How to Cook Everything Vegetarian is 996 pages of every little thing you would ever possibly need to know about vegetarian cooking - and then some.In his usual casual and non-preachy style, Mark Bittman shares the basic, the not-so-basic and everything else in this fabulous all-you'll-ever-need-to-cook-ve-getarian resource. It's not wordy, fluffy or filled up with extras; just straightforward and honest.There aren't any full-color photos, but rather simple and effective line drawings placed throughout the book to help demonstrate techniques. I know it's hard to believe such a large book could in any way be simple, but it is. It's not more than you need to know, and certainly not less. Oh, and the recipes? Delicious; as expected.In summation, just two words: Get it.

I crumble and sautee tempeh with onion--and then add it to a black bean-chipotle chili with cumin, red pepper, several cloves of roasted garlic, and a three or four cups of diced tomatoes. I got the basic recipe from Mark Bittman's How to Cook Everything Vegetarian, and it's one of my favorite ways to use tempeh. The tempeh and chipotle combination makes it really smoky and deeply flavored.

If you are like me, sometimes you get really excited about that and can’t help but scoop up big bunches of fresh herbs when you see them at the Farmers Markets or the grocery store. Then you end up throwing half of them away after they have sat rotting in your fridge for days on end…well that is just no good. Herbs are a wonderful way to get more greens into your diet and many of them also have other health properties - not to mention they improve the smell of ones breath! So what does one do with an over abundance of herbs? On a recent trip to the Farmers Market I procured rather large bunches of Arugala, Basil, Mint and Dill. I have to admit until today I always used pearl barley for the Whole-Grain Barley Bread With Barley Grits, I never cooked with it. Barley is rich in minerals, including calcium, iron and potassium. 2008-04-16 18:02:00 Spinach and mushroom make for a wonderful combination. And with whole grain rotini, the taste is almost heavenly. This is one of my favourite recipes, one I created on one of those long winter evenings when I had a craving for a hearty yet healthy meal!! I am sharing this with all pasta lovers via Presto Pasta Night, hosted by the lovely Ruth.Ingredients:3 cups whole grain rotini1 cup frozen spinach1 1/2 cups mushrooms, sliced1 medium onion, sliced2 cloves garlic, crushed1/2 cup milk1 cup vegetable stock2 tbsp low fat cream cheese1/4 cup pepper jack cheese, gratedParmesan cheese, shaved1 small green pepper, sliced1 tbsp olive oil1 tsp cornflourSalt, to tasteBlack Pepper, freshly groundMethod:Boil the pasta as per instructions on the packet in plenty of water and 1/2 teaspoon of salt.Heat the oil in a large heavy bottomed saucepan.
