Es ist ja unglaublich: Vor 14 Tagen mickerte mein Bärlauch so vor sich hin, nun steht er nach unserem Urlaub in voller Blüte. Die übrigen Blättchen reichten gerade so für die Ravioli mit Barlauch-Ricotta-Creme und Zitronenschaum Mir fehlt eindeutig Roberts Ravioli-Talent, was dem Geschmack aber keinen Abbruch tat. Wirklich eine sehr gelungene Kombination, die auch bei allen drei Herren sehr gut ankam. Bei Perfetto, der Lebensmittelabteilung eines großen Kaufhauses in Kiel haben wir Sfogliavelo mit Gorgonzola-Walnussfüllung probiert. Die Kinder waren begeistert, nur waren die Packungsgrößen nicht für im Wachstum befindliche Teenager geeignet. Also war Selbermachen angesagt, dafür kam mein Ravioliausstecher zum Einsatz. Die Ravioli mit Gorgonzola - Walnuss Füllung habe ich in Butter geschwenkt und mit geschnittenem Basilikum und gehackten Nüssen serviert. Es hat ausgesprochen gut geschmeckt. Bei der Dinklettenaktion tauchte bei uns Teilnehmerinnen von "Schleswig-Holstein kocht", die Frage auf: "Womit schneidest du deine Ravioli?" Am effektivsten hatte sich beim Füllen der Dinkletten nämlich die Klapp- und Schneidtechnik erwiesen, die Nasebär auch am handgemachtesten aussehend fand. Hier nun mein Ravioli-Zubehör: Der Pastaaufsatz meiner Küchenmaschine ist seit der Anschaffung mindestens einmal in der Woche im Einsatz. Mit dem Raviolibrett habe ich schon die Pilzravioli und Ravioli mit Basilikum-Ricottafüllung hergestellt, damit wird am wenigsten Teigverschnitt erzeugt. Bis dahin habe ich immer die "Gebisse" verwendet, z.B. für die Ravioli mit Kürbissoße. Der Pastaausstecher kam auch schon für Ravioli mit Walnuss-Gorgonzolafüllung zum Einsatz, die muss ich noch verbloggen. Das Schneiderädchen hatte in der Pastaproduktion noch keinen Einsatz. I leafed through the Essential Pasta Cookbook (German edition) and adapted the recipe on page 227 for my new ravioli maker and prepared Homemade Mushroom Ravioli just for son no. 2 and me. He liked it and me too. A similiar recipe you find here, I made mine by guess and buy gosh. I filled the homemade pasta dough with sautéed and seasoned mushrooms. I have to admit, I use this plastic containers for years, a shelf in the cellar is full of this stuff for freezing and refrigerating. The stuff is great, but I am afraid to buy more, because of my husband's behavior. T***ware and men don't agree. But I had to have the ravioli maker. As I promised, I didn't go to a party. I ordered it through my work-mate. I had some some pasta dough in the fridge from the lasagne. When I came home, I went straight into the kitchen, mixed together ricotta cheese parmesan cheese, egg yolks and basil pesto and rolled out the pasta. True, my kitchen is equipped with a stand mixture and pasta rolling attachment, and a ravioli mold, which make true homemade ravioli much less of a task than you might think. However, tonight I took an even shorter route, with some leftover wonton wrappers. As you know, I'm loving these things lately. They are so versatile - you can fill them with whatever your heart desires and bake, fry, or steam them to make tasty and impressive little appetizers. I love making pumpkin ravioli for special events, but rarely eat them at home for dinner because the creamy sauce I make to go with it is a bit much for my weeknight calorie allowance. Not to mention, the pasta itself! However, I've currently got a few dozen in the freezer leftover from a party, so I figured I'd have to eat them at some point. I decided to make some for dinner and came up with a solution to make it more reasonable - I made a different sauce, broth-based, and limited myself to a smaller portion alongside a big bowl of vegetable soup to fill me up. Hey all. Here's a quick little snapshot of dinner for the evening. I had to run to the damn co-op today to pick up some parmesan cheese for tonight's dinner, and surprisingly, it was cheap. Relatively. I bought a .29lbs. of the yummy cheese for $2.32 including tax. Not bad. If you read the post from Monday, then that means I have around 6 bucks left for the week for misc. items. Don't get me wrong, I'll spend more if I have to, but I'm gonna try and see if my family and I can live comfortably for $100 or less. They have become my subjects in this penny-pinching experiment of mine and luckily they think its a worthy experiment to undertake. Here's a pick of the littlest lady in the house enjoying dinner. My favourite cuisine after Indian is definitely Italian. I love the use of cheese, herbs and spices that their dishes contain. And raviolis are my personal favourites on any italian menu. As a cook, I always try to combine flavors that I think go well with each other, irrespective of their origin, and that's how most of the fusion dishes are created. Ad esempio son capace di stare mezza giornata a pulire gamberetti, o moscardini. A fare minuscole sfogliatine, tutte uguali e in fila come soldatini. O a fare gnocchi per ore. O, come in questo caso, ravioli. Insomma mi piace fare quei lavori che dopo un po che hai cominciato, ti sembra di ripetere lo stesso sogno. Molti, i più , si annoiano. Io mi rilasso. I grow two types of thyme in my garden and both survive the slug attacks. Thyme has not only a culinary use, but also a medical use. So thyme honey could be spread on a buttered slice of bread to enjoy, it is also helpful against cough. I am a fan of the 'cook once, eat twice' technique. Yesterday I 've flavoured my ravioli filling with thyme and had some purée left. So I decided to serve the leftover ravioli in a thyme flavoured pumpkin sauce. Delicious! For the sauce I sauteed one chopped onion and one garlic clove in a little white wine until tender. I added the pumpkin purée, some single cream and seasoned to taste with thyme, nutmeg, salt and pepper. In that sauce I warmed the ravioli for lunch. As a proud owner of a pasta attachment it's a must not to buy pasta. This week I made ravioli. At first I prepared the pasta dough from 140 g all purpose flour, 60 g semolina, 2 eggs, 2 tablespoons olive oil and a pinch of salt. I wrapped it into clingfilm and let it rest in the fridge over night. Divide dough into 4 pieces before processing with the roller attachment. Roll out pasta, cut circles with the ravioli maker and fill. For the filling you need: 1 small Hokkaido pumpkin, seeded 1 clove garlic, peeled and halved, 1 stripe each orange zest, lemon zest 3 tablespoons brown butter 1 - 2 tablespoons bread crumbs 1 tablepoon parmesan cheese, grated 50 g greek yoghurt, drained salt, pepper and nutmeg. Preheat oven to 200 °C. Cut pumpkin into 1 inch cubes. Line a baking sheet with aluminium foil, give pumpkin, garlic, thyme, zests and a pinch of thyme on the foil and close like a parcel. This one will definitely be made again.Ravioli with Three Pepper Saucefrom AllrecipesINGREDIENTS1 pound cheese ravioli 3 tablespoons olive oil 1 small onion, diced 1 green bell pepper, thinly sliced 1/2 red bell pepper, thinly sliced 1/2 yellow bell pepper, thinly sliced 2 cups chicken broth, divided 1/4 teaspoon crushed red pepper flakes DIRECTIONSBring a large pot of lightly salted water to a boil. Cook ravioli in boiling water for 8 to 10 minutes, or until done; drain. Heat olive oil in large skillet over medium heat. Saute onion and bell peppers until tender. Last week was far from satisfactory, culinary wise, but I have many more dining cards up my sleeve. Last night, Friday, was spent in an outrageous flurry of kitchen activity that ranged from steeping fruit in alcohol (for the Christmas pudding being made today) to making our own ravioli. In between all of that, I managed to also make Lemon Possets with Almond and Orange Florentines.I'm not bragging.
