What is Stevia?
2008-05-22 00:19:00
Sweet Lucee commented a great account regarding the many health benefits of the stevia leaves: antioxidants, its uses as a sweetener, its effects on lowering blood pressure and many more. Her comment was very informative that it prompted me to write a post about it. Below is an excerpt of her comment" "What is Stevia? Stevia is one of the most health restoring plants on earth. What whole leaf Stevia does both inside the body and on the skin is incredible. Native to Paraguay, it is a small green plant bearing leaves which have a delicious and refreshing taste that can be 30 times sweeter than sugar. Besides the intensely sweet glycosides (Steviosides, Rebaudiosides and a Dulcoside), various studies have found the leaf to contain proteins, fiber, carbohydrates, iron, phosphorus, calcium, potassium, sodium, magnesium, zinc, rutin (a flavonoid), true vitamin A, Vitamin C and an oil which contains 53 other constituents. It is Healthy Snack and Food Month at ButYouDontLookSick.com! I am admittedly a diet soda junkie. I drink a few glasses a day and although I know it is not the best thing for me to drink, I enjoy it and miss it when I do not have a diet soda. I do not want the calories of regular soda, so what were my options? When I heard about Zevia I was anxious to try it. Click to read more ...

Antioxidants Can Be Found in Stevia Leaves
2008-01-18 17:33:00
The leaves of Stevia which is said to be 30 times sweeter than sugar also contain antioxidants such as vitamin A and vitamin C. Aside from that, flavonoids such as quercetin and kaempferol can also be found in the leaves which adds to its potency as an antioxidant. It's available as an extract and many countries including Paraguay, Japan and China use it widely not just as a sweetener but also for medicinal uses like aiding in digestion. Diabetics can greatly benefit from using stevia as a sweetener with an antioxidant punch. A study from India indicated that the antioxidants in stevia can prevent oxidative damage to the DNA. Stevia - Der Zucker & Süßstoff ersatz
2007-10-24 17:40:00

Stevia Blues?
2007-07-13 18:24:00
How ironic is life? First, a certain vegetarian cookbook author learns half way through the recipe testing for her second cookbook she has gluten intolerance [and for someone who kneaded and baked her own rustic breads and focaccia - from scratch - every week, this was tough, Babycakes]. So she decides to blog her gluten-free recipes during her healing process. Gluten-Free Goddess is born. Tasty fun ensues. Then she learns she has milk and soy and egg and nut and citrus and peanut/legume and sunflower allergies [not to mention fowl, avocado, pineapple, papaya allergies]. So she gets a little gloomy. She chomps a lot of brown rice and carrots and salad greens. She whips up blueberry smoothies sweetened with stevia thinking she is smart and healthy and savvy. But something is still off. Something is not agreeing with her.Now what? she pleads to the Universe [not expecting an answer, simply posing a legitimate question].She turns to her husband who is sitting at his computer, hammering ...

Want to cut back on sugar and still be ?sweet?? Try stevia
2007-06-23 20:19:00
Even if you watch your diet religiously, you might still have a sweet tooth. I do, and try to fulfill it with healthy foods instead of ignoring it altogether. I used saccharin for several years, but of course it leaves a funny aftertaste and there are doubts about its safety, so I switched back to using sugar and just tried to be as sparing with it as possible. Then I discovered stevia. This wonderful herb is actually slightly caloric rather than completely non-caloric, but is something like 600 times sweeter than sugar so that you can use very little. It does not promote tooth decay and in its unrefined form can even help stabilize blood sugar and act as an anti-fungal. Its unrefined (liquid) extract tastes very much like black licorice, so I only use it in coffee and tea, not in cooking. The refined stevia has no health benefits to speak of but tastes exactly like sugar, in my opinion. It?s very, very sweet, so must be used sparingly and mixed very well in whatever you?re using it i...
