[I've decided to offer a mini-post every once in a while, for a dish that comes together incredibly quickly, or else is so easy to make that no recipe is required.  Here's today's "Flash in the Pan."] [Non-salsa version] Oooh. . . I’m feeling the crunch.  I wish I could say that’s the “crunch” of a lovely rice crisp-filled chocolate bar or the crunch of ice in a gin and tonic as I lounge by a pool, or even the crunch of my feet as they traverse a lovely woodsy trail with The Girls, but no; the crunch I am experiencing is the crunch of marking as the semester nears its end.  And now that we’ve reached this critical juncture in the term, I’m afraid I won’t be able to post as often as I’d like, at least for a couple of weeks. This is another quick recipe and wants to look and taste like the italian ricotta and pomodorini pasta. Once it's on your plate you won't tell the difference.Ingredients:wholemea-l small pasta, I used orecchiette or gnocchetticherry tomatoesOlive oilBasilFor the white ricotta sauce I used a herby spreadable tofu but you can make your own if you wish.Process the tofu with herbs, water, oil and a few capers if you like them. I absolutely love the logo and idea of Susan´s Beautiful Bones event. As paying attention to calcium was crucial during my vegan years, I am particularly happy to participate in such events.This fresh dip is a great choice on those mornings, when you have to go to work, but first to the post office and make a phone call, pay the rent and definitely do not have time to cook lunch or even think of cooking. I am always on a constant hunt for genuine ethnic recipes. So each time I go to a library or a store I am trying to grab a cookbook that would justify this hunger. I was pretty lucky on my last trip to our library discovering a cute little book on Nepalese cooking. I have tried several recipes so far, all of them yummy and spicy, somehow an interesting fusion between Chinese and Indian cuisine. hi! I'm back again - finally. I called this Italian because it has the common combination of garlic, rosemary and olive oil. And it's simple as most of italian food is.Method:Slice the Tofu and place on a wide serving plate for one hour with all these ingredients:Enough Soy Sauce to cover the slices evenly (not exactly italian but, nevermind)Extra-virgin olive oilFinely chopped fresh garlic.Wait half an hour add more soy sauce if necessary, turn and reapeat on the other side.Cook in a frying pan with a little more oil (if necessary) until golden brown and nice and crispy.Simple but very tasty :) try it!

Here's a recipe for a healthy light soup. It is quick and simple.Ingredients:8 ounces of soft tofu (cut into little cubes)baby spinach1 ounce dried seaweed (wakame)2 quarts chicken or vegetable broth1 teaspoon sesame oil1 teaspoon minced garlic2 tablespoon minced gingersalt and pepper, to taste(some sliced shiitake mushrooms would also be great)Directions:Soak the dried wakame seaweed in a large bowl of water for 20-30 minutes to rehydrate them.In a pot, heat the broth. Our colleague wanted to share a beautiful bottle of  shaouiu (Chinese whisky), so mi marido and I hosted a small dinner party. Because the centerpiece was the shaouju, I made several of typical Japanese bar food like rice balls, pickled veggies, cucumber sticks with spicy miso dip, savory pancakes, and edamame salad (which was the best I can do to pair with this particular drink I hadn't had).I wanted to make something with a package of the high protein organic tofu from Trader Joe's, so here it is. Het is een heerlijk voorgerecht of bij de paasbrunch Je kan dit een dag van te voren maken .Broccolitaart met tofu reepjes Ingrediënten350 g broccoli 250 g bloem 2 theelepels bakpoeder 150 ml droge witte wijn 5 eieren, losgeklopt 1 pak tofu reepjes 125 g gruyère (kaas), geraspt 3 eetlepels olijfolie extra vierge BereidenVerdeel de broccoli in roosjes. Kook of stoom deze 1 minuut. Zeef de bloem met het bakpoeder in een grote kom. Maak een kuil in het midden en giet daar de wijn en de losgeklopte eieren in. In my last post Lunar New Year Food (Vegetarian Style) I showcased the Berry Mix Tofu Cheesecake. It uses tofu and soy cream cheese as the main ingredients and was topped with strawberries, blackberries, and blueberries. Previously, I had also posted a recipe for a Blueberry Tofu Cheesecake that utilized tofu and soy milk instead. I usually bake the cheesecake with soy cream cheese and tofu. Saturday afternoon, a friend and I lunched at a quaint cafe in a local trendy suburb--Angel's Cafe in Ferndale, Mich. I attempted to eat at this cafe once before; a vegetarian friend and I stopped by this cafe in the fall, only to find they were closed to the public due to a baby shower event. That day, we ended up walking two doors down to a music cafe which served vegan food, so all was good. Still, my interest in the Angel's Cafe was piqued and I mentioned it to my maid-of-honor as a possible bridal shower location (since I knew they did showers now) where my guests could dine on animal-friendly food! Gisteren weer een vorkje geprikt met een paar bestuurders .Vandaag weer lekker zelf iets maken .Gebakken kerrie tofu Ingrediënten1 pak tofu 2 el olie 1 el hot curry 1 el uienpoeder 1 tl Chinese 5 spices BereidenSnij de tofu in plakken van 1 cm breed .Doe in een kom de olie en de kruiden . Meng het goed door elkaar.Haal de plakken door het mengsel .Doe alles in de kom met het mengsel en roer alles er nog eens voorzichtig door en strooi er nog wat hot curry over .Bak ze op een matig vuur mooi goudbruin .Geef er mie en sperziebonen bij .
Safeway to consume some soy getting your tofu to market

Nation grocery store chain Safeway has announced that they have converted their entire distribution truck fleet to running on biodiesel. The company has over 1,000 trucks in their fleet, all of which are now fueled with biodiesel. Safeway estimates that the move will cut the cumulative carbon dioxide emissions from their fleet by over 75 million pounds a year. Over the last few months, a lot of tofu has been cooked - marinated in a variety of sauces, sauteed with a plethora of spices, baked into crispy bars ... and pretty much every single option has been extremely palatable. I'd love to think I had something to do with it, but the truth is that tofu is the ultimate sponge! Here's a recipe for a vegan dessert. In the past when I attempted to bake a tofu cheesecake, I used soy cream cheese, which is often available at selected groceries and health food stores. Tofutti makes a good dairy-free cream cheese that is available at Gristedes Supermarket. This time I tried an alternative and simply used silken tofu and soy milk.Ingredients:1 (12 ounce) package of soft tofu1/2 cup soy milk1/2 cup sugar1 tbsp vanilla extract1 (9 inch) prepared graham cracker crustsplash of lemon juice1 tbsp of arrowrootcup of fresh blueberriesDirections:Prepare the pie crust from scratch ahead of time, if desired. Otherwise, purchase pre-made pie crust. The weather continues to annoy me, what with all the grey and gloom and snow and slush.  Too much shadow (and so I take umbrage at the weather. Bah.) The fever finally broke last evening, leaving me with a seriously stuffy head and a congested chest. Not so fun, but a major improvement from the sweats and chills (gross). This dairy-free cottage cheese is great in salads, with fruit, on bread, or all by itself. 14 oz. box medium firm or firm tofu 1 clove garlic, finely chopped or 1 tsp garlic powder 3 T. olive oil 1 tsp salt (or to taste) Mash tofu. Here's one of my favorite dishes that my mom makes. It's a pretty simple dish, but is definitely very tasty. I don't know the exact recipe for here's the essence of it.There's three basic ingredients:Minced porkPreserved mustard greensFirm tofu.The preserved mustard greens usually come in refrigerated packages and can be found in most Asian supermarkets. It is chopped into bit-sized pieces and mixed with the minced pork. Salt, sugar, sesame oil, and soy sauce is added to the mixture as a marinate. Refrigerate the meat mixture or let it sit for an hours or so.The tofu is sliced into rectangular blocks about an inch thick. It's placed onto the bottom of a medium sized bowl, about 2 inches deep. The uncooked meat mixture is spread over the tofu, covering as much of the tofu as possible. Everything is then steamed.As it steams, the juices from the meat mixes with the moisture of the tofu.
