I decided to make Sage Beef with Feta & Tomatoes. While preheating the oven to 500 degrees, I seasoned the meat with salt, pepper, and Essence (one of my staple seasonings - if you haven't noticed). Then, I lined a pan with foil, forming foil walls to help with splattering, and roasted the meat. Cooking time? Five minutes for each pound, plus 5 extra minutes at the end. My elder son - he cooks as John Kabys - had a movable holiday. So we had a lot of time to modify the recipe from page 30 of the Essential Pasta Cookbook, Spaghetti with herbs and tomatoes for Ruth's Presto Pasta Nights. The homemade pasta recipe is always the same: 300 grams flour, 3 eggs size M and 1/2 teaspoon salt. Place eggs, flour and salt in mixer bowl. Attach bowl and flat beater. Turn to speed 2 and mix until crumbly. To test for correct dough consistency, pinch a small amount of dough together after mixing with the flat beater. If the dough stays together without sticking your fingers, it should work well. Remove dough from bowl and knead by hand for 1 or 2 minutes. Divide dough into 5 pieces before processing with the roller attachment. Roll out pasta and cut into into desired shape. The inspiration behind its creation is a Moroccan fish tagine I made a while back (tagine is the word for both the cooking vessel and the spiced stew cooked within). A while back I posted a recipe for vegan cilantro pesto and I've been having fun finding new ways to use it. Recently I stuffed cherry tomatoes with it and really liked the results. Ingredients 12 cherry tomatoes 2 cups loosely packed cilantro (stems removed) 2 tablespoons slivered almonds 2 tablespoons vegan parmesan like Parma (or regular Parmesan if you prefer) 2 tablespoons olive oil 2 tablespoons lemon juice 2 cloves garlic 2-4 teaspoons water (depending on desired consistency) 1/4 teaspoon sea salt Directions Blend everything but the tomatoes in a food processor and blend until smooth. Use more or less water to get the thickness you desire for the pesto. Cut cherry tomatoes in half and scoop out the insides with a small spoon or melon baller. Aloo-Gobhi sabzi (Potato-Cauliflower Vegetable) happens to be one of my favourite vegetable combinations. There are so very many ways in which this vegetable combination is cooked and dished out. Yet it is only in winter that one gets the opportunity of enjoying it in this fragrant curry form. Primarily because this recipe uses loads of Dalchini or Cinnamon. Cinnamon which is an essential spice in Indian cooking, is regarded by Ayurveda as a warming spice. It is, in general, used in combination with other spices that complement its flavour and often in its bark form. Also it is used to flavour savoury vegetables and meats from the main course rather than sweets and desserts! Cauliflower curry with cinnamon is a perfect example of this. Stewed tomatoes were first marketed in the the late 1940's, but prior to that folks put up their own stewed tomatoes in preserve jars in order to have the availability of tomatoes during the winter months when they couldn't grow them for consumption.  This recipe was given to me a few years back by a bartender in Montauk which is out on the East End of Long Island.  His name?  It remains lost in a fog of time and vodka.  I do remember this-- his version called for a bit more whiskey than what I use here!Ingredients:
