For the first few years I moved away to the US, my family would always ask me to bake brownies when I?d come back to visit. There is a little of an unspoken love affair for that simple square of dark chocolate, sometimes studded with nuts, sometimes often adorned with a scoop of ice cream. Almost always with a short cup of espresso.I can?t even recall where I found my first recipe for brownies and I admit I go through what B. dubbed my ?brownie baking frenzy phases?. I have been known to bake quite a few batches in the span of a few days just to keep finding the elusive ?perfect? one. I know I am not the only one with that problem.Just as with anything in life, and after hundreds of batches tested and enjoyed by our friends and neighbors, I do believe there is no perfect recipe for us ? just the one we like then. I have two hungry teenage boys staying with me this summer. A well stocked refrigerator and cupboard is a must because they are eating machines. I cook and I bake but they have bottomless bellies. They eat three huge meals a day - breakfast, lunch and dinner. But of course, a portion of their calories also comes from sweet treats . We have tried five different brownie recipes lately. Here's their favorite so far because this recipe is so easy that they can quickly bake brownies themselves. INGREDIENTS: * 100 grams butter * 180 grams sugar * 2 eggs * 60 grams flour * ½ teaspoon baking powder * 2 teaspoons vanilla sugar * 3 tablespoons unsweetened cocoa powder * 100 grams almonds METHOD: 1. Unlike last week's baking without the A/C on, I cranked that baby on and was ready with spatula in hand. I was excited to see the recipe wasn't complicated.   Dorie Greenspan has a way of making even me, who ardently claims not to be crazy about chocolate, crazy about chocolate. When I read that Di of Di’s Kitchen Notebook had chosen French Chocolate Brownies for this weeks TWD recipe, I was lukewarm about the idea of brownies, but happy to have a simple recipe after my L'Opéra adventure and the two day, two part Pecan Honey Sticky Buns recipe from last week's TWD rotation. I don't consider myself much of a brownie lover, and even though Dorie herself says that these aren't really brownies; I was a bit shocked when I saw that the recipe included raisins! Huh, raisins in brownies?! I'd call myself a borderline raisin hater, meaning I won't gag if I have to eat them, but they certainly don't make me shiver with delight. This was definitely going to be one for the colleagues, or at least, so I thought.

This week Di of Di's Kitchen Notebook has chosen French Chocolate Brownies on pages 92-93 from Baking: From my home to yours. Dorie named that brownies French, because she had the idea for this sweet in Paris. The recipe was easy, but I omitted flaming the dried fruits. I used dried apricots, because I had no raisins. The taste was nice but not outstanding. I don't think having the idea in France made them "French" enough. OK................. so this is my new creation. Blueberry Cream Cheese Filled Chocolate Brownies. Yummo!!!!!! They are moist and rich, with that gorgeous tang of blueberry heaven. This has been a heck of a week...truly nerve wracking. How would you feel if somebody told you that your paycheck (you know, the thing that makes your blog look good) is somewhere out there...but 3 days late... Yep, I thought you might react the way I did and picked up a spatula, some chocolate, cracked up some eggs and made brownies...Had to work out my nerves on something and when things don't go right I bake, I stir, I knead and I know I am not the only one. The world could have crumbled and fallen...I would not have cared...Maybe I need to take these to the bank tomorrow and they might be more understanding of a slight chance of an overdraft...!I don't use white chocolate that much but here it truly worked magic and gave a great fudgy brownie. I want to introduce you to one of my favourite cookbooks ever. Betty Crocker's CookbookEverything you need to know to cook today.I bought it in the United States about 6 or so years ago. It's a beauty, for all of you who wonder what's what in the USA food culture. I make Sloppy Joe's, Smokey BBQ Sauce, Cornbread, Southern Fried Chicken, of course Brownies and lots, lots more. This has to be the best Brownie recipe I have ever used. It simply beats the rest and anyone can do it. They are so delicious, so rich and so much chocolate. I made these with the girls today. I know they're good Brownies, when the kids are just hanging to lick the bowl. The taste explosion begins even before they are baked. It almost makes me glad that it gets dark so soon these days. Because come sunset and the entire neighbourhood comes to life with the festive spirit. Its my son's first Christmas in a UK school and he is so excited ,what with the christmas songs he has learnt in school and the rehearsals for the nativity play.
