I slightly adapted this recipe to fit my taste for chocolate.1 stick of butter, softened 2/3 cup light brown sugar, packed 1 egg 1/2 teaspoon vanilla extract 3/4 cup all-purpose flour 1/2 teaspoon baking soda 1/2 teaspoon ground cinnamon 1/2 teaspoon salt 1 1/2 cups rolled oats 2 boxes of raisins 1/2 cup frozen chocolate chipsPreheat oven to 350°F (175°C). 2010-10-11 03:50:00 We started a compost bin in our backyard last week and have been watching our veggie, fruit and herb patch grow as the weather warms up here in Sydney. I have been experimenting with wholefoods and heathier snacking options over the past few weeks and having been putting my rice bran oil bottle to good use. A recipe for wholemeal rosemary cookies in the Australian Women’s Weekly Cookie cookbook has been nagging me for a while and this weekend I decided to make it healthier by making my own tweaks. This cookie is incredibly light, wonderfully crunchy and has a burst of different flavours and textures in every bite. I cannot even begin to explain the amount of anti-oxidants and fiber each cookie has. It makes you feel wholesome and good, almost like eating a home made muesli bar, but with little green flecks of freshly chopped rosemary leaves that give it an amazing flavour. Seeing that the label said it was good in the fridge for 6 months after opening, I knew I was making a commitment to make more bread! So this past weekend I made my first cinnamon-raisin-swirl bread. The recipe I was used was top-notch - easy to follow, and delicious. I love the sweet brown sugar and spicy cinnamon. The recipe called for both golden raisins and dark ones; I had only golden so I also added pecans to the dough. WOW - so good! According to my husband, this makes great toast! I’ve eaten plenty of carrot cakes, and I’ve made carrot cake one or two times before, but I wasn’t too thrilled with the end result (I will admit that I am very picky about baked goods). I think my main problems with it are that it is frequently too dense, sweet, and/or oily, and it usually contains nuts and raisins, which makes the cake seem more muffin-like than cakey. Also, the frosting is almost always too sweet for my taste, but that’s usually the case with any frosting on any baked good I’ve ever eaten. To remedy these problems, I added lots of carrots to the batter to give it natural sweetness and moisture, thereby reducing the amount of oil I would need to use. This brioche recipe is different from mine I tried Monday last week. I followed the recipe with some modifications: Contrary to Dorie's recommendation I halved the Golden Brioche recipe and it worked fine. I used the seeds of one vanilla bean to flavour the pastry cream I whisked the cream in bain marie in a pan with a rounded bottom to prevent a thin layer of cooked egg yolks in the edges I omitted the cinnamon sugar for the filling I used a length of dental floss to cut the snails I liked the result and will definitively will bake the snails again. 2008-03-02 23:13:00 “A Raisin In The Sun”I watched Puff Daddy’s version of “A Raisin In The Sun”, a film first made in 1961 starring Sidney Poitier, Claudia McNeil, Diana Sands, Ruby Dee and Louis Gossett Jr. on ABC the other night. Puff Daddy’s version was quite interesting, P. Diddy himself had a leading role, playing the troubled young man - who so badly wanted to be a success. I’d never seen Sean Combs act, so I was rather surprised to see him give such an inspired performance. Does his performance deserve an Oscar? This was one good film, I really enjoyed this movie.Now the movie itself was in the line of the “old negro spirituals”, no hope anywhere. But it ended like “Cinderella”. Everything fit right in, the hotel reservations, travel arrangements, time off from work, the temperature. The vacation was just what the doctor had ordered to get away from the usual grind and seemed like a glorious way to end the year 2007. Both me and my husband love munching on stuff, chatting, listening to music, enjoying views during long drives and so I always make it a point to carry lots of goodies and keep it within hands reach in the car. So even this time around I wanted the same. However, because of lack of time I did not have time to prepare lots of stuff and had to rely on store bought stuff. 2007-12-17 05:28:00 I know it?s Sunday. I just ran out of time on Friday to post it, but it?s by no means late. Zorra of 1x umrhren bitte is hosting this months Sugar High Friday and she has declared it ?pudding Friday?. That?s right, pudding, in any form.At first, I thought ?great! Then reality set in. There are sooo many variations of pudding. I just couldn?t decide. Did I want something chocolate-y? Mousse? Steamed? Decisions, decisions. I procrastinated so long that the choice was made for me. Earlier in the week, I had made ?raisin bread? and it had gotten stale. Instead of throwing it out, I rejuvenated it by turning it into delicious raisin bread pudding. I really didn?t have to add too much to the custard since the bread had a lot of flavor on its own. I did add a handful of raisins just because I really like raisins. Thanksgiving and Oatmeal Raisin
2007-11-21 05:08:00 This week has been all about food, baking and making no apologies for indulging. At any given minute during the last two days, you could have caught me with either a spatula or a cookie sheet in hand. Thanksgiving is my favorite holiday, no surprise since it is almost synonymous with food. I have no shortage of blessings and since I make a huge effort to be grateful on a daily basis, I don't get too into going around the table announcing my most cherished feelings of gratitude. Most of the time, that which I am truly grateful is extremely personal and I would rather share it with a very close friend or family member on a random day over a cup of tea and french Madeline's. But generally speaking, I'm with many others in celebrating this day and being grateful for family, friends and health. In case I don't get to post again until after Thursday, I hope that those of you who celebrate Thanksgiving have a happy and safe one. Since I don't have a picture to go with this post, let m...

2007-11-15 15:10:00 When family and friends hear you're on your way to Baguio Country Club, one pasalubong request stands out: raisin bread! The next day, we had breakfast in the Raisin Bread Shop of the BCC. And of course, I bought their signature raisin bread and banana bread to take home.Don't miss out on their equally famous blueberry muffins among many other muffins. I'm sure their cakes are equally mouth-watering. In fact, the cake display case beckons to every customer who enters. But I had enough sugar for the morning. Also available in the bread shop are deli sausages and cheeses among many other products.I had wanted to stay an extra night but I had to rush to an evening meeting in Makati. So that ends my 3 weeks of non-stop travel. It's back to school. In a way, it's time for a vacation from my vacation. Hahaha!
