This is my brother and I, circa 1975. We are standing in front of my Aunt and Uncle's pale blue Volkswagen Camper Van. It is probably mid-summer which is why we are wearing the essential English holiday attire of a thick arran sweater, shorts and wellington boots. In the background my Aunt is stirring a tin of tomato soup over the VW gas stove. Everyone should have a tomato soup memory. My aunt and uncle were responsible for providing me with a whole album full. I would visit them during the school holidays. Maybe children remember things in a different way to adults but I can recall the smell of my aunt's house; a combination of cooking gas and Imperial Leather soap. When we were on vacation last week, I had tried a couple of interesting cobbled together creations. Well, we had this condo with a really well equiped kitchen so I felt that it would be quite a waste not to use my time at least doing what I so love doing, - cooking. However, naturally since the supplies in terms of spices etc were minimal these turned out to be different from what I might have otherwise done. Time: 15-30 minsIngredients:1 Kg tomatoes 1-1/2 tsp butter Chopped garlic (3 tsps)A small piece of ginger chopped 1/2 a chili chopped Coriander leaves chopped (handful)Basil (for taste)1 tbsp light creamSalt as per tasteMethod:Puree the tomatoes and keep aside. Heat a vessel on medium flame. Add butter and then add chopped garlic, chopped ginger, chili and coriander leaves and sauté until it emits a nice aroma. Add the pureed tomatoes and let it simmer. Add some water if required. Now add basil leaves and salt according to taste. When it boils, remove the vessel from the stove and let the soup cool. After the soup cools, strain the soup. 2 bacon slices, chopped 1 onion, finely chopped 1 carrot, thinly sliced 1 stalk celery, finely chopped 1 X 14 oz can peeled tomatoes 3 cups water or stock bouquet garni 1 tablespoon cornstarch 2/3 cup milk fingers of toasted wholewheat bread Fry the bacon in a large pan until the fat runs. Add the onion, carrot and celery, cover and cook gently for about 10 minutes. Add the canned tomatoes, water or stock and bouquet garni. Heat to simmering point, then cover and simmer gently for 20 minutes. Remove the bouquet garni. Cool slightly, then puree in a blender  and finally pass through a sieve (strainer). Return the soup to the pan. Blend the cornflour (cornstarch) with a little of the cold milk, then stir into the soup with the remainder of the milk. I’ve been really sick the past few days, so I haven’t had the energy to cook. Last night I really wanted tomato soup and grilled cheese – my comfort food when I’m sick and feverish – but I didn’t have any so I had to make it myself. I'm continuing my "lazy cooking" theme this week by jazzing up one of my favorite foods: cream of tomato soup. This particular dish is so easy yet it impressed an omnivore, too!I began by making elbow macaroni. I know I could've done without the pasta carbs, but to me, cream of tomato soup just isn't cream of tomato soup unless it has elbow macaroni in it! LOL While the water was boiling for the pasta, I opened a standard can of condensed tomato soup. Instead of using water, I mixed in one can of plain soy milk with the soup. I mentioned yesterday that I was saving leftover diced canned tomatoes and its juice from the tempeh dish I had prepared. I dumped those diced tomatoes and juice into the soup and stirred well. Then I added in some dried basil, oregano and a bit of rosemary to taste and heated the soup on low while the pasta cooked. I added my preferred amount of pasta to the soup and voila! There are sometimes or should I say many times, when both feel very lazy to cook. We crave for home made food and yet too lazy to budge from a couch.
