2009-07-16 17:10:00 I really liked how these oatmeal breakfast bars came out last time. I decided to make a new batch of oatmeal bars, but this time make them a little bit more crunchy. I used the same recipe and added some blended cereal. I had some Kelloggs All-Bran bran buds on the pantry shelf. These little cereal pellets are high in fiber and vitamins. I rarely eat it on its own because it's a bit too bland. It has an interesting texture because they are bran buds and not flakes. I normally mix some in about one-third cup with my cereal or sprinkle it over yogurt. I poured a cup of All-Bran ran buds into a mini food processors and blended it. After making the oatmeal bar mixture, I slowly mixed in the blended bran buds until it reached a nice consistency.I poured it into a baking pan and tossed it in the oven at 350 degrees for about 20 minutes. 2009-07-04 14:33:00 I usually like to have some breakfast bars laying around on my desk or in my bag. They make the perfect snack when you're on the go. I try to stick to ones that are in the range of 90-180 calories each package, that don't taste like candy bars. Nature Valley granola bars are great. I love Rice Krispies treats, but I prefer to make those at home, since I find the packaged ones a bit too sweet and not crispy enough. Special K strawberry cereal bars are good. Kashi makes good granola bars that have a few grams of fiber and a few grams of protein. I recently tried All-bran fiber bars and I liked those too. They were only about 120-130 calories each package and about 10 grams of fiber.The other day, I tried to make my own breakfast bars. That Blasted Breakfast
2008-12-17 02:51:00 If you're like me there are some things that are so odd that they have to be tried. In the spirit of that I present to you Batter Blasters....I opened up the can and sprayed a generous amount into the pan. At medium heat they cook pretty quickly. They do however tend to stick if you don't use an oiled nonstick pan. Since I was using a traditional oiled pan I had to flip them with a spatula rather being able to flip them with a flick of the wrist. They looked like pan cakes. They smelled like pancakes. In fact they even tasted like pancakes. They were very fluffy. I actually like my pancakes a little more dense. As for taste? They were on the sweet side but I've had far worse pancakes than these. I give them a four on a five point scale. Take that Easy Cheese!Are they worth the extra expense? If you have to cook breakfast for seven people and you overslept then definitely. Called the Kep Lodge, it offers six charming bungalows with a great view of the Gulf of Thailand and Bokhor mountain. We stay longer especially when it's holidays, waking up late, having breakfast at the restaurant and enjoying the view. Breakfast is served free at the restaurant. Although the choices are very limited for the free breakfast, however, the restaurant offers a variety of international menu for lunch and dinner. The bar might be small but you would be amazed at how many drinks they can mix for you! But I digress now.Rob and I loved this simple pork noodle soup, kiwtiew mi, prepared by the local staff for breakfast. Pelosi is talking about yet another “economic stimulus package.”  Mrs Pelosi would: extend unemploment insurrnacd, provide additional food stamp assistance, give state help in pay for Madicaid and fund mrre fuel efficient vehicles. What Mrs. Pelosi calls economic stimulus is merely welfare.  Taking a dollar from Peter to pay Paula does not create wealth. It merely transfers it.  The key to economic recover is the creatson of more wealth. Economic transfers do not, and can not create wealth. 2008-10-19 17:14:00 This month's RFJ ingredients seemed to throw several of us for a loop. They are: acorn squash, sage and orange. My first attempt at a submission was truly horrid. I made a dessert acorn squash stuffed ravioli with an orange/sage relish. I actually gagged at first bite. Something about the flavors put together that way just didn't work, but I refused to give up.This morning I made an excellent breakfast of acorn squash pancakes and chicken sausage with a maple-orange glaze. It was truly delicious!Acorn Squash Pancakes2 cups flour1 Tablespoon baking powder1/2 teaspoon each powdered ginger and cinnamon1/2 teaspoon salt1 cup mashed or pureed acorn squash2 eggs1/2 to 1 cup milk1 teaspoon vanilla extractCombine squash, eggs, and vanilla and blend well. Mix together flour, baking powder, salt and spices. Add flour mixture to squash mixture alternately with milk until a loose batter forms.
