Beef Fillet Steaks with Pepper Thyme Sauce
2008-05-30 10:33:00 I decided to have a treat the other night and buy some nice thick fillet steaks as we have not had a good steak in awhile. With all the food prices going up so dramatically this one-two time a week enjoyed cut of beef has now become one-two time a month affair, here's hoping food prices come down again soon. This is a simple recipe that pairs well with steak and does not require lots of effort, feel free to serve this with a cheaper cut of beef or with your favourite cut.If you have been keeping up with the progress of my beautiful handcrafted camphor laurel chopping, cheese boards and Mezzaluna Boards. Peppered Fillet Steaks with Creamy Bourbon Sauce
2008-05-14 08:40:00 This is a lovely recipe it is easy to make and the sauce goes so well with the steaks. I have not cooked steaks a lot recently as they have put the price of fillet up so much at the grocery store. I found some the other day that was still the same price as usual so I thought I would have a treat. They were so good I did buy a big chunk of fillet, so I could cut it into really thick steaks as I love them. I served mine over spinach and cauliflower mash and it was just right, you can find a recipe for cauliflower puree under alternative mash recipes, that I served with trout. If you have seen my recent post on my cheese and cutting boards you will know I am about to go live with my official website shortly. So I am going to be posting pictures of some of the range of boards I currently have in stock, just to give you an idea on the beauty of them until I can post my web address. If you want more information on them go to Chopping and Cheese board Ingredients 4 Beef fillet steaks (I am...

Jim's And Pat's Have Better Steaks Anyway
2008-04-09 17:51:00 (A local Philly thing coming up, just to let you know?).I don?t know about you, but I?ve just about had it with Joey Vento, owner of Geno?s, a steak sandwich shop in South Philadelphia. The Philadelphia Inquirer reports here that Vento won his case against the city of Philadelphia in which he was asked to take down the sign outside of his establishment that said ?This is America. When ordering, please speak English.?(Of course, there?s the issue of whether or not ?English? is a proprietary language of this country or Great Britain since there are subtle differences between the two, so Vento really couldn?t claim English as a wholly American language anyway, or at least imply that?but I digress.)Apparently, though, merely emerging victorious is not good enough for Vento, who??yesterday demanded a revision of the Commission on Human Relations' practices. If nothing is done, he said, he will sue. Also, he wants an apology from Mayor (Michael) Nutter.Vento said yesterday he was insulted...
Saucy Roquefort Cube Steaks
2008-03-25 20:20:00 What is cube steak? It's thin slices of beef round, usually the bottom round, that have been machine-tenderized. The machine pierces the meat to make it tender. You can also tenderize cube steak by pounding it with a wooden malot or metal tenderizing hammer.Cube steak is a confusing term because the meat isn't cut into cubes. According to the Good Eats Web site, the term "was probably coined because it sounds better than 'perforated meat.'" The Answers.com Web site describes cube steak as a flavorful cut of beef. "Cube steak would be too tough to eat without being tenderized," the site notes.Chicken fried cube steak is a Southern specialty. The meat is dredged in seasoned flour, dipped in beaten eggs, dredged in flour again, and fried in lard. After the steak has browned it is simmered in buttermilk gravy. Health-conscious cooks are finding new ways to prepare cube steak. The Epicurious Web site has a recipe for Braised Cube Steaks with Orange. It combines four appealing flavors...

Steaks for dinner
2008-02-10 00:00:00 Yep you read that title right. We had steaks for dinner this evening. We had them the only way I will serve them at home too. Oh yeah, I am talking off of the grill. Just how did you do that in the mist of winter and with three inches of snow on the ground, you are asking? It may be bitter cold out side tonight but my husband was smart enough to get out his construction heater and warm up the garage to be able to stand outside near his Webber and grill us up a few delicious steaks. They were awesome by the way! Buying that construction heater was such a good idea. He picked it up when he shopped around for our basement heater. Now that our basement is being furnished we are ready to upgrade. I am thinking of some thing much bigger, and a lot nicer then what we have, maybe like a firebox or fire place, there are so many great vent free haeters to chose from now. DSEA offers an exciting selection of ways to heat your house, shop, or garage. Check out their web site for more det...

2008-02-08 10:00:00 I made this the other night as an experiment it was so good, very rich and full of flavour, I am sure it is not to everyones taste, but my self and my husband loved it. The fillets were so juicy and tender and bursting with flavour, becuase of the size I did have to cook for about 20-25 Min's for medium rare.Ingredients4 Steak fillets (200-250g each I was a little piggy on the weight as you can see from the photo.)160g Fois gras pate (40g cut round slices to top each steak.)SauceOlive oil1 Shallot, chopped finely1 Cup Madeira wine2 Teaspoons beef stock granules (Mine is quite hearty, so adjust for taste with the brand you use.)1/2 Cup water2 Teaspoons French mustard3 Tablespoons morels, chopped finely1-2 Teaspoons cornflourPotatoes Au Gratin Dauphinois1Kg Potatoes, sliced into thin slices2 Cups milk2 Cloves garlic, smashed11/2 Cups Gruyere chee...

2007-12-15 07:18:00 I adore bison, it so low in fat and good for you and has a wonderful taste. Ostrich Fillet Steaks with Cafe De Paris Butter
2007-11-13 09:44:00 This sounds like a lot of work but it is very easy and tastes great over grilled meats. I put this on beef, bison, lamb it is delicious without overpowering the natural flavour of the meat. Cafe De Paris butter can be stored in the freezer for months (not that it lasts that long in our house) so don't worry about the recipe amount.I made this last night as I was out of cafe de paris butter and I was only cooking 2 ostrich steaks. It is great because once you've made it, you have it on hand any time your grilling meat and want something quick to go with it. I would say as an estimate it would be enough for 8-10 steaks depending on cut, by that I mean you will use more for a big T-bone than a fillet medallion.4 Ostrich steaks, 175-200g eachFor the Butter500g soft unsalted butter30g tomato ketchup1 Tablespoon Dijon mustard1 Tablespoon capers2 Shallots, Chopped20g curly leaf parsley, chopped20g chives, chopped1 Teaspoon dill1/2 Teaspoon marjoram5 tarragon leavesPinch of ground dried r...

Marinated Bison/Buffalo Steaks with Sauce
2007-11-03 09:40:00 I have never cooked bison before, but the local supermarket has been selling bison, wild boar, ostrich and many other game. I came home and asked my husband if he had tried it, he said he had had bison burgers once and said they were gorgeous. Since I was not about to mince up 2 nice looking steaks I went on line to find out how to cook it. It is pretty much the same as steak except slightly lower temperatures as it is very lean meat and you can over cook it. Anyway I cooked it last night and it was very good, I have also bought ostrich steaks, so keep checking for my post for that. I have cooked ostrich several times and I really like it.IngredientsMarinade 11/2 Tablespoons Dijon mustard1 Dessertspoon Thai fish sauce6 Sprigs fresh thyme2 Cloves garlic, crushed1 Tablespoon olive oil1/2 Cup dry white winepepper to tasteSauceOlive oil11/2 Tablespoons shallots, finely chopped1/2 Cup dry white wine11/2 Teaspoons balsamic Vinegar1 Teaspoon Chicken stock, concentrated ( powder, cube, past...

Tuna/swordfish Steaks with Thai dressing
2007-10-12 08:59:00 I have listed both tuna and swordfish steaks, as both fish work really well with this recipe. This is so quick to make with absolutely no effort but tastes great. It is a very light, healthy meal, so great if your counting calories or carbs.Ingredients4 tuna or 4 swordfish steaks ( swordfish steaks can be huge so you may want to buy 2 and cut in half if they are of a generous size.)1/2 Cup sweet chili sauce1/3 Cup lime juice1 Tablespoon fish sauce2 Teaspoons lemongrass, finely chopped1/3 Cup fresh mint, finely chopped2 Tablespoons fresh coriander, finely chopped1 Teaspoon grated fresh gingerMethod1. Heat an oiled pan, add fish and cook 3-4 Min's a side, or until cooked as desired. Tuna steaks are better pink in the middle and not overcooked, as they tend to become dry and quite tough.2. Combine all the other ingredients in a jar and shake until mixed.Note. you can adjust sweet chili and lime juice amounts e.g. more or less of each depending on your taste. To serve place fish on plat...

Pepper and Garlic-Crusted Tenderloin Steaks
2007-08-29 00:50:00 Tonight's meal was extremely easy to throw together - Nick called it "Rachael Ray's Amazing 20-Minute Meal" haha. The recipe I used for the steak was an adaption from Cooking Light, and I served it with wild rice pilaf (nods to Uncle Ben) and steamed asparagus.I didn't pepper my steak (just used garlic) because I used to have a pepper allergy which I have outgrown, but I still don't do well with it in large doses. Nick still said that his was too pepper-y and he would cut back on it next time.Otherwise, two thumbs up!Pepper and Garlic-Crusted Tenderloin Steaks(Adapted from Cooking Light)1 teaspoon black peppercorns1/2 teaspoon salt3 cloves garlic, minced2 (8-ounce) beef tenderloin steaks, trimmed2 teaspoons olive oil2 teaspoon butter1/2 cup beef broth1 teaspoon cornstarchDirections:Place peppercorns in a small zip-top plastic bag and seal. Tripping Balls and Cooking Steaks
2007-07-26 23:20:00 This truly has to be one of the funniest stories of my college career. I can stil barely gather any sort of focus as I recount last night's events so I can submit this fuckin story. This is probably why I'm broke and on the 5-6 year college plan.Still hungover as FUCK from the night before, my friend/roommate managed to wake me up in order to figure out if he could use my bag so he could go the gym.
