Wow...That made me a little proud and left me slightly amazed at the same time! I think I even said "oh la vache!" (holy cow!). That's a whole lot of stories, words, laughs, tears and just as much sugar, butter, flour and eggs! What could be more fitting to celebrate post #550 than a Daring Bakers Challenge? 2009-08-17 00:21:00 Many years ago, I bought an electric juice machine which squeezed fresh juice from fruits, berries and vegetables. But there were too many parts to remove and clean so the days of juice making were not many. The machine was put away in the cupboard where the waffle iron, sandwich grill, blender and ice cream maker are living and collecting dust most of the time. Once a year, I take the juice machine out, dust it off and plug it in. There is nothing more delicious or thirst quenching on a hot summer day than a home made soft drink. Raspberries are an excellent source of antioxidants and phytochemical ellagic acid which acts as an antioxidant. This plant chemical is thought to have some anti-cancer properties (not proven though). Red currants are not quite as nutritious as raspberries, but red berries always contain high quantities of antioxidants and the most important is vitamin C, which our human body can't produce, so it must be obtained through our diet. It had been a year since I last put my arms around maman and two(!) since I was able to share some fun tidbits with papa. It had never been that long but such has been life on both sides of the ocean, with timing, responsibilities, projects and happenings that we have been this long apart since I moved here. After a long delayed connecting flight and one suitcase missing, I was finally able to kiss them profusedly and start planning some fun things to do in between work and more work while they are here.Once home, we sat down to a simple meal of quiche and salad and talked for almost three hours at the dinner table. I decided to see it as soft and comforting. I baked and I baked without prospect of a good picture taking day. The fridge is overflowing, the freezer is about to get there. 2008-08-06 09:17:00 Ingredients:1 1/2 c Creme-filled Cookie Crumbs *2 tb Margarine, Melted32 oz Cream Cheese, Softened1 1/4 c Sugar3 ea Large Eggs1 c Sour Cream1 ts Vanilla6 oz Semi-sweet Chocolate Chips**1/3 c Strained Raspberry Preserves6 oz Semi-sweet Chocolate Chips1/4 c Whipping CreamProcess:* Cookie crumbs should come from 18 Cream Filled Cookies that have been finelycrushed. ** This 6 ozs of Chocolate chips should be melted and cooled slightly. Combine crumbs and margarine; press onto bottom of 9-inch springform pan. Combine 24 ozs of cream cheese and sugar, mixing at medium speed on electric mixer until well blended. Add eggs, one at a time, beating well after each addition. Blend in sour cream and vanilla; pour over crust. Combine remaining 8 ozs cream cheese and melted chocolate, mixing at medium speed on eletric mixer until well blended. Add Red Raspberry preserves; mix well. I found this recipe pretty easy, but I did make a few changes, I used a mixed fruit jam (cherries, strawberries and raspberries), added half a vanilla pod to the cookie dough, and omitted the sweetened flaked coconut, which you can't find here in the NL (and my boyfriend doesn't like). I found the idea of combining raspberry preserves and sweetened flaked coconut a bit of strange taste combo, but I'm curious to see what the other participants thought. 2008-03-18 14:28:00 Last night we wanted something different but staying true to my food philosphy if it was to be meat it had to be from a sustainable, all natural, no antibiotic or growth hormone, small farmed meat. We choose lamb chops. Most lamb is farmed in Australia or New Zealand, and while this doesn't fit into the local profile I am still an omnivore and need meat. Lamb is an all natural meat. The New Zealand lamb that we ate last night follows all of the other restrictions that I have. The animals are raised in pasture. Eating only the grass that is grown. They practice sustainable farming and healthy slaughter. The recipe is from Gourmet magazine and is super easy to put together.The recipe calls for a package of puff pastry. That?s right, from the store but you could make yours if you like. I?ll still like you. I used raspberry jam and dark chocolate, but I believe Gourmet used milk chocolate and strawberry jam? My point is you can use anything you like.
