Baked Figs with Honeyed Goat Cheese and Walnuts
2009-02-07 14:03:00
Here’s another one from Thanksgiving – I know I’m totally behind, no need to remind me.Since I’m feeling lazy (which is not really news, I’m generally fairly lazy, I don’t quite understand how I can be both lazy and hyperactive, but I am), there’s no story on this. It just sounded like a good idea at the time, and it worked out really well (phew).---------------Baked Figs with Honeyed Goat

NICE & HEALTHY OATMEAL WALNUT COOKIES...& a nice award too!

"We load up on oat bran in the morning so we'll live forever. Then we spend the rest of the day living like there's no tomorrow."Lee Iacocca OATMEAL CHOCOLATE-CHIP WALNUT COOKIESWhile I was making these cookies the other day, the son was very intrigued by the 'new ingredient' on the counter. Told him it was oatmeal, a wonder grain with the power to give sustained release of energy the day through, healthy & full of fibre etc. He gobbled a couple & then later on, that night, told me that he ran well that day & felt great...'Must be the oat cookies Mama!' . These cookies are crisp, delicious & healthy.Rolled oats are made from the oat groats that are extracted from the oat grain & are often considered to be an excellent choice when it comes to a healthy diet. In general, oatmeal made from rolled oats is understood to help reduce the amount of bad cholesterol in the bloodstream. Recipe: Gorgonzola, walnuts and swiss brown mushrooms fettucine
2008-02-24 22:57:00
The South Melbourne market is a great place to find fresh vegetables, Asian groceries and lovely delicatesan foods. If I’m looking for a particular ingredient, it’s not hard to find over there. Don’t get me wrong, we have some other great markets here also including, Footscray, Victoria and Prahran markets. I’ve been to all and I believe these are just as good for fresh fruit and vegies! South Melbourne is just the closest for me at the moment! Moving back to the recipe, I found the Gorgonzola in one of the better delis. In fact, it was the only one I found that had their cheese in their own walk-in fridge there. This to me, means the cheese is better looked after and went about purchasing enough for two to three people! Gorgonzola would have to be one of the most stinkiest and strongest biting cheese around. When cooking, remember you don’t need a lot for flavour - too much will definitely make the dish a little rich and possibly unbearable near t...

COFFEE WALNUT COOKIES...Heavenly beans!!
2008-02-20 14:22:00
"Behind every successful woman is a substantial amount of coffee."Stephanie PiroWALNUT COFFEE COOKIES... Yesterday was a busy day; I loved it. I made these scrumptious coffee cookies & a 'Citrus Olive Oil Cake'...both from Cafe Fernando's. This yummy food blog has the most beautiful collection of recipes & lovely pictures. More about the cake in another post...it was delicious too. Have been dying to make cookies ever since I saw them there. It's a recipe she tried from Alice Medrich?s book Pure Dessert...a book which is full of simple and delicious recipes that focus on pure flavor. The amount of butter was the only deterrent, but I thought...What the heck! Once in a while you gotta cross the limit. O boy...the smell of freshly ground coffee put me on another level altogether. These are different from any cookies I've ever made....almost like a coffee shortbread. Nutty, crisp, coffee flavoured & buttery. The coffee is not overpowering at all, & the sugar is on ...
Soba Noodles with Ginger, Chard and Walnuts
2008-02-20 03:34:00
While taking some leisure time to browse through a few food blogs recently (read: two hours at my desk when I should have been working), I happened upon the blog event They Go Really Well Together, hosted by blog.khymos.org (”dedicated to molecular gastronomy”). The gist of the event is that two or more seemingly mis-matched flavors are paired according to their molecular compatibility (a la Fat Duck), said compatibility not always apparent to those deficient in the chef’s olfactory supremacy (such as moi). Then I got to thinking, it’s true; some ostensibly odd couplings do actually work well together:  Sonny and Cher, purple and mustard yellow walls (but only for the previous tenant, not us), Elsie and Chaser, paisley and–hmmn.  Well, Sonny and Cher, anyway. This pasta dish, a favorite in our house, is one of those weird couplings: rhyme off the ingredients one at a time and they sound not like a recipe but more like a grocery list jotted in ...
Cardamom-Flavored Plum Compote (With Walnuts and Raisins)
2008-02-18 19:15:00
Seasonal Fruits and vegetables are a cook's best friends, as you can be sure they are not artificially grown or flavored and also because they bring a lot of variety to the table every changing season! We all know how important it is to include fruits in our diet, and the markets in California are flooded with dark and juicy Plums. They have been one of my preferred fruits right from childhood, and I love their juicy fibrous texture and their sweet and tart flavor. There are so many things you can do with plums, but jams, jellies and preserves are the best way to capture their essence so you can enjoy them even after the seaosn is gone! I decided to go for the Plum Compote, which is similar to a jelly, just with a few chunks rather than a puree.A fruit compote is traditionally made of whole or pieces of fruit simmered in a sugar syrup, simmered over gentle heat. To add flavor, it can be seasoned with vanilla, lemon or orange peel, cinnamon, cloves, ground almonds, grated coconut, c...

Pasta With Walnuts
2008-01-29 21:54:00
Recently I came across this lovely animal shaped pasta. Funny looking animals made me remember my favorite childhood pasta dish - pasta with walnuts and sugar. It's a very, very easy to make dish/snack. The recipe:For one small noodle bowl of pasta you'll need 1 Tbsp sugar and 2 Tbsp ground walnuts. Just stir everything with cooked pasta and that's it. It doesn't get any easier than that, doesn't it? This is a part of Presto Pasta Night at Once Upon A Feast. You can see the roundup here.

be a better person: really easy chocolate fudge with toasted walnuts
2008-01-15 00:12:00
I know, what am I doing posting another sugar-fueled recipe shortly after posting about this cake? Well, I tried to stay away from candy-making in January, I mean, this is the time for a bit of dietary restraint, whole grains and all of that I'm-going-to-be-a-better-person--than-the-kind-of-person-that-e-ats-fudge-in-mother f*cking-January! But then again, I didn't make this recipe for me. I made it to give to someone else, so making fudge in January is perfectly acceptable since I'm being totally selfless and isn't that part of every one's plan to be a better person in 2008?And to set the record straight, I'm not really one of those people who get obsessed with fudge. I pretty much get my fill after 1 bite since it's sweeter than all get out. But then I made this fudge...and oh, boy, didn't a little part of me get a bit sad when I realized that I had to give away this delicious concoction of condensed milk, chocolate and butter. Yes, this fudge is so incredible and so easy to...
Kadayıf Rolls with Walnuts and Pistachio (Burma Kadayıf)

500 g kadayıf dough (shredded phyllo) * 250 g butter * 250 g chopped walnutsFor the syrup:5 cups sugar * 2 cups water * juice of 1 lemonTo garnish:Powdered pistachiosMelt the butter and let it cool down. Separate the kadayıf shreds and place it in an oven tray. Pour the melted butter over the dough and soak all the shreds in it. Take a portion of dough (in the amount of an orange) and open it. Sprinkle with a soup spoon of crumbled walnuts and form a roll as follows: roll it, first, across the width and then giving several laps, holding the dough in the extremities. Have the same procedure with the remaining dough. Place the rolls on the oven tray which has the remaining melted butter and cook on a 200° pre-heated oven until they get crusty. Meanwhile, prepare the syrup. Bring to fire the sugar and the water for 15 minutes. Add the lemon juice and remove from fire. Let it cool down. When the rolls are ready, let them cool down (until the oven tray gets warm) and cover with the wa...

HEALTHY DELICIOUS LIME CAKE...with whole wheat too!
2007-12-18 16:39:00
"Good food is a celebration of life."Sophia Loren HEALTHY 'n' DELICIOUS LIME CAKE...with whole wheat too!A day without baking is tough to pass. 3 days went by, and the symptoms began. The itch to get back & do something, bake anything..anything to turn the oven on again. My mantra...the only constant is change, a variant of Heraclitus's Greek philosophy. One of the first things we were told when I had started working many years ago... the philosophy remains. So decided to try my recipe lemon cake again, with a healthier turn to it. Substituted some regular flour for whole-wheat flour & threw in some walnuts too. Disaster struck halfway through baking...yes, the electricity disappeared. It happens very often here, so now I'm just used to it! Hmmmmm...it reappeared after an hour, & the poor cake, taking pity on me, began to rise again. Once done , it was fine!! How forgiving can life get? The kids enjoyed it, & the whole-wheat flour make no difference to them.Am gl...
MOCHA WALNUT CAKE- Healthy Chocolate-Coffee Cake
2007-12-09 16:10:00
"I orchestrate my mornings to the tune of coffee." Harry MahtarMy recipe 'MOCHA WALNUT CAKE'...with chocolate chips thrown in for good measure! A variation to my own recipe...this time it's a 'MOCHA WALNUT CAKE'. I love experimenting, and even though the kids never seem to tire of the regular stuff I bake, I'm always restless for a 'change'. The original recipe, a YUMMY PICNIC CHOCOLATE CAKE , was one that I had created & posted a while ago trying to put together a good, tasty & healthy chocolate cake, with just 1/2 a cuppa butter. This is just a variation off that one, is delicious, & has a light crumb. It tastes great warm. More than anything else, it has a portion of whole wheat flour & doesn't need frosting.Ingredients:Butter ? cupEggs ? 4Sugar ? 1 1/2 cupsFlour ? 1 cupWhole wheat flour - 1/2 cupCocoa ? cupInstant coffee powder - 1 tbspBaking powder ? 1 tspBaking Soda ? 1/2 tspSalt ? tspYogurt ? 4 tbsp / thickCream ? 2 tbsp / 25 % fatJuice of 1/2 l...
STREUSEL COFFEE CAKE...A Delectable Cake for Tea or Dessert
2007-12-02 17:46:00
"Laughter is brightest where food is best."Irish Proverb STREUSEL COFFEE CAKEThis recipe is adapted from one of the first baking sites I used to browse many many moons ago...the 'Joy of Baking'. Just the other day my friend from Kiev & I were chatting online & looking for poppy seed muffin recipes on this site. One thing led to another, & eventually to this delectable looking 'Streusel Coffee Cake'. This was last week, but the picture had been haunting me ever since & I just HAD to bake it. I made a few small changes here & there; one for sour cream & the other being orange rind... (couldn't resist the combination of the plump orange & magical microplaner staring at me). My sister had made an almost similar coffee cake when we were in Dallas this summer, & it was really good. I have used bittersweet Ghirardelli chocolate chips inside & mini chocolate chips in the topping! Didn't use cinnamon because of the orange rind. This is a lovely, eas...
winter salad with chicory and walnuts
2007-11-21 22:43:00
My grand-parents used to live in the old part of the village...andthat's a mediavalvillage, so we still have remains of castle fortifications...Their house wasn't huge but had a massive garage bigger than the bit they lived in (I think I have told this story before?). To get to it you had to get otu of the house, down a very steep staircaise (frozen and deadly icy in winter), open a big, heavy wooden door with a key like you see in a pirate's treasure hunt or Alice in Wonderland!. Besides that door was a smaller one leading directly underneath the house to a very old cellar with vaulted ceilings and an earth floor. I know it is impossible to imagine from a few words but as it didn't have any windows, it smelt of slightly damp earth all year round. I only have to close my eyes to remember that smell and wish I could have bottled it!. Anyway, that place was ideal to force chicories. So all winter we'd have a regualr supply of white, crunchy vegetables. last time I mentioned chi...
BISCOTTI...The Great Italian Cookie!
2007-11-20 01:43:00
"You'll always make good food from great ingredients, but you will never make great food from bad ingredients." Michael Chiarrello BISCOTTI in 2 TONES!! Here's what I baked yesterday...BISCOTTI. It's been on my mind for really long ever since I've been haunted by a picture posted on Group Recipes. This particular biscotti recipe is from Rogers page on Group Recipes which I have adapted to suit the ingredients I had available. The fact that the recipe uses olive oil & not butter won me over!! The recipe is a wee bit fiddly as it uses no butter which makes the dough quite sticky and squishy; but don't let this put you off. I guess that's the idea...otherwise how would we get such a great crisp cookie, low on fat! The aroma it fills the house with is heavenly. I was literally eating the crumbs off the counter while slicing it up! Suggest you try it when the kids are away... The name biscotti is derived from 'bis' meaning twice in Italian and 'cotto' meaning baked or cooked....

Caramelized Cinnamon Walnuts with Pumpkin Seeds [Vegan]
2007-11-04 02:06:00
1-2 T. virgin coconut oil*2 heaping T. organic raw pumpkin seeds (unsalted)2-3 T. organic sugar1 c. organic raw walnuts1 heaping T. cinnamondash nutmeg* You can substitute extra virgin olive oil or vegan butter. If you're sensitive to soy, watch for the soy and flax oil with vegan butter.Spray your frying pan or skillet with nonstick spray and add the coconut (olive) oil. Turn the eye to medium heat to melt the oil and add the walnuts, pumpkin seeds, and cinnamon. Stir and sprinkle over the sugar. As the eye heats and the sugar begins to caramelize, be sure to stir the nuts and make sure the sugar evenly coats the nuts and seeds. Heat while stirring constantly for about 2 minutes until all of the sugar has caramelized and crusted over the nuts. The sugar is considered caramelized when it is melted into a clear golden to dark brown syrup, which is around 350 degrees. If you've never done this before, it is quick and fun to watch. Walnuts Honey Tartelettes
2007-09-02 03:26:00
I made these to satisfy a craving and to help a family member in need of satisfying hers. I know, it is difficult but I feel I should sacrifice my thighs to help family and friends....! When Sophie came to visit this past month, we tried to make her sample as many local delicacies as possible. We could not get okra and hot sauce to pass her lips but she acquired a taste for tortilla chips, chow-chow, Moose Tracks ice cream, and pecan pies...Yummmm! Of course, as godmother extraordinaire I promised her I would hunt for a recipe in French, using ingredients easily available for her and I would make a batch for the blog so she could get an idea of things to come. While my tree is not quite ready to give me the pecans I needed to come up with a substitute.I was happy to provide her with a recipe and teach her how to make them but we were faced with a couple of problems. It would be difficult for her to find pecans and corn syrup in France to duplicate the recipe. I admit that I rarely u...

Chapter 3: Yang Food - Walnuts
2007-07-22 06:58:00
This is a very interesting posts, especially for MEN. I think I’ll start consuming more walnuts from now on… LOL! As a yang food, walnuts are traditionally used to boost sexual capacity in men, because when their sexual organs have insufficient yang energy, they will cool down and erection becomes difficult to achieve. For the purpose of improving sexual capacity in men, take 60 grams of crushed walnuts as a one-day dosage for 1 to 2 months. Or, as an alternate treatment, fry a walnut with 6 grams of chive seeds, and the boil the 2 ingredients in water; eat the walnut and chive seeds, and drink the soup, once daily for 3 days. Unlike fresh ginger and garlic, both of which are purely yang foods, walnuts are basically a yang food but also have yin nature as well. Because of their yin nature, they can lubricate the intestine, and that is why walnuts are traditionally used to treat constipation. As a food remedy to induce bowel movements, crush 60 grams of walnuts and 30 gra...
