I first tried it several years ago at a Persian restaurant, & I've been hooked every since.In fact, at the local Moby Dick's eatery around the corner from me, I'm unofficially known as the "Doogh queen." ;-) (Yes, I know, strange name for a restaurant, but they have great food!) In ieder geval kan het zonder ijsmachine, volgens mij was dat ten tijde van de uitgave het boek (1991) nog niet echt betaalbaar omdat in de eigen keuken te hebben. In ieder geval splits een ei. Klop het eiwit in een schone kom stijf. Klop in een andere kom 125 ml slagroom stijf met 90 gram witte basterdsuiker. Klop de eidooier met een zakje vanillesuiker in een grote kom schuimig. Roer er met een spatel 300 ml magere yoghurt door. Als het mengsel een gelijkmatige kleur heeft kan je de slagroom er door mengen en als laatste schep je het eiwit er door totdat het mengsel 1 kleur heeft (scheppen is nu beter dan roeren, het ijs wordt nl. luchtiger door het scheppen) Nu schep je het mengsel in een diepvriesdoos en zet je het in de vriezer, schep het na een half uur om en laat het dan nog een half uur vriezer en schep het dan nog een keer goed om.
