windows and Linux. If you need a simple tool for image resizing and don’t need any bells and whistles to go with it take Squash for a spin. _________
Day 4 - Great Big Squash Up - Baked Gem Squash
2008-04-03 08:10:00
At work I got chatting to Frik, a colleague who comes from South Africa. This is one of the many conversations that I now enjoy at work. Office gossip has taken on a whole new vegetable dimension. Frik told me how his mum would make a Gem Squash recipe when he came home from school. He now lives thousands of miles away in London but regularly makes Gem Squash for supper, a reminder of home. He described how his Mum would boil the gem squash whole for about twenty minutes, then cut them in half and scoop out the seeds. She would fill them with creamed sweetcorn, topped with cheddar cheese and bake them. I took notes. Then at home I brought his mum’s recipe to life, for my children. Freddie asked what was for supper. “Is there no meat or fish in this recipe?†But when they came out of the oven and he tasted it, he smiled. “Tell Fric this is really good. And tell him his squash recipe gets the highest score.†We are on a roll with the Great Big Squash Up! Baked gem squash w...
Day 3 - Butternut Squash Lasagne
2008-04-02 19:45:00
It is Day Three of the Great Big Squash Up and today's lunch, butternut squash lasagne, comes to us courtesy of Ed Bruske Lane from The Slow Cook. Ed lives in Washington DC, a mile from the White House. On his blog is his manifesto, like a protestor's placard, railing against all thats wrong about modern processed junk food. "Reject fast food! Reject waiting lists at over-hyped, outrageously expensive restaurants! Reject food out of season! Sit, eat drink. Enjoy good food made by caring hands. Enjoy food eaten slowly, in good company." Well with due reverence and with Ed's words ringing in my ears, I washed my caring hands and made this delicious meal. The recipe is over on his site and it won't disappoint you. Above is the before picture and below is the happy aftermath. Freddie and Alex both gave Ed's lasagne full marks, ten out of ten. The only trouble is we didn't really keep to the spirit of Ed's manifesto - at least the eaten slowly bit. This was consumed with indecent...
Day two of the Great Big Squash Up
2008-03-31 14:44:00
Tasting all the different roasted squash has given us an idea of all their individual qualities. Freddie liked the butternut squash best because it tastes sweet and it has a soft melting texture. The wrong texture is a big turn-off with fussy eaters. Smooth is good, stringy or bitty is bad. So I bought some more butternut squash and made a soup. Because it is so smooth, it makes a perfect soup. Freddie awarded this 8 out of 10. I am in danger of becoming complacent - all his scores seem to be high.Baked butternut squash and coconut soupServes 41 butternut squash2 sprigs of fresh rosemary50g sachet of creamed coconut1 litre of vegetable stock1 onion, chopped1 carrot, diced1 potato, diced1 garlic clove, crushed3 tablespoons of crème fraicheSalt and pepper to tastePreheat the oven to 180C. 2008-03-30 08:16:00
There is one family of vegetables that appear on market stalls and in the supermarkets like a collection of jewels. Mounds of brightly coloured squash compete for attention from the shopper. They do this in two ways; flaunting their flamboyant colours and muttering their elaborate names. The Red Kuri, also known as the Baby Red Hubbard, jostles with the yellow Patty Pan, Gem Squash, Golden Acorn, Turk?s Turban, Crown Prince and the Butternut squash. There are an overwhelming number of squash or ?Cucurbita?. During the Great Big Vegetable Challenge we have already singled out some family members such as courgettes, cucumbers and pumpkins. Alex and I picked out the most colourful examples and brought them home for the Great Big Squash Up.After a game of squash boules on the kitchen floor, two of them were singled out for special treatment. Freddie picked out butternut squash and acorn squash to make Spicy Roasted Squash. We added courgettes, baby corn and spices with the sweet flavour...
Butternut Squash Muffins with a Frosty Top
2008-03-25 04:11:00
Lisa made these muffins adapted from a recipe found in Jamie Oliver's cookbook, Jamie At Home. She cut the oil way down from the recipe, and nixed the walnuts (Whole Foods apparently didn't stick them in the bag), but they turned out pretty darn good just the same.Lisa says:"With a Frosty Top"? What a random name... why can't they just be called Butternut Squash Muffins?Chris says:'Cause he's a Brit... I hear they talk funny. Besides, it's not like a traditional frosting... it's a bit... goopier.Lisa says:It's almost as if you should dip each one in the frosting just before you eat it.Chris says:Well with all the extra frosting we ended up with, that's exactly what I'm doing.Lisa says:I love that citrus taste! Okay, if these stay in the house any longer they'll migrate directly from the kitchen into my mouth.Chris says:Looks like the folks at work are getting muffins tomorrow!Butternut Squash Muffins with a Frosty Top-------------------------------------------14 ounces...
Rimi Sen?s unfair game of squash

Who Knew? Spaghetti Squash Actually Resembles Spaghetti!?!
2008-03-15 16:03:00
For years, whenever I heard about spaghetti squash one thought came to mind: Gimmick. Labeling can be such bullshit; frozen bean burgers are said to taste “just like beef;” there’s an item on menus called “cauliflower mashed-potatoes” (which are good, but sadly not mashed potatoes); and everything is low-carb, low-fat, high-fiber, nutrient-enhanced, and made to ...

Right now we?re just really focusing on repairing the friendship. That?s the most important thing to me.? And what did the two old friends discuss in their first conversation in years? Not music, says Royce, ?We just been talking about intangible shit like movies, our favorite movies, just realizing how much shit we always had in common. That first conversation we had we talked for like two hours, just about everything. We did a lot of catching up.? What the two original ?Renegades? have rumored to have newly in common is a reunion track produced by DJ Premier, but Royce explains that a new recording session between the two has yet to take place. ?We haven?t really s...

Roasted Squash and Ricotta Pasta
2008-02-28 03:01:00
This is a dish I threw together out of leftover ricotta and squash that I didn't want to waste. My husband said it tasted a lot unhealthier than it probably was - and he was right. The part-skim ricotta and roasted squash combine to make a creamy, rich sauce that really sticks to the pasta. For an easy and delicious vegetarian meal, this is a winner. I hope you think so too! And of course, I'll submit this to Presto Pasta Nights.12 oz butternut squash, peeled and diced1 small onion, sliced2 cloves of garlic, peeledsalt & pepper1/4 tsp grated nutmeg1/2 cup part-skim ricotta6 oz whole wheat spaghettibaby spinach, about 2 handfuls2 tbsp pine nuts, toastedPreheat oven to 375F. Penne with Butternut Squash & Sage Pesto
2008-02-21 13:07:00
salutare/healthyIf you have stopped by sometime over the last couple of weeks, you read my mention about my new favorite Vegan Cookbook, Skinny Bitch in the Kitch: Kick-Ass Recipes for Hungry Girls Who Want to Stop Cooking Crap (and Start Looking Hot!) . Originally, I made the sage pesto for the recipe in this post, Penne with Butternut Squash & Sage Pesto. But first, I used the pesto this weekend and put it together a tasty Sage Beef with Feta & Tomatoes.I finally got around to making the penne and was a happy camper. Although I can only chew on one side (yikes), I cooked to pasta and squash long enough to be manageable. No aldente for me during this dinner...straight up mush. Ha!Not only do the flavors married very well in this dish, it is a healthy meal. How about some FYI info for you about sage and butternut squash? Some benefits and usage for sageFrom anti-oxidant/anti-inflammatory- action to memory enhancer (July 2003 issue of "Pharmacological Biochemical Behavior" conf...
Butternut Squash + Onion Lasagna
2008-02-20 16:00:00
It's funny how sometimes I'll do a bunch of food posts, so it looks like I'm cooking and baking all the time, but I'm really not and the posts are just spread out very well. Recently it's been kind of the opposite. By the look of this blog, you would think I haven't been doing much of either. I've made some good soups, done some baking and made this lasagna. I just didn't have time to make them, blog about all of them and do some other things as well. I remembered seeing Nupur's recipe here for Roasted Squash Onion Lasagna. Well, I took a few shortcuts with mine, because sometimes I just have to. I used frozen squash and it was not roasted. I only used one onion, a red onion specifically, because they are my favorite. I also used feta cheese in addition to the parmesan. When I made the Bechamel Sauce, I kind of faked the process, but it still worked. I used a combination of Half and Half, water, and vanilla rice milk. I think I was supposed to melt the butter and ...

Tasty Butternut Recipe - Squash Is a Healthy Dinner Vegetable
2008-02-18 21:08:00
This butternut recipe for squash is a tasty and healthy vegetable for your family meal. Butternut squash is a power food - an excellent source of fiber, vitamins, minerals and beta carotene and has been shown to have anti-cancer properties as well as other health promoting benefits.Unfortunately, we don?t cook butternut squash often and most people don?t know how to cook it properly. It is a very versatile vegetable, it can be cooked as a savory dish or sweet with sugar and spices. Most recipes that call for pumpkin can be made with butternut squash as well.Butternut Squash is a winter squash with a thick skin that helps to preserve it. Trimming away this thick skin is the hardest part of the recipe below. Many people don?t peel it, but halve it and roast it in the skin, scooping the squash out at serving time. For this recipe you need to peel the squash and cube it before roasting.Baked Butternut Squash Recipe1 large butternut squash (about 1 ? 1 ½ pounds)salt and freshly ground pe...

Quinoa with Butternut Squash and Carrot Stew
2008-02-17 00:22:00
Tonight we prepared this delicious, easy to make stew and quinoa dish, adapted from a recipe in Bon Appetit magazine. I'd never actually made quinoa before, and was surprised at its appearance before cooking -- it's a lot smaller than I thought. It plumps up nicely when cooked, and has a unique texture -- it's light and fluffy, but the germ separates from the grain and adds a slight crunch to each bite. Delicious.Chris says:This is one of my new favorite vegetarian dinners. I really like the taste of the spices with the squash and carrots.Abbie says:Mmmmmm! Yeah, what is that spice?Lisa says:There's a bunch of spices in there, but you're probably tasting the cayenne...Abbie says:Gives it a little kick!Chris says:By the way, butternut squash seeds look a lot like pumpkin seeds... Baked Acorn Squash with Mustard and Honey
2008-01-28 19:19:00
I just returned home from spending a fabulous weekend in Chicago. The company was amazing (my sister, her boyfriend, and some of the best blogger friends), and the food delicious. From cupcakes galore (there is a seriously ridiculous blog posting coming soon about this...possibly more than one) to sushi at Bob San and wine and cheese at Vintage Wine Bar, I was quite satisfied with my culinary experience. Friday night, me, my sister, her boyfriend, and his brother had dinner at my sister's before catching the evening performance of Wicked (SO good, go see it ASAP!). My sister's dinner menu consisted of pork with a delicious BBQ rub, whole grain rice (from Near East, best rice ever), spinach with garlic, and acorn squash. The squash? Baked acorn squash with mustard and honey. Um, amazing. You already know about my orange vegetable obsession, and this squash was incredibly EASY. And so so so good. Cut the squash in half vertically and scoop out the seeds and such. Place the halves ...
Butternut Squash, Leek, and Chickpea Stew with Lemon-Parsley Couscous
2008-01-28 19:07:00
This past weekend was another one that found me away from Baltimore. The bf’s friend invited us to his parents’ cottage in PA to go skiing, and, seeing as how I had never been, we jumped at the offer. We drove to PA Friday night, skied in the morning and afternoon, drove to DC in the early evening to go to my brother’s place to help him celebrate his birthday (for which I made an awesome cake which will be posted here in a few days), and then back to Baltimore late Saturday night. Not only did I not cook this past weekend, but I ate horrible food on Saturday – a frozen personal pizza for lunch and trail mix and Combos for dinner. Gross, I know. I can’t wait to get back into the kitchen this week and make some food that is not only real, but also really good.I made this stew a few weeks ago – it was inspired by this recipe that a friend of mine had made a few weeks back. I wanted my version to be more hearty and less gratin-like, so I decided to add chickpeas and l...
Maple Glazed Squash
2008-01-27 16:00:00
Winter squash is still going strong and my favorite of the bunch is butternut. It's smooth, not stringy, and lends itself well to sweetness and spice. If you're going to eat vegetables you might as well get some treat in there somewhere. This is really an easy way to prepare a healthy side dish. Love that beta carotene! One butternut squash2 tablespoons maple syrup2 tablespoons melted butterdash of saltdash of freshly ground pepperSlice the butternut squash lengthwise (this can be tricky, they're hard to cut but the smaller the squash the easier it will be). You can bake the two halves like that or you can also slice it crosswise so that you have pretty little rounds of squash--you decide. But however you slice it, scrape out the seeds and bake it at 425 for 35 minutes or until you can stick it with a fork and it will be soft, like a baked potato.Meanwhile, bring the maple syrup and butter to a boil then brush or drizzle the squash with the mixture before the last ten minutes ...

Squash With Sesame Seeds
2008-01-24 18:24:00
If asked about my most favorite cuisine on earth I would reply Indian for its variety and Korean for its terrific taste. Since there are many Indian places to eat around, when given a choice, I would go for a good spicy Korean.Since my Korean cooking abilities are quite unrefined, when Tompa went to Korea this autumn, I asked him for a nice traditional cookbook.
