Hailing from France (mais, oui) it is a triple crme cheese with a soft rind and a butterfat content of 70% - rich, indeed.St. Andr triple crme cheese - just starting to soften at the top, if left at room temperature for 20 minutes it will become soft and very spreadable.It pairs perfectly with several light beers and is perfect for spreading on a French baguette. I decided to do something a bit more decadent and designed this dessert tart using this truly luxurious cheese. The crust is very tender and delicate and the filling was perfectly done - not too set, just right. I may make this again with cream cheese replacing the ricotta. Clear Unscented Glycerine Soap1 Tablespoon Liquid Soap1 teaspoon Liquid Glycerine1/2 teaspoon Apple Fragrance Oil**2 Drops Red Food Color1/2 teaspoon Ground CinnamonDirections:- Melt soap in small pan over low heat or in a glass cup in the microwave.- Add Liquid Soap and glycerine and stir gently but well.- Add fragrance, color and cinnamon.- Stir and let stand a couple minutes, just enough to start tot hicken so when you stir again the cinnamon will be more evenly distributed.- Pour into molds. Last night we were out for a bring and share dinner, and this gave me a good oppurtunity to make something a bit more "summery", I decided to make a pudding. As we had some pastry at home I decided I would make a fruit tart. The filling is a mixture of cream cheese, icing sugar, vanilla and gelatine (to make sure it set). For the fruit topping I went to Leicester market to see what looked good and found some nice strawberries and blueberries. So I set to work, first I rolled out the pastry and lined a pastry tart dish, I then blind baked it, left it to cool, spread a thin layer of dark chocolate across the bottom and poured in my filling. So, for Zorra's event, A Heart for your Valentine, I decided to combine both!This one dessert, a Orange Chocolate Tart, is really a compilation of many. The dough is from the same batch as the Blackberry Tart, which is a chocolate version of the Lemon Meringue Pie dough.The original ganache recipe comes from a Fine Chocolate Tart, a decadent dessert from the pages of Tarts. I made the original recipe in the fall, but tweaked it this time to fit my vision.
