Peach Mousse & Strawberry Verrines
2009-08-24 07:05:00
We've been drowning under peaches over here. Fresh, juicy local peaches. They were good starting in June but they are just tremendous right now. They got plenty more rain and sunshine to get even better. If that was even possible. Bu they did. The stalls at the farmers' market bear the same jovial velvet dresses of oranges, yellows and terra cotta. Makes me long for the fresh markets of Provence where I grew up. So colorful, so hot, so happy. Thursday seemed to start with a peach sessions: roasting, jamming, cutting and peeling a bunch to freeze and enjoy during Fall. Lunch was the perfect time to make plans about their use. When dinner came, we enjoyed sweet concoctions like these Peach Mousse & Strawberry Verrines.Friday started the same way but ended up with a batch of peach jam, peach pate de fruit and matcha macarons for wedding favors. By Saturday morning, first thing I twittered was "peach pate de fruit and matcha macarons I love you". I am telling you...summer makes my...
Strawberry Shortcake Tart
2009-08-14 09:08:00
This is quite simple but makes a relatively impressive-looking summer pud - a rich biscuit base (made here from a mix of digestives and shortbread), a creamy filling and all topped with fresh strawberries.

Summer break has disappeared rather quickly! It's hard to believe that Soeren will be back at school next week after 8 weeks - as a 2nd grader! Things were to be a bit different this year, I know. Peanut Butter & Dark Choc Torte w/ Strawberry Sauce
2009-08-02 14:33:00
Those who know me know that while I quite enjoy chocolate, I don’t quite have the sort of intimate, loving relationship with it that many of my female (and male!) friends have. In fact, I can go weeks or even a month or two without having a morsel of chocolate pass between my lips… However, when ...
The Strawberry-Blackcurrant-Rhubarb Jam
2009-07-06 01:51:00
There are few things in life as wonderful as a red, fresh strawberry! Still warm from the sun. Up here in the north of Sweden, the sun never sets in summer so the strawberries get a lot of sun and daylight which is good for them. I stopped growing strawberries many years ago because the birds ate them. They took a bite out of one berry and left it, then they took a bite out of another and left it ... What a waste! Finally, I got fed up with that and put a net over my plants. What happened? Well, every day, small birds got trapped. Trapped birds were easy targets for our neighbors' cats. I willingly shared my currants with the birds. I'm not greedy. But who wants currants when there are strawberries to be had. Not the birds anyway. So, now I buy strawberries at the supermarket. How much would you pay for a small box (500 grams) of strawberries? They sell them here for 30 SEK (around 4 USD). They are not expensive but not cheap either. But it is a good thing that you c...

Strawberry picking!
2009-06-30 01:32:00
After a friend's triathlon Sunday in Lake Geneva, we headed to Thompson Strawberry Farm--a "Pick Your Own" in Kenosha. I LOVE picking my own food. I dragged my family out to pick strawberries there last year, and I was really excited to go out earlier this year for more ripe berries. ...
Strawberry and Rhubarb Pate De Fruit
2009-06-07 17:06:00
As I woke up this morning, I quickly put on my shoes and ran downstairs to get the boat ready for a little outing. We were indeed rushing, grabing pieces of buttered toast and ushering the dogs up and down the stairs. You see it's rain season here, so every opportunity to be out and about in a dry and sunny moment is fully taken advantage of. We got all the way to the boat landing and all of a sudden the clouds darkened and the skies broke lose. B. looked at me, hands open to the sky, raising his shoulders as if to say "sorry sweets, not today".No big deal, being flexible is the name of the game in June around here but there is plenty for me to do to actually tie myself to a chair instead of going around playing on the water (more on that at the end of this post). When things don't go as planned, there are ways to make the situation a little sweeter. Tons sweeter. Little confections like pate de fruits are especially good to turn grey skies into sunshine, if only in your head. Mor...

Pistachio And Strawberry Mousse Mille Feuilles And A Giveaway
2009-05-24 05:27:00
I just laughed and giggled at all the comments about the Pistachio Creme Brulee Macarons from last week and your thinking that I can take Pierre Herme any day. Clearly an interesting idea but sadly one that will never take place because the man is king in the pastry department. I did get an email from Pierre Herme though, well ok, more precisely from La Maison Pierre Herme. And it was not personal at all. But I loved it all the same. It actually inspired me to make these Mille Feuilles filled with mascarpone, pistachio and strawberry mousses.I like staying close to home by subscribing to French cooking magazine, watch French news feeds anytime I can, and also by receiving PH's monthly newsletter in my inbox. An attractive list of all the seasonal goodies coming up in his shops. And there it was, the whole PH House of Pastry, tempting with more amazing tastes and textures than before. I read it carefully and sighed at their current signature flavor: all PH's creations in pistachio ...

Strawberry-Cheesecake-Eis

Powdered Strawberry And Vanilla Bean Macarons
2009-05-01 07:57:00
I think I have quite possibly turned this site into an ode to strawberries just by looking at my latest posts. Hmmm...Hope you'll still tune in for one more next week and then I might tempt you with the lovely wild blackberries I see appearing on the edges of the yard. Gosh I love Spring! It would be a shame not to take advantage of what is at my fingertips and right now the fridge is about to burst with local strawberries and lemons. It seems like I have a magic fridge these days. Just when I think I am reaching the bottom of the bowl of strawberries there is another one appearing from the other side. I did find out from B. that his mom dropped off some, as did a neighbor because "{I} would know what to do with them." I did ponder that thought while I was slicing strawberries for a tart. What to do with all these ugly little end pieces that I was not going to use? That's when the idea of dried strawberries popped into my head again and how to incorporate that into another dessert,...

Strawberry Charlottes
2009-04-20 05:22:00
I know it's really Spring when strawberry season starts around here. I think I could live on strawberries alone until the end of June! I almost did on Sunday actually. We went to friends' house for brunch and as we were talking outside on their patio, I dawned on me that it was also the weekend of the Strawberry Festival when strawberry picking really kicks off. We hopped in the car and loaded our baskets! I have already baked a couple of things with local strawberries I got both there and at the farmer's market but in the meantime I wanted to share these Strawberry Charlottes. As you can guess, the little bit of fun we had today with our friends was extremely welcome. I have to say, with last Sunday I am loving how such good weekends are giving me so much energy during the week. Welcome Spring!! Sorry Jen...we are not making snow angels in the snow but rolling in wild flowers. I keep filling the house with all sorts of buds and flowers that I find in the wood across the house. Ba...

I think I just about drove her crazy most years but she knew how much I loved becoming someone completely different even for just a day. So "Bon Mardis Gras" to anybody celebrating! This past weekend I had the opportunity to play dress up. A different kind though. I played the adult, hardcore. Cold Strawberry Mint Soup and Apricot Tea Cakes
2009-02-18 06:11:00
Some things are meant to be paired. You know, that cute mug and that lovely tea, cookies and milk, cupcakes and frosting, apple pie and vanilla ice cream, etc.. They are tasty on their own, and we can survive without one or the other, but they make sense together so why pass on the opportunity to have them both, at the same time, together, dunked, dipped, smeared, spooned, and scooped?....This is what happened the other day with apricot teacakes and cold strawberry mint soup. I had a long night ahead of me and decided to make some tea cakes to help me through hours of file organizing instead of popping open a bag of chips and mindlessly muching my way through the entire bag. Withing 40 minutes or so I had about one dozen dried apricot tea cakes cooling down and we could not resist sampling one. Delicious and satisfying on its own. That same day I also had become the instant parent of a 6 pound box of strawberries (they are in season right now in the Southern US) and after making ice ...

Movie Review: Strawberry Shortcake ? Happily Ever After
2009-02-16 19:17:00
I think Valentine?s Day has got to be one of the dumbest holidays around.  It?s not religious, like Easter or Christmas, nor is it a nationally significant holiday, like 4th of July or Labor Day.  It?s something that retailers have cooked up because otherwise we wouldn?t spend money between Christmas and Easter.  So to celebrate ...
Strawberry & Vanilla Floating Islands
2009-02-02 07:05:00
It had been a while since I had the night off to bake something just for us. No book recipe to test, no challenge, no order or request. Just for us. In moments like this I tend to gravitate towards childhood memories and desserts I learned to make with my mother and grandmother. Simple desserts made so often that I bake them from memories with only the guidelines they used to whisper as I was standing on the little step stool next to the kitchen counter. It always amazes me how clearly I can still hear my grandmother's voice every time I make Floating Islands for example. Many years after her passing, Mamie Paulette is still here as I separate the eggs and mix them with sugar to make those lovely clouds of meringues. Everytime I cut through a vanilla bean I respectfully scrape every bean to the last one "pour ne pas gaspiller" (not to waste) and put the pods in small jars of sugar to flavor it. Whenever we would make creme brulees, we would have floating islands or "iles flottantes"...

Fresh Strawberry Ice Cream
2008-08-10 10:00:00
I have a Cuisinart ice cream maker which I like fine I guess, the only problem is that I have to freeze the drum for a couple days before it's ready for churning ice cream. If I don't get it cold enough (and our freezer isn't the most reliable but hey, it's Alaska right? A faulty freezer isn't that high on the priority list) then the ice cream won't freeze completely but will get 70% there then part way through the process the whole thing, drum, ice cream and will begin to melt. Drives me crazy! So if you're in the market for an ice cream maker, I don't know that I'd recommend this one, but regardless I'd definitely recommend this recipe. I've got strawberries coming out the ears here and I've been making strawberry jam, strawberry pie and now strawberry ice cream. It's just so good.3 cups pureed strawberries2 pasteurized eggs1 1/4 cup granulated sugar1 cup of heavy cream2 cups of half and half (that's half cream, half milk and I use the fat free kinds they now pro...

Cracked Pepper, Mint and Strawberry Macarons - And Tartelette Goes To Japan
2008-07-24 08:29:00
Update: I am not going to Japan...I just went there virtually through a magazine article. Sorry for the confusion.Long title I know....for the macaron story stay right here and scroll down to see how I got to Japan without leaving my couch! When Chris was preparing her weekend trip here she mentioned that she wanted me to teach her how to make macarons. You know me and the little sweet suckers, I already have the spatula in my hand before you can twist my arm. I also had about 2 cups worth of already separated egg whites (long story, does not involve the puppy), so I decided to get a head start and try to re-create one of my favorite restaurant desserts in a macaron form.I have always been surprised that the small town my parents live in is surrounded by a handful of amazing small restaurants. Great creativity, impeccable service, freshest of freshest ingredients. There was one in particular that was highly recommended for special occasions because of its amazing location and "nouvel...
Maple Cardamon Mousse And Strawberry Tartelettes
2008-07-16 07:51:00
I realised the other day that I have been turning the oven on late in the evening lately. The heat is not conducive to "wanting" to bake, nor is the rain that makes me crave soft and cold flavors. Airy mousses and creamy puddings, clouds of meringue and pools of creme anglaise...ice creams, let's not forget ice creams, one of my weaknesses. So when Old Chef asked me if I could come up with a couple of items for a private dinner for a client on Thursday, I cringed...Well, just a little, because I like him, I like the clients and let's face it, you don't need to twist my arm when it comes to baking! One of the requests they had was to have berries....lots of berries....beside a cold berry soup that I will tell you more about next week, I thought I would combine my ongoing love affair for mousses with fresh strawberries in individual tartlets.Back in May, I told you about our friend M. who had just been diagnosed with cancer. She underwent surgery a couple of weeks ago and is now ba...
Seven Seas Says Strawberry Survives
2008-07-09 15:00:00
Breaking news!Seven Seas was kind enough to let me know that their Strawberry line of Yuri manga is *not* on hold. In fact, Strawberry Panic Light Novel, Volume 2 is out *right now*. You should of course run right out and order it because it is utterly cracktastic. Actually, while I'm talking about this book, let me warn you in advance that the translation is EXCELLENT. It's just that the original text is really quite laughably bad. LOL (See my review of the Japanese volume here.)
