Looking so posh and sentimental, a lot of us commoners were afraid to even step inside the realm’s of Goodwood Park. It was a hotel a stone throw’s away from the bustling Orchard road in Singapore, however it retained a regal stature of some sort. So fitting that we had to act so glamorous one day and ought we tried the famous High tea buffet read in blog reviews. We went in at around 2 plus I think and surely we were obviously first timers that we couldn’t seem to settle down which seats we should take. A most delicious and decadent tartIn the world of cheeses there is one that stands head and shoulders above the rest in terms of richness. That cheese is St. Andrè. Hailing from France (mais, oui) it is a triple crème cheese with a soft rind and a butterfat content of 70% - rich, indeed.St. Andrè triple crème cheese - just starting to soften at the top, if left at room temperature for 20 minutes it will become soft and very spreadable.It pairs perfectly with several light beers and is perfect for spreading on a French baguette. I decided to do something a bit more decadent and designed this dessert tart using this truly luxurious cheese. The crust is very tender and delicate and the filling was perfectly done - not too set, just right. I may make this again with cream cheese replacing the ricotta. Thai Sticky Sweet Rice Dessert

Here is a recipe for an awesome Thai dessert!Ingredients:1.5 cup glutinous rice (also known as sticky rice or sweet rice)1 14oz can of coconut milk5 tbsp light brown sugar1 tsp salt(plus side of sliced mangos!!)Directions:Soak the rice in cold water for a few hours. (Alternatively, pour boiling water on the rice and let it soak for 15 minutes or so.) Drain the rice.Cook the rice. (Pick your method: steamer, rice cooker, or stove pot.) I chose the pot method. I cooked the rice with about 2 cups of water for about 15-20 minutes. When the rice starts to pump up and most of the water is gone, I turned off the heat and covered the rice for another 10 minutes. In a small saucepan, heat the coconut milk, sugar, and salt. Stir constantly and let it simmer. When it starts to boil, remove from heat.Pour the coconut milk over the rice. Stir gently as the rice absorbs the milk. I want to start off by saying this is by far my favorite Daring Bakers Challenge yet. Why? Well, true to its name… It was very challenging, and it was a lot of firsts for me as well: first buttercream (that worked), first mousse (that worked), first time making almond flour and first time making dulce de leche. So after creating this cake, or 15 mini cakes, in my case, I felt really really accomplished and super happy about how delicious they were.
