Prawns with Golden Garlic
2009-08-07 00:41:00
Our family loves garlic, maybe except for my husband. My daughter especially love it. She can munch on fried garlic on its own. :PEvery time I cook this, my daughter will eat all garlic on the prawns followed by the other part of the prawn, leaving behind a small ball of white prawn meat. :P Bad habit!! I'll have to coat it with the garlic bits then she will finish it. So I had to cook it with lots of garlic. Otherwise it won't be enough for her.Ingredients:300g Prawns, shelled and deviened10 clove Garlic, minced1/2 tablespoon Chinese Cooking Wine1/2 tablespoon Sugar1/2 teaspoon salt1 1/2 tablespoon Cornflour3 tablespoon OilHow to do it:Marinade prawns with Chinese cooking wine and sugar for 30 minutes.Heat oil in wok.Add garlic when oil is slight hot.Fry garlic in low heat till lightly brown.Drain and set aside.Meanwhile, drain prawns from the liquid.Add salt and cornflour.Mix well.Shallow fry prawn in hot previously use to fry the garlic. When the prawns is 80% cooked, drain.Leav...
Cheesy Garlic Bread
2009-06-06 14:37:00
My husband decided to go drinking with his pals today. *roll eyes* I get nagged for staying up late to blog but somebody can go drinking when that same somebody just worked past midnight yesterday and had to wake up early as usual to get to work this morning. *shrug* I'm not complaining. At least I get to blog in peace. LOL.Okay, for this recipe, which is one of my kid's favourite, is really easy to do. It's is actually this recipe plus cheese. But because cheese is added here, I cut down the garlic to 2 clove garlic with 1 tablespoon butter. For this particular one you see in the photo, 1 tablespoon of Mozzarella Cheese is added into the garlic spread. You can use any cheese you like. Sometimes I use Cheddar with Parmesan Cheese too. It's basically whatever leftover bits of Cheese I have. I have not tried Cream Cheese though. What you do is to mix the soften butter, garlic, cheese and the optional parsley and garlic powder together. Use that to spread on your bread before you toa...
Fragrant Garlic Roast Beef
2009-05-25 00:15:00
Persillade, balsamic vinegar and Chinese soy give this low temperature roasted beef its aromatic flavour. Excellent on the buffet table or served as a first course for dinner. Tastes delicious! Easy to make! The most difficult task is cutting the roast thinly with a sharp knife. I'm thinking of putting an electric meat slicer on my wish list. I have never been good about keeping my knifes sharp. It's so hard to sharpen them not knowing the proper technique. How do you like your beef? Rare, medium, or well-done? It's a matter of taste. 52°C/126°F for very rare, 57°C/135°F for medium rare, or 65-75°C/149-167şF for well done. I like my roast beef rare. As for the health issue, I'm 63 and have been healthy all my life. However, I don't eat red meat very often. INGREDIENTS: yield: about 8-10 servings * 1 kg boneless beef roast (2.2 lbs roughly) * salt and pepper MARINADE: * 1 clove garlic, peeled and pressed through a garlic press * 100 ml Chinese Soy * 100 ml bal...
Chicken Vegetable Soup And Red Lobster Garlic Cheddar Biscuits
2009-05-06 05:02:00
Well I'm back, and hopefully will be posting on a more regular basis now. I have been busy with some of my hobbies....I needed a little bit of space and time for myself. I also found my way to Facebook...FINALLY and have been trying to catch up with family and friends around the world.I have had the flu for several days now....not the swine flu thank goodness, but I resorted to making some of my homemade Chicken Vegetable Soup which I have found to be a great lift and with colds and the flu scampering around down here in cold New Zealand I thought this might be a good time to post my recipe. I also always serve this soup with a great recipe that I found several years ago, a Copy Cat Recipe for The Red Lobster's Cheddar Biscuits. They are a great "go with" with this soup, especially on a cold night. I will post this recipe as well. Also a huge note of thanks to all the good people who continued to read my Blog in my absence, and I hope you will continue to stop by for lots of mouthw...

Weekly soup for Souper Sunday: Slow-Cooked Broccoli Soup with Garlic and Ol
2009-04-29 01:47:00
It's always the same after returning from vacation: Tons of laundry has to be done and the garden needs attention. The weather is just fine for using the eco-friendly solar dryer and it is fun to do the garden work. So I let the slow cooker do the work in the kitchen on its own and let it cook a Broccoli Soup with Garlic and Olive Oil Although my sons are not huge fans of broccoli, they ate without any comment, because the soup didn't have any chunks. I used my lemon thyme to season the soup. -=========REZKONV-Recipe - RezkonvSuite v1.4Title: Slow-Cooked Broccoli Soup with Garlic and Olive OilCategories: Slow Cooker, CrockpotYield: 6 Servings Ingredients 1.35kg Broccoli, 2 bunches110grams Olive oil, 1/2 cup, 120 ml8cloves Garlic, sliced2teasp. Chopped fresh thyme or marjoram   Or1/2teasp. Dried thyme or marjoram1 1/2liters Vegetable or chicken broth, 6 cups60ml Dry white wine2tablesp. Fresh lemon juice   Salt and freshly ground black pepper to tasteH FOR SERVING   Toas...

Thakkali Chutney / Tomato Chutney
2008-11-05 11:17:00
This is one dish that has many many memories associated with it. My grandma used to make it quite often since me and my bro love it. And we call it 'thakkali oorindi' where the word 'oorindi' comes from saying 'noorindi' very often. 'Noorindi' in "our" telugu means ground (past tenst of grind!). Ok this explanation is getting way too confusing so I will fill you in on why I call the word "our" telugu and where in India I am actually from. 'Cuz that's a long (long) story. My sis took the recipe from amma last summer and I took the picture. Because of that, I get to post it first, I guess. Thanks sis, for sending the recipe over email 'cuz god knows I wouldn't have been able to remember it otherwise. Don't get put off by the roast-remove steps in the directions of the recipe, really. Its worth it!What I Used:Ripe red tomatoes, slightly sour - 500gm, dicedBig onions-3, choppedGarlic - 2 clovesCoriander seeds - 1 tbspGrated coconut - 1 tbsp (optional)Red chillies - about 12,...

Roasted Sweet Garlic Ribs
2008-09-29 02:17:00
This is one of my many favourites. In fact, my kids and friends too. This is like 'char siew' (sweet roasted lean meat). Maybe if you use lean meat, it will look more like 'char siew'. I prefer to use ribs ... because I like to eat with my hands. :P Yeah! Hold the rib by the bone and clean the meat off. It's especially nice with a little fat on the meat. ;)You can leave the garlic if you don't like it but me and the kids love garlic. Did I say my daughter loves to eat fried (minced) garlic on its own? ;)Ingredients:500g Ribs 3 tablespoon Minced Garlic (optional)2 tablespoon sugar1 tablespoon Cooking Wine 1/2 tsp Salt500ml Chicken Broth1 tablespoon Honey How to do it:Blanch the ribs.In a new pot, add ribs and all the other ingredients except honey.Bring to a boil.Reduce heat to low fire and simmer for 45 to 60 minutes, till the ribs are tender.Remove the ribs and place on foil and retain the sauce.Add honey to the sauce to be used for basting.Bast ribs with sauce and roast i...

Grilled Garlic Bread
2008-09-09 07:11:00
This is something I made for Sig's Grill It event, but was too busy to post it on time. Its very simple and tastes heavenly. But, you need to be a garlic lover for that. TH has sandwiches every morning and generally likes to stay from bread of any form over weekends. The one and only exception is garlic bread. We go out for pizza quite often and invariably end up stuffing ourselves because of the generous portions of garlic bread we ordered in the beginning. I like mine with cheese and TH likes it without. This is a grilled version of our good 'ol garlic bread, except that I didn't have baguette in hand, so used normal white bread and that its grilled on a toaster instead of baked. What I Used:Bread - 6 pieces, cut into triangles (Use baguette slices for a more authentic look and taste)Melted butter - 4 tbspMinced garlic - 6 podsSalt (if butter is unsalted) - 1/2 tspChillie flakes and oregano - for seasoningHow I Made It:1. Mix the butter with garlic and salt. 2. Spread this mixt...
Veggie Wednesday: The Complete Book of Garlic
2008-08-27 15:49:00
When I visit my local food market to purchase garlic I have one of two choices - the usual papery skinned white garlic or elephant garlic. Occasionally I'll come across a purple striped variety, but that would be as exotic as it gets. My choices were limited to those three, and I was OK with that. Now, though, I'm on the lookout for different varieties. Wait! There are more? You bet your garlic breath there is. How about Spanish Roja, Shvelisi, French Red Asian or Transylvanian? What about garlic that doesn't come in the usual artichoke shaped bulb? Did you know there was such a thing? Did you know that, just like apples, not all garlic tastes the same? I surely didn't.Ted Jordan Meredith likens the varieties of garlic available to the varieties of apples we have at our disposal. Would you be OK with only Red Delicious apples being sold at your market? I know I wouldn't, and likewise, I shouldn't be satisfied with the usual Artichoke variety of garlic as the only type availabl...
Grilled Prawns with Garlic and Cheese
2008-07-31 02:58:00
Prawn is my all time favorite and the kids' too. I like it in whichever way it is cooked. I can have it everyday if not for the cholesterol, because I love to suck on the head too! Would it be a waste to throw it away?Anyway, I had to stop myself from finishing the whole lot on my own. I didn't buy a lot of prawns as they were rather expensive due to their size. It will be either difficult to put in the stuffing if the prawn is too small or there won't be much stuffing. If you have friends coming over, serve this. It's fast and easy. I bet they will love it too!Ingredients:8 large Prawns, cleaned2 tablespoon Butter, soften5 tablespoon Grated Parmesan Cheese1/2 tablespoon grated Garlic2 teaspoon Coriander stem, choppedA pinch of saltA dash of pepper (optional - you wouldn't need it if your prawns are fresh)How to do it:Preheat oven to 170C.Mix all ingredients except prawns together and set aside.Trim off the legs, antenna and the sharp thingy (whatever you call that) on the head...

Butterhorn Garlic Knots
2008-06-25 05:22:00
Last month I posted about a Gruyere stuffed loaf that I had baked during a live Skype baking session with a bunch of flour obsessed gals and gents. We did not intend to make it a monthly thing, we are not even a baking group, Lord knows we are all super busy with, work, life, blogging, etc...We just decided to take one morning here and there to bake in our comfies and just let our mouths get a little loose and our minds in the gutter and I somehow get blamed for this each time (wink wink I also teach them how to type in Helenese but that is for another post). Ok, I'll admit that last time I did say out loud that the loaves looked like female genitals or breasts implants gone wrong. This time I am glad to report that I passed on the baton to Kelly who formed little turdy things with little funny things sticking out.We had not really planned to get together again so soon but then Lisa started to email us with visions of garlic rolls she recently had at a restaurant and you know that ...

Candied Garlic and Home Cooking
2008-06-05 20:55:00
In my mother's time, education for women necessarily included at least one course in the domestic arts. As a result, the only high school textbooks from her time, save a couple of volumes of Shakespeare and Silas Marner, that I still have around are about nutrition. Florence Willard and Lucy H. Gillett’s Dietetics for High Schools: A Textbook in Nutrition and Food Economics, copyright 1920 and reprinted in 1931, only four years before her high school graduation, is among them. Even though salad isn’t even mentioned, it does include complex formulas for calculating the proper daily dose of Vitamin G and meal planning for a family which includes household staff. None of her college textbooks remain, most probably because she majored in art at a Texas college. The cuisines my mother cooked best were Turkish, Japanese and Mexican. And whatever the latest weird thing that Sunset magazine might mention, like...
Honey Scallops with Garlic Broccolini
2008-06-04 20:11:00
cappesante/scallopsRewind to this time two years ago. I was a new homeowner, working out regularly, and spent my Sundays at the Farmer?s market, then at home prepping for a planned menu for the week. Happy as a clam! Over the months that followed, I was in a job I loved, stayed (somewhat) fit and kept losing weight. After a fabulous trip to Eastern Europe last summer, I came home to find I lost more weight and was at the lowest I had been since I got sick. All great right? Right! Then I started my new job last August. After a sprain in one ankle, and three broken bones in the other within 4 months, coupled with a horrendously tumultuous year, I am now at the heaviest I have been since 1999. Icky! With school being out, I am now taking back charge and working to melt my big booty (that follows me in a room ten minutes after the rest of me) away.I began back to the gym this week (the one I have been paying for without seeing the inside but 2 times!) and began cooking again. My shri...

Why Eat Kimchi?
2008-05-28 21:01:00
Kimchi, also known as 'gimchi' or 'kimchee' is a fermented Korean food, equivalent to our sauerkraut.  Eaten as a side dish, its main ingredient is cabbage.  Kimchi has been eaten for the last 3000 years, and only recently (12th century) began to be prepared with the addition of chili peppers.  Other variations today include kimchi made of radishes, scallions, or stuffed cucumber.  Kimchi is seasoned with ginger, garlic, onions, and sometimes brined shrimp or fish sauce (anchovy based).Fermented foods like kimchi are known as healthy foods, and not just for the vitamin content (Vitamins A, B1, B2, Calcium, C, Carotene). Ann Louise Gittleman, author of The Gut Flush Plan writes that it's because they "feed and sustain the probiotic population in our digestive tracts," keeping our guts in good shape.  Named one of the top five "World's Healthiest Foods" by Health magazine, kimchi contains lactic acid bact...
Chicken with Garlic Cream
2008-05-20 07:42:00
This is another zaar recipe I tried during my May recipe swap. This was very tasty and super quick and easy to prepare which I think we all love. I did add about a 1/4 cup of dry white wine and some more garlic cloves just my personal preference. I also found the sauce to be a little thin so I thickened it up with a little cornflour at the end. I found it to be a very flavoursome sauce for such few ingredients and sometimes I think simple actually works better than over complicating a recipe. If you would like to read more reviews or see more photos of this recipe click here.f you have been keeping up with the progress of my beautiful handcrafted camphor laurel chopping, cheese boards and Mezzaluna Boards. Homemade Garlic Spread
2008-05-17 04:10:00
My son and me love to each garlic bread! The more spread it has the better it is. Yeah, we both love to eat garlic. :P So, don't talk to us after dinner. XDI used to buy McCormick's Garlic spread with bacon bits but I was not able to find it since more than a year ago. Since then, I started making my more garlic spread. It's really very easy. The hardest could be getting the garlic into paste-like. If you using the knife, it's going to take you awhile for the garlic to be paste-like but it will work. It just takes longer. I do it with the help of a little tool, the grater. You can of course use normal the big one if you already have one at home. Mine is a tiny one which is smaller than my palm.Oh, you can use this method to grate ginger to get the ginger juice. At least this is how I did it.For my garlic spread, I mixed 4 glove of grated garlic to 1 tablespoon of softened butter. If you have garlic powder and/or parsley flakes, add 1 teaspoon each to the butter for extra flavour...
Product Review: Freida?s Garlic Delight
2008-05-14 16:49:00
Recently I was sent another great product to review. I was contacted by Hazel over at Freida’s Inc. about a new, fresh garlic product that is now on the market. Hazel told me that the product is made using all natural ingredients and no preservatives: fresh USA-grown garlic, canola oil, lemon juice and salt — that’s it. It sounded too good to be true, a dream come true product review. Something that sounded great and totally fell into pace with my Mediterranean eating habits. So of course I agreed to sample it. The package from Frieda’s arrived overnight in a cooler with ice. I recieved the original Freida’s Garlic Delight as well as the chipotle flavor - imagine my delight. Immediately I checked out the ingredients and it was just as Hazel had said - all natural and no preservatives! Each tub is 7 oz. and so my head was just swimming with ideas of what to do with these tubs of garlicky goodness. This package could not have come at a better time. It ...

Simplicity at its Best: Sorekai Bolu Kodhel

We are back from short yet wonderful vacation from India and already missing home! Here I am in my office, feeling sleepy and jetlagged and terribly homesick. Each and every minute of those 18 days were filled with excitement and fun and our ears are still buzzing. It feels strange to be here away from all buzz and excitement. The two big family weddings in two weeks of our vacation kept us on our toes all the time. Mehendi, shopping, facials, flower decorations, shopping for gifts, last minute purchases, travelling, houseful of guests, shopping (did I say shopping again?!), phone calls to friends? It was complete madness and we enjoyed each and every moment of it. It won?t be exaggeration if I had to say that we hardly got time to think about coming back (Will write about it more in my later posts). Surprisingly even the flights were on time and everything went smoothly. Can?t believe that we had been away for just few days and there is already change in weather. Thankfully the gloo...

I was at a loose end for a meal one day...rummaged in the fridge & found bell peppers. Had a couple of heads of garlic & spaghetti. Protective Antioxidants In Every Bite
2008-04-22 00:29:00
Cheryl Forberg, author of Positively Ageless and nutritionist for the NBC reality series The Biggest Loser, recommends that we eat our antioxidants.  In this FirstLook at Positively Ageless, Ms. Forberg focuses on the value of foods high in vitamins, specifically C and E, both of which offer protection from free radicals.  Instead of downing vitamin pills, aim to add various types of fruits and vegetables to the diet.  These natural foods offer both tremendous varieties of antioxidants and phytochemicals which operate successfully together within the body.   Ms. Forberg writes that scientists have "barely scratched the surface of knowing what these food components do individually, let alone in teams."Strongly flavored vegetables like garlic, ginger and onions, when fused together in a dish (think curry) provide antioxidants, antibacterial, antiviral, and antifungal properties.  Individually, each extends relief from in...
