Joel Toledo: Baked Apples with Italian Sausage and Olive-Basil Focaccia Stu
2009-10-12 19:37:00
My wife and I are huge Top Chef fans and when the chance to cook with Stephanie Izard came up we knew we had to get off the couch and into the kitchen. For our entry I came up with a baked apple stuffed with italian sausage, olive-basil focaccia and goat cheese. The recipe initially started off with a stuffed pork chop, but wanting to be different, I decided to reverse them. So now I had pork stuffing the apple, but how to work the olives in?  For that I decided to use a focaccia recipe that I have had for a while to make the bread for the stuffing.I brought together the olive-basil focaccia with a spicy italian sausage and...

Meyer Lemon Sorbet Baked Alaska
2009-07-22 19:12:00
It's completely cliche but it's always good to do as much as you can when you can so that when the unexpected strikes, you can let it ride and take a breather in a way. I started this post about Meyer Lemon Baked Alaska at the same time I was publishing the last one thinking I was just going to write down the recipe while it was fresh in my head and finish it later, probably on Monday or Tuesday. I should have listened to my brain screaming "Murphy's Law" loud and clear while I turned on the radio instead.Of course the unexpected happened. A spider found my right eye very appetizing one night and decided to have a go at it. I am allergic to spider bites. I know, it's not a life threatening disease and the Earth did not shake when it happened, but eh! that's my latest adventure! When I mean "allergic" I am not exaggerating. Ask my friend Jen about the last time I got bit. We were emailing back and forth and I got back from walking the dog only to discover 30 minutes later that m...

Oven baked pork chop
2009-07-03 18:03:00
Here's an oven baked pork chop over a spring mix salad, topped with crushed almonds. This is very easy and simple, and makes a great lunch. The marinade for the pork chop consists of soy sauce, lemon juice, brown sugar, onion powder, garlic powder, and salt and pepper.I placed a few pork chops in a container and pour in the marinade. I let it sit in the fridge and marinate for a couple hours (or make 10-15 minutes if you're hungry). I heated the oven to 350 degrees F. I baked the pork chops for about 20-30 minutes, until the pork chops were done (The internal temperature of the pork chops should reach 160 degrees F).
Matjes Herring Baked in Parchment Paper
2009-06-22 00:53:00
We have celebrated Midsummer this weekend. The National Day of Sweden (the 6th of June), in all its honor, is the least celebrated holiday in Sweden. For us, the most relaxed holiday of the year is Midsummer. The celebrations are so joyously undemanding when it comes to food. Herring from the sea, soured cream with newly cut chives, potatoes from the earth, washed down with spiced schnapps from ... well ... the Swedish Alcohol Retail Monopoly. For dessert, the first strawberries of summer served with cream. However, the weather might not always be summer-like. Bad weather really limits outdoor eating. When it is rainy, windy and cold (12°C), you don't want to eat any cold food, do you? Well, there are other things to do with matjes herring. Do you enjoy tin foil dinners when you are camping? Easy to make and easy to clean up. Here is the belly warming herring we had on this cold Midsummer Eve. Warmed in the oven adds a new dimension to matjes herring. Believe me. Serve with you...

Soft Bread Baked with Soft Whey Butter
2009-04-06 01:52:00
"Fjällbrynt Messmör" ("mountain browned soft whey butter") is a typical Swedish product made from cow's milk whey. There?s more than one variety to choose from: Original, Classic, Old-fashioned, or Light. Depending on the boiling time, colors may vary from light yellow brown to dark toffee brown. Consistency-wise, it is almost as thick as peanut butter but not that well known outside Sweden. People, who come from foreign countries, usually find "messmör" too weird to eat. It is sweet but approximately 90% of the carbohydrates come from milk sugar, which is naturally present in whey. Lactose (milk sugar) is much less sweet than plant sugar, and the carbohydrates in milk sugar are absorbed into the bloodstream more slowly than sugar carbohydrates. "Messmör" is not fat (between 2 and 6 g/100 g depending on the variety). It is free from artificial colors, stabilisers, and preservatives. But there are plenty of vitamins, calcium and iron. Cheap as well as healthy. Its primary use is...

Baked Grits and Eggs with Cheese
2009-02-21 19:44:00
I've been eating grits since I was very young - perhaps shortly after birth - I'd have to ask mom. My family is not from The South - Midwest actually - but there's such a strong Southern influence in and around where my mom grew up that I have a fairly good grasp of Southern food. That's a good thing because some of the finest food in the world was born in the rural south here in the U.S. and it's something I think every good cook needs to have in their repertoire. Not only is Southern food hearty and full of flavor, it's also economical - which is also a good thing. When we were young my mom would often make grits, eggs and bacon for breakfast on weekends and there is nothing quite like those flavors blended together.I like to change things up a little and add cheese or green onion to my grits, but the kids don't always like that, so I usually cook up grits with cheese or even just lots of butter for them. This dish is a couple of my favorites all in one. Please don't use ins...
Baked Figs with Honeyed Goat Cheese and Walnuts
2009-02-07 14:03:00
Here’s another one from Thanksgiving – I know I’m totally behind, no need to remind me.Since I’m feeling lazy (which is not really news, I’m generally fairly lazy, I don’t quite understand how I can be both lazy and hyperactive, but I am), there’s no story on this. It just sounded like a good idea at the time, and it worked out really well (phew).---------------Baked Figs with Honeyed Goat

Baked Mashed Sweet Potatoes
2008-12-21 03:23:00
The other day I decided to put together a huge bowl of mashed sweet potatoes. I like mashed sweet potatoes a lot. It?s a perfect side dish for chicken or steak or anything. Mashed sweet potatoes are great with sprinkles of cinnamon or nutmeg. I noticed at many restaurants they make it too sweet. They add way too much brown sugar and sometimes even add an extra layer of melted brown sugar on top. It almost seems like you can?t taste the natural sweetness of the potatoes and all you taste is, yeah, pure melted brown sugar.I like my mashed sweet potatoes simple and light. Here?s a basic recipe for mashed sweet potatoes.Ingredients:2 sweet potatoes2 tbsp butter2 tsp brown sugar¼ cup milkDirections:Peel the sweet potatoes. Cut the potato into smaller chunks to speed up the cooking. Boil the potatoes until they are tender. Potatoes are ready when you can insert a fork into the pieces easily.Drain the potatoes and place it into a large mixing bowl.Add butter, brown sugar, and milk.Mix well...
Baked Sweet Potato Fries
2008-12-18 02:59:00
One of my friends had this picture of baked sweet potatoes in her Facebook album and of course I immediately wanted the recipe. Not that I hadn't come across the dish online but to see someone you know had tried it and with success, made me want to try it too. She passed me the link and I tried it the next day! I am nothing if not a sucker for "immediate" action when it comes to trying out simple recipes ;)Oven-baked sweet potato 'fries'The potatoes came out quite well and though TH would have preferred it with normal potatoes, I enjoyed the subtle sweet flavour and contrasting heat form the chillies. I also loved the fact that it requires very little time to prepare and most of the work is done by the oven anyway! We had it as a quick snack at about 6 in the evening but next time I want to try this with russet potatoes and serve with dinner.Oven-Baked Sweet Potato Fries RecipeFrom Country LivingWhat I Used:Sweet potatoes - 3 (about 300gm)Red chilly flakes - 1.5 tbspCumin / jeera...

Baked Portabello Mushroom with Ham and Cheese
2008-09-27 18:15:00
I started blogging in mid June 2006. No, it's not my Blog's aniversary post.It all started when I make friends with some mummies in a parenting forum and continued to chatting on MSN. We are still in contact and had recently met-up with one of them all the way from Dubai. :) Anyway, I was just learning how to cook then and we often exchange pointers, err ... maybe me getting more cooking pointers out from them. :PI was tried replicating the particular dish I had from the Cafe from Borders I had years ago and was chatting about it with my friends. It occurred to me that it would be so much easier if I had it record down (somewhere) so anyone who is interested can see it. ( I didn't know it's blogging then. hehehe ...) Then one of friends told me to try MSN Space which was giving me lots of problems after 3 months and I decided to move 'house' to Multiply and I got all my friends to start blogging there too. And that started the blogging craze in my little circle of online frien...

Baked Mussels with Cheese
2008-08-01 02:09:00
I used to dine at Fish & Co. with my friend, Shirley, when I was still working. (Ah! Those carefree days!) I would order the Mussels in Tomato every time we are there.Since I quitted working and have kids, I dare say, I haven't gone out with any of my friends for makan sessions (pig-out). I'm always seen with my kids! And when we dine out during the weekends, it's usually somewhere which serve food that the kids like.I love mussels but sad to say, none at home like like it. So, if we do dine at Fish & Co., I won't order it. Hence, I only cook mussels and eat at home; on my own.The idea for this dish came from the mussel dish from Fish & Co. and .... pasta. :P You see, I had some tomato pasta sauce left which was too little for pasta. So, I thought why not just use it on mussels alone (I usually have mussels in my pasta). The results were not too bad. At least to me, it is. :P I forgot what my sister said as this is one of the dishes I served when she and her collea...
Baked Peach Pancakes

One food item I have truly missed since I moved here to New Zealand ten years ago is Bisquick. It is just so easy to use and very convenient to have on hand in the cupboard. Unfortunately it is virtually unavailable here, but just recently I was browsing some food categories on TradeMe New Zealand which is the New Zealand equivalent of eBay and I found a lovely lady that had some for sale which she had brought over from the States. So I immediately bought 6 large boxes and found myself in seventh heaven. I hadn't used any for ten years so this was definitely heaven sent as far as I was concerned. Now I know many of us are Gordon Ramsay fans and I would probably get a "white thumbs down" if he ever knew I was using anything but the natural ingredients from scratch, but sorry Gordon we all have a comfort zone and now was my chance to get busy in the kitchen again making some great Bisquick goodies. Baked Soy Sauce Wings
2008-05-29 03:48:00
These days when my dinner involves baking in the oven, I try to parboil them first (if possible) to save electrical bills. :P Sometimes, by doing so, I can cut cooking time to almost half or more.Depending on what you are cooking, parboiling doesn't necessary make the food less tasty.Ingredients:6 Mid-joint Wings100ml Light Soy Sauce20ml Water1/2 tablespoon Sugar1 teaspoon Dark Soy Sauce1/2 tablespoon Ginger JuiceHow to do it:Mix all ingredients well in a pot.Bring to a boil and reduce heat to a simmer.Continue cooking for15 minutes.Remove wings and place them on a rack. Retain sauce for basting.Bake them in the oven at 200C for 7 minutes.Remove the wings and dip them the the sauce previously retain from cooking.Return to bake for another 5 minutes.
