I had steamed the shrimp up the night before to help save time and made the pico de gallo during the afternoon. This helped so much in feeding everyone at a decent hour! To make the shrimp all I did was steam them in some water with a little beer mixed in. Them set them in the fridge to cool until the next night. For the pico de gallo I really didn't have a recipe. I cut up a white onion, probably about 10 campari tomatoes (they were the ones that were going to go to waste 1st) seeded (just cut them in halve and squeeze the seeds out), 1 jalapeño pepper finely chopped, 1/2 of a bunch of fresh cilantro (roughly chopped), salt, pepper, juice of 1 lime and garlic powder. We really love fish, I just have trouble thinking of different ways to prepare it. This is a quick and easy preparation for mahi, but you could use another white fish, such as tilapia too. I really love mahi for the firm texture and the fact that it's very low in calories :)To make fish tacos, start by placing your cleaned, skinned fish filets in a baking dish. Cover with a few tablespoons of soy sauce, and the juice from a lime. Let marinate for a little while (30-60) minutes. Remove fish from marinade, and season with salt, pepper, and your choice of spice rub - I used a premade southwest seasoning. I cooked the fish for a few minutes on each side in my grill pan, and prepared the tacos in corn tortillas with peach salsa and cilantro. A side of sauteed spinach and garlic rounded out the meal.

I write this review with a heavy heart as I feel like I am the only one who likes the Tacos and Burritos at Tacos Mexico.Tacos Mexico is a chain of fast food authentic Mexican Restaurants that are located in California and Nevada. As you walk into Tacos Mexico, you may notice the red floor tiles and red furniture and the stainless steel counters and fixtures as lacking much of a personality. Theres your typical jukebox and late 90's arcade machines, gumball machines, and sticker dispensing machines featuring Rebelde. But what I come here for is the Carne Asada Tacos and the Carne Asada Burrito. These aren't your usual fast food fare loaded with melted cheese and guacamole. No these are your basic soft tacos and burritos and to me simple is best. The Carne Asada Tacos start with your lightly fried corn tortillas, just barely spending time on the grill.
